Such a satisfying combo! Italian sausages cooked with bell peppers, sweet onions, crushed tomatoes, and garlic. Served on a hoagie roll or over pasta or polenta.

Steps:
- Deglaze pan with wine (optional): Add the Marsala or red wine if you are using. Scrape the bottom of the pan with a metal spatula or wooden spoon to release all the browned and blackened bits. Let the wine cook down by half.

Steps:
- Heat the oil in a large skillet over medium high heat. Add the sausages and cook until well browned on all sides, about 10 minutes. Remove the sausages from the pan and set aside. Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes. Return the sausages to the pan, cover, and cook over medium heat, stirring frequently, until the sausages are cooked through, about 12 minutes more. Stir in the vinegar. Divide the sausage and peppers evenly amongst the crusty rolls and serve.
SAUSAGE AND PEPPERS
Steps:
- Saute onions, peppers and chile in olive oil until onions are brown. Add salt and pepper to taste. Stir in garlic and basil. Add oregano. Hold aside.
- Prick sausage all over with a fork. Saute in skillet over medium heat until brown. Add enough wine to cover about 2/3 of the sausage. Add Sauteed vegetables, tomatoes and any liquid. Simmer gently, partially covered, for 20 minutes. Remove sausage and slice into 1-inch pieces. Can be served on pasta or with bread.
SAUSAGES WITH PEPPERS AND ONIONS

- Heat a large braiser or high-sided skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat the skillet. Once the oil is shimmering, add the sausages and brown on all sides until browned but not cooked through, 5 to 7 minutes. Remove them to a plate and let cool until cool enough to handle, then slice them into 1 1/2-inch pieces. Set aside.
- Turn the heat down to medium-low and add the remaining 2 tablespoons olive oil to the skillet. Add the peppers and onions and season with 1 teaspoon salt and 1/4 teaspoon pepper. Cook the peppers and onions, stirring occasionally, until they begin to soften, about 5 minutes. Add the garlic and stir to incorporate. Continue cooking the vegetables over low heat until they're very soft, beginning to caramelize and have some spots of browning, about 40 minutes. If the vegetables start to look like they're getting too browned too quickly, add a splash of water to deglaze.
- Add the apple cider vinegar and the sausages to the skillet and stir to incorporate. Continue cooking until the sausages are cooked through, 10 to 15 minutes. Turn the heat off.
- Garnish with the basil and serve immediately.
ANOTHER SAUSAGE AND PEPPER RECIPE
Got this out of a magazine many years ago, but don't know which one. You can use homemade tomato sauce or one in a jar, but homemade is always better! I've listed sweet sausage but if you prefer a bit of a bite, then feel free to use hot sausage.

- Preheat oven to 350°F
- In large heavy skillet, saute peppers and garlic in hot oil until peppers are tender. Remove with slotted spoon to large bowl and set aside.
- Add sausage to pan and brown thoroughly. Remove with slotted spoon and add to bowl with peppers. Add tomato sauce and cooked pasta and combine. Tip mixture into 9 X 13 inch baking dish.
- Bake 45 minutes until heated through.
- Sprinkle with parmesan and mozzarella and bake an additional 5-10 minutes until cheese is melted and golden.
- Remove from oven and allow to sit 5 minutes before serving.
- Enjoy with crusty Italian bread and a salad.

HEALTHY SAUSAGE IN A PEPPER
Sausage and peppers are frequent partners, but they haven't quite met like this before. Cooked bell peppers are filled and folded like a taco, for a gluten-free, super-satisfying (and low-calorie!) meal. Be sure to wrap in wax paper to help catch all the juices.

- Halve the peppers lengthwise, remove the stem and discard the seeds. Put in a large microwave-safe bowl and toss with a splash of water and a large pinch of salt. Cover with plastic wrap and cut a slit in the center to allow steam to escape using a paring knife. Microwave at 100 percent power until the peppers are soft and pliable, 5 to 7 minutes. Allow to cool completely.
- Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat and add the sausages, cut-side down. Cook until browned on both sides, about 3 minutes per side. Transfer to a plate.
- Lower the heat to medium, add the onion and remaining tablespoon of oil to the skillet and cook, stirring frequently, until soft and just starting to brown, about 5 minutes. Add the sausages back to the skillet and pour in the marinara and 1/4 cup water. Bring to a low simmer and cook until the sausages and sauce are warmed through and the sauce is slightly thickened, about 3 minutes. Remove from heat, stir in the parsley and set aside.
- Arrange the pepper halves on a work surface cut-side up. Put a chicken sausage half in a pepper half with some of the sauce and onions and fold up like a taco. Wrap halfway in wax paper. Repeat with the remaining ingredients to make 3 more tacos and serve immediately.
