ANGELS ON HORSEBACK
I first encountered Angels on horseback at the Santa Fe restaraunt in McAllen, Texas. I can't quite place what was in the cocktail sauce served with these but I came up with something that goes equally well with them. The sauce was something like a spicy Chinese Hot & Sour sauce. In the sauce I quote below, I always add an extra kick with Louisiana Hot Sauce! The water chestnuts give a little extra crunch to the bite.

Steps:
- Drain oysters. Place an oyster and a slice of water chestnut on each piece of bacon. Sprinkle with parsley and garlic salt. Wrap bacon around oyster and secure with wooden pick.
- Place angels on a broiler rack, approximately 4 inches from heat source, and broil 3 to 4 minutes. Turn carefully and broil on other side if desired. Cook only until bacon is done, being careful not to overcook oysters.
- Serve with a mixture of mayonnaise, mustard and horseradish.

- Preheat an oven to 450 degrees F (230 degrees C). Set a wire rack into a small baking dish.
- Wrap each oyster with a slice of bacon, and secure with a toothpick. Sprinkle with salt, pepper, paprika, and parsley; set onto wire rack.
- Bake in the preheated oven until the bacon is crispy, 10 to 12 minutes. Serve immediately. They aren't as good once they get cold.

Party pleasing angels on horseback-oysters wrapped in partially cooked bacon then grilled or broiled and spritzed with lime or lemon-date back to Victorian England. A perfect appetizer for any holiday get together!

- Pre-cook the bacon slices: Working in batches if necessary, cook the bacon slices on medium low heat in a large frying pan, until only about halfway cooked, but not crispy. You need to pre-cook the bacon a bit or else when you cook them with the oysters the oysters will be overcooked by the time the bacon is crispy. Set the bacon aside to cool.
- Heat the grill: Get a grill or broiler good and hot while you wrap the oysters.
- Wrap bacon around oysters: To make an angel on horseback, you wrap 1/2 a piece of bacon around the small oyster and secure it with the toothpick. Overlap the edges of the bacon by about an inch if you can.
- Grill or broil: Grill or broil over high heat to cook the oyster and crisp the bacon, about 5 to 6 minutes on the first side Turn them over and grill another 2 to 4 minutes. You will need to turn them once or twice to get a good crispiness on all sides.
- Sprinkle with lemon or lime juice: As soon as they come off the heat, squirt with the lemon or lime juice and serve hot.

- Soak the prunes and apricots in the wine or juice, preferably for 3 hrs or more. Smear a piece of bacon with a little mustard, then use it to wrap round a prune or apricot and a sausage. Repeat with the remaining ingredients to make 24 and arrange on a baking tray.
- Heat oven to 220C/200C fan/gas 7, brush with a little oil and bake for 18-20 mins until cooked and golden.

- Preheat oven to 400 degrees. Place 24 toothpicks in a small bowl filled with water; let soak 15 minutes. Line a baking sheet with parchment paper and fit with a wire rack; set aside.
- Halve dates lengthwise being careful not to cut all the way through. Place a small amount of cheese in the center of each date. Wrap a piece of bacon around each date. Secure bacon with a toothpick.
- Place dates on prepared baking sheet. Bake until bacon is cooked through, 20 to 25 minutes.

- Pat the oysters dry. Cut each slice of bacon crosswise in half. Wrap each oyster in half a slice of bacon and secure the bacon with toothpicks. A family favorite my uncle makes. They are a wonderful balance between salty and sweet, with a combination of crispy, chewy, and crunchy textures. My family destroys a tray of these in fifteen minutes.

- Preheat oven to 400 degrees F (200 degrees C). Soak the toothpicks in a bowl of water. Grease a 9x13-inch baking dish.
- In a bowl, mix together the soy sauce and ground ginger. Place the brown sugar into a shallow bowl. Spread open a pitted date, then stuff it with a smoked almond. Wrap the date with half a bacon slice, secure it with a toothpick, dip the bundle in soy sauce mixture, and then dip it into brown sugar. Place the wrapped dates into the prepared baking dish. If desired, sprinkle a little more brown sugar over the bundles.
- Bake in the preheated oven until the bacon is brown and crisp, 15 to 25 minutes. Allow to cool for about 15 minutes before serving; serve warm or at room temperature.
