3 cups chopped peeled apples
2 cups fresh or frozen cranberries, thawed
3/4 cup sugar
1 cup old-fashioned or quick-cooking oats
3/4 cup packed brown sugar
1/3 cup all-purpose flour
1/2 cup butter, melted
1/2 cup chopped pecans, optional

Steps:

  • In a greased 8-in. square baking dish, combine apples and cranberries; sprinkle with sugar. In another bowl, combine the oats, brown sugar, flour and butter; sprinkle over cranberry mixture. Top with pecans if desired. , Bake, uncovered, at 350° for 55-60 minutes or until browned and bubbly. Serve warm.

Original recipe is a twist on my Mom's version. Fast and easy dessert, great for fall season when apples are freshest and the cranberries come in. I have made it without the apples or using frozen cranberries. I enjoy it as a dessert and as a breakfast treat around the Thanks-Mas season. Loaded with antioxidants! I have also made a wheat-free version using nut flour. Serve plain or topped with ice cream, whipped cream, or a drizzle of heavy cream.

1 (12 ounce) package fresh cranberries
2 apples, or more to taste, cut into 1-inch pieces
½ cup raisins
¼ cup walnuts
1 ¼ cups white sugar, divided
ground cinnamon
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 egg
¼ cup butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x9-inch glass baking pan.
  • Mix cranberries, apples, raisins, and walnuts gently in the baking pan. Sprinkle with 1/4 cup sugar and cinnamon.
  • Combine remaining sugar with flour, baking powder, salt, egg, and butter in a medium bowl. Mix until crumbly. Spread topping over the apple mixture.
  • Bake in the preheated oven until topping is golden and inside is bubbling, about 50 minutes. Remove from oven and let cool for 5 to 10 minutes.

3/4 cup finely chopped dried apricots
1/3 cup honey
1/4 cup maple syrup
2 tablespoons lemon juice
8 cups sliced peeled tart apples (about 8 large)
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
TOPPING:
3/4 cup all-purpose flour
1/2 cup quick-cooking oats
1/4 cup canola oil
1/4 cup maple syrup
1/2 cup chopped pecans, optional

  • In a large bowl, combine the first 5 ingredients; set aside. Arrange apples in an ungreased 13x9-in. baking dish. , Combine flour, cinnamon, ginger and cardamom; stir into the apricot mixture. This recipe is from Coles, it is so simple but so yummy! Serve it with some yoghurt for brekky or some cream or ice-cream for a dessert, you can also add raisins or your favourite dried fruit if you like.

100 g dried apricots, roughly chopped
1 cup boiling water
810 g canned pie apples
1 teaspoon cinnamon
2 tablespoons honey
125 g butter, softened
470 g butter recipe cake mix or 470 g vanilla cake mix
2/3 cup traditional oats
1/4 cup sliced almonds

Steps:

  • Preheat oven to 200.C & lightly grease a 20cm x 28cm baking dish.
  • Place apricots in a heat resistant bowl and pour over boiling water, allow to stand 5 mins or until soft, drain.
  • Combine apricots, apples & cinnamon together, spoon into prepared dish and drizzle with honey.
  • In a separate bowl, rub butter into dry cake mix and stir in oats & almonds.

2 tablespoons brandy
1/4 cup all-purpose flour
3 tablespoons firmly packed dark brown sugar
1/8 teaspoon salt
3 tablespoons cold butter, cut into bits
1/3 cup old fashioned oats
2 tablespoons sliced almonds
2 apples, peeled, quartered, and sliced thin crosswise

Steps:

  • Preheat oven to 375 degrees F.
  • In a small bowl, soak the apricots in brandy for 5 minutes.
  • Blend flour, brown sugar, salt and butter until mixture resembles coarse meal.
  • Add oats and almonds and toss.
  • In a 9 inch glass pie dish, toss together apples, apricots and brandy.
  • Sprinkle oat mixture evenly over top and bake for 30-35 minutes, or until apples are tender and topping is browned.

Made this dessert kugel for the first time last Passover. Found the recipe on the net and it was very well received. I used cooking pears and even though they take longer time to cook I like that better since they do not mush up too much. You can easily make half the recipe, I did, and then used a round baking tin.

2 lbs apples, tart (Granny Smith)
1/2 lb pear
6 ounces cranberries (half a bag of frozen cranberries)
3/4 cup raisins
1/2 cup white wine or 1/2 cup water
1/4 cup white sugar
1/4 cup brown sugar
6 eggs

Steps:

  • Preheat oven to 350°F.
  • Butter a 9x13 inch baking dish and set aside.
  • Peel and core apples and pears, cut them in half.
  • Put them in a pan with the cranberries and raisins.
  • Add wine or water and cover.
  • Cook on low heat for about 20 minutes, or until the apples fall apart and the pears (if using cooking pears) are half soft).
  • Mash the fruit into large chunks with a fork and add both sugars.
  • Cook over medium-low heat for another 5 minutes.
  • Let the mixture cool slightly
  • Beat the eggs in a separate bowl and add to the cooled fruitmixture.
  • Stir well.
  • Pour into the prepared baking dish
  • Bake for about 40-50 minutes, or until the top browns.
  • Serve hot or at room temperature.

1 3/4 cups apple cider
1/4 cup dried apricot, finely chopped
1/4 cup dried sweetened cranberries
1/2 cup Grape-nuts cereal (or something similar)
1/2 cup brown sugar, packed, divided
5 tablespoons all-purpose flour, divided
1 teaspoon ground cinnamon, divided
3 tablespoons honey
1 teaspoon vanilla extract
5 medium apples, peeled, cored & cut into 8 wedges each

Steps:

  • Preheat oven to 350 degrees F, & butter a 11"x7" baking dish.
  • In a saucepan, bring cider to boil, then remove from heat & stir in apricots & cranberries. Let stand 20 minutes, then drain, but reserve the cider.
  • In a bowl, mix apricots, cranberries, cereal, 1/4 cup of the brown sugar, 1 tablespoon of the flour & 1/2 teaspoon of the cinnamon.
  • In another (large) bowl, mix 1/4 cup of the brown sugar, remaining 4 tablespoons flour & 1/2 teaspoon cinnamon. To this this, add reserved cider, honey & vanilla, stirring to mix.
  • To this large bowl, add apples & toss to coat.
  • Pour the apple mixture into the prepared baking dish.
  • Top evenly with apricot/cranberry/cereal mixture, then bake about 55 minutes.
  • Remove from oven, cool slightly, & serve warm. Refrigerate leftovers.
