- Cook pasta according to package directions. Meanwhile, in a large skillet, saute chicken in 1 tablespoon oil for 4-5 minutes or until no longer pink; drain. Remove and keep warm., In the same skillet over medium heat, cook carrots in remaining oil for 3 minutes, stirring occasionally. Add broccoli and garlic; cook 2 minutes longer. Stir in the chicken, broth, cheese, basil and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until vegetables are tender., Drain pasta; serve with chicken mixture. Sprinkle with additional cheese.

- Preheat oven to 325 degrees F (165 degrees C).
- In a large saucepan, melt butter over low heat. Stir in the package of dressing mix. Blend in wine and golden mushroom soup. Mix in cream cheese, and stir until smooth. Heat through, but do not boil. Arrange chicken breasts in a single layer in a 9x13 inch baking dish. Pour sauce over.
- Bake for 60 minutes in the preheated oven. Twenty minutes before the chicken is done, bring a large pot of lightly salted water to a rolling boil. Cook pasta until al dente, about 5 minutes. Drain. Serve chicken and sauce over pasta.

- Bring a large pot of salted water to a boil. Add the angel hair pasta and cook until tender but still firm to the bite, stirring occasionally, about 6 to 8 minutes. Drain, reserving 1 cup of the pasta water.
- Stir the oil, parsley, lemon juice and lemon peel in a large serving bowl. Add the cooked pasta and toss with enough reserved pasta water, 1/4 cup at a time, to moisten. Season the pasta with salt and red pepper flakes, to taste. Sprinkle grated lemon peel over pasta for extra flavor and texture. Sprinkle with the Parmesan and serve.
- Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
- Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.
- Yield: 2 cups

- Heat 1 Tbsp.
- oil in medium skillet over medium heat; add chicken.
- Cook, stirring, until chicken is cooked through, about 5-7 minutes.
- Remove from skillet and drain on paper towel.
- Begin heating water for pasta.
- Heat remaining oil in same skillet and add onion and green pepper.
- Cook for about 3 minutes.
- Add frozen vegetables and garlic.

CHICKEN PARMESAN ON ANGEL HAIR PASTA
This is simple to make given that you have a good tomato based spaghetti sauce to go with it. Recipe #18922 was designed with this in mind. Preparation of the sauce from scratch can add a lot of time to total but it is well worth it. Using fresh grated parmesan cheese will make a big difference in the success of this dish also.

- Wash and thoroughly dry the chicken breasts. Sprinkle some of the rub over each and work it into the skin well. Melt the butter in a plastic contaner and carry outside to the grill with your favorite wish. Cook the breasts on the grill for 5 minutes or until the chicken starts to firm up. Each time you turn the breasts, baste them with some of the melted butter. Do not overcook as we will be cooking them a little more in the kitchen. When done, set the breasts aside for later.
- Put the spaghetti sauce in a pan, cover it, and heat it on a medium setting.
- Cook the angel hair pasta as usual, add the olive oil to the pot to keep the noodles from sticking together. About 2 minutes before the noodles are done, cover the chicken breasts with grated parmesan cheese and heat them on a plate in the microwave for about 45 seconds or until the parmesan is about halfway melted. Strain the noodles and scoop onto the serving plates. Put a chicken breast on top of the noodles and cover with the spaghetti sauce. Serve immediately.
GREEK LEMON CHICKEN WITH ANGEL HAIR PASTA
A delicious one dish casserole. It's special enough for special events like bridal showers or graduation. It's an amazing dish! A local caterer uses this recipe and I found out it was in Creme de Colorado Cookbook. but I have never found it online. I've adjusted it slightly from their version to make it even better. After being asked for this recipe many time, I decided to post it.

- In a bowl, combine all marinade ingredients. Pound chicken breasts slightly and place in shallow casserole or in plastic zip-lock bag, and cover with marinade. Refrigerate for up to 12 hours.
- Discard marinade. Heat oil in skillet and saute chicken until tender. Slice and set aside.
- In a saucepan, melt 2 T butter; blend in flour and salt to create a roux. Add mustard and slowly add milk, stirring constantly until thick and smooth. In small bowl, mix egg yolk, lemon peel and lemon juice together. Whisk a small amount of roux into egg mixture. Then whisk egg mixture into roux and bring to a gentle boil. Remove from heat and add dill and parsley. When parsley wilts, stir in sour cream.
- Add 1/2 cup butter, 3/4 cup of the egg sauce and feta cheese to cooked pasta; stir well. Place in greased 9X13 casserole, and top with sliced chicken breasts, remaining sauce and Muenster cheese. Broil until cheese is golden.
ANGEL HAIR PASTA WITH STEAMED CHICKEN

- Place a heavy-bottomed pot over high heat. Add the oil. Season the chicken with salt and pepper to taste. When the oil just begins to smoke, add the chicken, skin side down, and cook until the skin turns golden brown, 3 to 4 minutes. Drain the oil, leaving the chicken in the pot, and return it to high heat. Turn the chicken thighs over and add the sake. Decrease the heat to low and cover the pot to steam. Cook for 4 minutes, or until the chicken is cooked through. Remove the chicken from the pot and refrigerate until cool, about 20 minutes. Once the chicken has cooled, slice very thin. Set aside.
- Place a large pot of salted water over high heat and bring to a boil. Add the angel hair pasta and cook, following package instructions. Once cooked through, rinse the pasta well under cold running water until the noodles are cold. Drain and divide among 4 shallow bowls.
- Top each bowl of pasta with one-fourth of the cucumbers, then the chicken, cherry tomatoes, umeboshi, obha leaves, mustard, and cold soba broth. Enjoy cold.

Elegant and delicious. 2/22/09 After reading some reviews and problem of too much liquid I would suggest decreasing to perhaps 1 1/2 cups or use the pasta water which has the starch from the pasta that would provide a thickener.
