AMY'S HASH BROWNS CASSEROLE
My co-worker, Amy, gave me this recipe today. She swears it is the "best hashbrown casserole in the world".

Steps:
- Saute onion in 1/2 cup butter.
- Combine onion/butter mixture in a bowl with salt, pepper, cream of mushroom soup, sour cream, Velveeta cheese, and hash browns; mix until combined.
- Pour mixture into a greased 9x13 pan.
- Cover with foil and bake at 350 degrees Fahrenheit for 45 minutes to1 hour.
- Remove foil and stir well.
- Melt the 1/4 cup butter and combine with the cornflakes.
- Toss well, until coated.
- Spread on top of potato mixture.
- Bake, uncovered, for 15 more minutes, or until corn flake mixture is toasty.

- Preheat the oven to 350 degrees F. Add the butter to a large heavy skillet. Once foaming and melted, add the garlic, ham, onions and some salt and pepper. Saute until the onions are tender and the ham is browned, about 4 minutes. Stir in the flour and cook until pasty, about 2 minutes. Add the milk and stock and stir until smooth. The mixture will begin to thicken as it comes to a simmer. Once thick, turn off the heat and add 1 cup of the shredded cheese. Stir until melted. Add the hash browns and green onions and stir until well mixed. Add to a 13-by-9-inch casserole dish and sprinkle with the remaining 1/2 cup cheese. Bake until the top is golden and the potatoes are tender, 45 minutes.

- In large bowl, separate frozen hash browns.
- Melt butter and pour over potatoes.
- In another bowl, mix together sour cream, onion, cheese, soup, salt and pepper.
- Pour mixture over potatoes and mix well.

- Mix together crushed cornflakes and melted butter and spread over hash brown mixture.
- Bake at 350 degree Fahrenheit for 1 hour.

- Cook sausage as directed on package; drain. Cut into 1/4-inch-thick slices.
- Whisk eggs, milk, mustard and black pepper in large bowl until blended. Add potatoes, cheese, red peppers, onions and sausage; mix well.
- Pour into 13x9-inch baking dish sprayed with cooking spray. Refrigerate overnight.
- Remove casserole from refrigerator 30 min. before baking. Heat oven to 350ºF. Bake casserole 1 hour 5 min. to 1 hour 10 min. or until center is set and top is golden brown. Remove from oven. Let stand 10 min. before serving.
