EASY ANISE COOKIES

Easy and delicious cookies. They have a nice crunchy outside and are chewy on the inside.

3 eggs, beaten well
3 cups brown sugar
2 tablespoons anise seed
½ teaspoon salt
1 teaspoon baking soda
2 tablespoons hot water
4 ½ cups all-purpose flour
½ cup white sugar, or as needed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease 2 baking sheets.
  • Beat eggs and brown sugar together in a large bowl until smooth. Stir anise seed and salt into the egg mixture.
  • Dissolve baking soda in hot water; stir into the egg mixture. Add flour and mix into a dough. Form into 36 small balls.
  • Spread white sugar into a wide, shallow dish. Roll the cookie dough balls in the sugar to coat. Arrange onto prepared baking sheets about 1 inch apart.
  • Bake in preheated oven until edges are crispy, about 10 minutes.

Here in New Mexico, these cookies are known as "bizcochitos," which means "small biscuit." There are many variations of the recipe, which has been passed down through the generations. The cookies are enjoyed during the Christmas holidays and at wedding receptions and other special celebrations. 2 cups butter, softened
1-3/4 cups sugar, divided
2 large eggs, room temperature
1/4 cup thawed orange juice concentrate
4 teaspoons aniseed, crushed
6 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and 1-1/2 cups sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in orange juice concentrate and aniseed. Combine flour, baking powder and salt; gradually add to creamed mixture and mix well. , On a lightly floured surface, roll out dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. , Combine cinnamon and remaining sugar; sprinkle over cookies. Bake 12-15 minutes or until golden brown. Remove to wire racks.

1/3 cup anise hyssop, florets removed from stem
3 eggs
1 cup sugar
1/2 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat oven to 325°F.
  • Line 2 to 3 cookie sheets with aluminum foil (lightly greased).
  • Chop florets fine.
  • With electric mixer, beat eggs till thick and lemon-colored.
  • Add sugar and flower petals and beat for 5 minutes, then add vanilla.
  • Sift together flour, baking powder and salt and add to egg mixture.
  • Continue beating for 5 minutes longer.
  • Drop batter by teaspoonfuls onto lined cookie sheets, spacing well apart.
  • Bake till they begin to color (about 12 to 15 minutes).

1/2 cup chopped almonds
1/4 teaspoon salt
1 cup butter
1 cup sugar
1 egg
1 1/2 teaspoons anise extract

Steps:

  • Heat oven to 350 degrees.
  • Mix flour, almonds and salt, set aside.
  • Beat butter and sugar until creamy.
  • Blend in egg and extract.
  • Gradually mix in flour mixture.
  • Drop by rounded tablespoon onto ungreased cookie sheet.
  • Bake 10 - 12 minutes until golden brown.

3/4 cup all-purpose flour
1/4 cup coarse semolina flour
3 tablespoons almond flour (or finely ground almonds with skin)
2 teaspoons anise seeds
1/4 teaspoon salt
1/4 cup plus 2 tablespoons sugar
1/2 teaspoon finely grated orange zest, plus 2 tablespoons orange juice
1/2 cup (1 stick) unsalted butter, softened
1 large egg

Steps:

  • Preheat oven to 350 degrees. Whisk together flours, anise, and salt in a medium bowl.
  • Put sugar and zest into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed for 30 seconds. Add butter; mix until pale and fluffy, about 1 minute. Reduce speed to medium. Mix in juice and egg. Add flour mixture; mix until just combined.
  • Working in batches, spoon batter into a pastry bag fitted with a 1/2-inch plain round tip (such as Wilton No. 1A). Pipe 3 1/2-inch-long lines onto parchment-lined baking sheets, making the ends slightly thicker than centers. Bake cookies until edges and bottoms are golden brown, 12 to 14 minutes. Let cool on sheets on wire racks 5 minutes. Using a spatula, transfer cookies to rack; let cool completely.

4 cups all-purpose flour
1 cup white sugar
½ cup milk
2 eggs
1 tablespoon baking powder
¾ cup vegetable oil
1 tablespoon anise extract
1 teaspoon anise extract
1 cup confectioners' sugar
2 tablespoons hot water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In large bowl, mix flour, baking powder and white sugar. Make a well in the center and add oil, milk, 1 tablespoon anise extract, and eggs. Mix together until dough is sticky.
  • Oil fingers and pinch off dough in 1 inch pieces. Roll into a ball and place on a lightly greased cookie sheet, 1 inch apart, flatten top slightly. Bake for 8 minutes. Dip cookies in Icing while warm.
  • To Make Icing: Blend in 1 teaspoon anise extract and enough hot water to 1 cup confectioner's sugar to form a smooth icing.

  • Cream butter and sugar in a large bowl until light and fluffy. Beat in egg and extract. 1 cup light corn syrup
1 cup water
2 teaspoons anise extract or 1 teaspoon anise oil
6 to 9 drops red food coloring

Steps:

  • In a large heavy saucepan, combine sugar, corn syrup and water. Bring to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes or until sugar is dissolved. Uncover; cook on medium-high heat, without stirring, until a candy thermometer reads 300° (hard-crack stage)., Remove from the heat; stir in extract and food coloring (if using anise oil, keep face away from mixture as the aroma will be very strong). Pour into a buttered 13-in. x 9-in. pan. When cooled slightly but not hardened, cut into 1-in. squares. Cool completely. Store in an airtight container.

1/4 cup hyssop, anise hyssop florets removed from stem
1 extra large egg
12 tablespoons unsalted butter, in 12 pieces
1/2 teaspoon vanilla extract
2 cups flour
1/2 teaspoon salt
3 ounces almonds, lightly toasted and coarsely chopped

Steps:

  • Combine sugar and florets in a food processor and pulse till blended.
  • Add egg and process about 1 minute.
  • Add butter and vanilla and process about 1 minute.
  • Mix flour and salt and add to processor; process about 20 seconds or till most of flour is incorporated.
  • Add almonds and just mix - do not over process.
  • Turn dough onto a lightly floured surface and gather into a ball.
  • Divide into 3 parts and roll each into plastic wrap in a cylinder shape about 1½ to 2-inches in diameter.
  • Chill for 1 hour or till firm.
  • Preheat oven to 350°F.
  • Slice dough less than ¼-inch thick.
  • Place at least ½-inch apart on ungreased baking sheet.
