- In a greased 8-in. square baking dish, combine apples and cranberries; sprinkle with sugar. In another bowl, combine the oats, brown sugar, flour and butter; sprinkle over cranberry mixture. APPLE-CRANBERRY CRUMBLE
Original recipe is a twist on my Mom's version. Fast and easy dessert, great for fall season when apples are freshest and the cranberries come in. I have made it without the apples or using frozen cranberries. I enjoy it as a dessert and as a breakfast treat around the Thanks-Mas season. Loaded with antioxidants! I have also made a wheat-free version using nut flour. Serve plain or topped with ice cream, whipped cream, or a drizzle of heavy cream.

- Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x9-inch glass baking pan.
- Mix cranberries, apples, raisins, and walnuts gently in the baking pan. Sprinkle with 1/4 cup sugar and cinnamon.
- Combine remaining sugar with flour, baking powder, salt, egg, and butter in a medium bowl. Mix until crumbly. Spread topping over the apple mixture.
- Bake in the preheated oven until topping is golden and inside is bubbling, about 50 minutes. Remove from oven and let cool for 5 to 10 minutes.

- Preheat oven to 375 degrees F.
- In a small bowl, soak the apricots in brandy for 5 minutes.
- Blend flour, brown sugar, salt and butter until mixture resembles coarse meal.
- Add oats and almonds and toss.
- In a 9 inch glass pie dish, toss together apples, apricots and brandy.
- Sprinkle oat mixture evenly over top and bake for 30-35 minutes, or until apples are tender and topping is browned.
APPLE/PEAR/CRANBERRY KUGEL
Made this dessert kugel for the first time last Passover. Found the recipe on the net and it was very well received. I used cooking pears and even though they take longer time to cook I like that better since they do not mush up too much. You can easily make half the recipe, I did, and then used a round baking tin.

- Preheat oven to 350°F.
- Butter a 9x13 inch baking dish and set aside.
- Peel and core apples and pears, cut them in half.
- Put them in a pan with the cranberries and raisins.
- Add wine or water and cover.
- Cook on low heat for about 20 minutes, or until the apples fall apart and the pears (if using cooking pears) are half soft).
- Mash the fruit into large chunks with a fork and add both sugars.
- Cook over medium-low heat for another 5 minutes.
- Let the mixture cool slightly
- Beat the eggs in a separate bowl and add to the cooled fruitmixture.
- Stir well.
- Pour into the prepared baking dish
- Bake for about 40-50 minutes, or until the top browns.
- Serve hot or at room temperature.

Steps:
- Preheat oven to 350 degrees F, & butter a 11"x7" baking dish.
- In a saucepan, bring cider to boil, then remove from heat & stir in apricots & cranberries. Let stand 20 minutes, then drain, but reserve the cider.
- In a bowl, mix apricots, cranberries, cereal, 1/4 cup of the brown sugar, 1 tablespoon of the flour & 1/2 teaspoon of the cinnamon.
- In another (large) bowl, mix 1/4 cup of the brown sugar, remaining 4 tablespoons flour & 1/2 teaspoon cinnamon. To this this, add reserved cider, honey & vanilla, stirring to mix.
- To this large bowl, add apples & toss to coat.
- Pour the apple mixture into the prepared baking dish.
- Top evenly with apricot/cranberry/cereal mixture, then bake about 55 minutes.
- Remove from oven, cool slightly, & serve warm. Refrigerate leftovers.
