COMPANY CHICKEN CASSEROLE
I just love making and serving casseroles for dinner. When I find one I like, I have to make it. This is one of those casseroles. :) Enjoy!! Recipe: cleverhousewife.com Photos: my own

Steps:
- 1. Place chicken breasts, broth, garlic, and onion in a skillet and bring just to a boil over medium high heat. Turn heat down to medium, cover and simmer until chicken is no longer pink - about 15-20 minutes.
- 2. Remove chicken from skillet, and shred with a fork and set aside. Reserve the broth (this should equal 1 cup, but if it doesn't, add enough canned broth to equal a cup).
- 3. Melt butter and pour over stuffing mix in a bowl and whisk with a fork to blend. Spread 1/2 of the stuffing/butter mixture in the bottom of a 9x13 inch baking dish.
- 4. Meanwhile, blend the soup, sour cream and reserved broth together with a wire whisk. Place shredded chicken over the layer of stuffing in baking dish. If using broccoli, spread it over the chicken. Pour soup mixture over broccoli and chicken, then top with the remaining stuffing. Bake casserole in a 350 degree oven for 30 minutes, or until hot and bubbly. Serve and enjoy!!!!!

- Cook rice according to package directions. Meanwhile, preheat oven to 375°., In a large bowl, combine the crab, shrimp, celery, onion, green pepper, mushrooms and pimientos. In a small bowl, whisk mayonnaise, milk, pepper and Worcestershire sauce; stir into seafood mixture. Stir in rice., Transfer to a greased 13x9-in. baking dish. Sprinkle with the dry bread crumbs. Bake, uncovered, until bubbly, 40-50 minutes.

ANY KIND CASSEROLE
I found this recipe at Pinchin Your Pennies. I got it from a fellow couponer on . She got it from Tightwad Gazzette. The Goodie is optional as it is useually more expensive. I love this recipe as there are many different casseroles you can make. My family really enjoys this recipe. I find that it is best to preboil the potatoes till fork tender before using them. As for the binder I've used sour cream and creamed soups together before with great success as the casserole is creamy and not dry.

CHICKEN A LA KING CASSEROLE WITH NOODLES
Steps:
- Gather the ingredients.
- Heat the oven to 375 F. Lightly butter a 2-quart baking dish or spray it with nonstick cooking spray.
- Put about 2 to 2 1/2 quarts of water in a large saucepan with 2 teaspoons of salt. Place the saucepan over high heat and bring the water to a boil. Add the noodles and reduce the heat to medium. Boil the noodles following the package directions.
- Drain well and transfer them to a large bowl. Set aside.
- In the same saucepan, combine the celery with the condensed soup and evaporated milk or light cream; simmer over low heat for about 5 to 7 minutes.
- Add the pimientos, diced cooked chicken, and cheese. Continue cooking, stirring, until the cheese has melted.
- Pour the sauce over the noodles and stir until well combined.
- Spoon the chicken and noodle mixture into the prepared baking dish. Sprinkle with the toasted almonds, if using.
- Combine the fresh breadcrumbs with the melted butter. Stir with a fork until the crumbs are well coated with butter.
- Sprinkle the crumbs evenly over the casserole.
- Bake the casserole in the preheated oven for 25 to 35 minutes, or until the breadcrumb topping is browned.

- Preheat an oven to 400 degrees F (200 degrees C). Lightly grease a baking dish.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Cook and stir the chicken and mushrooms until the chicken breasts in the hot oil until the chicken is no longer pink in the center and the juices run clear, about 15 minutes. Season with salt, pepper, and garlic powder and remove from heat. Stir in the zucchini, sweet potatoes, red potatoes, bread crumbs, Parmesan cheese, and 1/4 cup of olive oil; transfer to the prepared baking dish.
