SCHNITZEL
This is a family favorite of ours, my mom got the recipe from a German lady when we lived in Germany. You may use tenderized veal in place of the cube steaks in this recipe.

Steps:
- In a shallow bowl, stir together the flour, cornmeal, salt and pepper. In a separate shallow bowl, whisk together the milk and eggs using a fork.
- Heat oil in a large skillet over medium-high heat. The oil should completely cover the bottom of the skillet. While the oil heats, dip cube steaks into the egg and milk, then dip into the flour mixture, and shake off the excess. Place in the hot skillet.
- Fry steaks on each side until golden brown, then reduce the heat to medium and cook until well done. Do not cover. Drizzle with lemon juice before serving.

- Add sliced onions and fry until a light brown.
- Add green beans and brown slightly.
- Add tomatoes, salt, pepper and water.

- Place dried beans into a shallow pan and sort through them, picking out any broken beans, stones, or other debris. Pour sorted beans into a colander and rinse under cold running water.
- Place rinsed beans into a large bowl and cover with 2-3 inches of cold water. Cover bowl and allow beans to soak overnight.
- After an overnight soak, drain beans and add them along with 6 cups of water to a Dutch oven or other large, oven-safe pot. Bring to a boil. Reduce to a simmer and simmer beans for 30 minutes, or until beans are just barely tender. Drain beans through a colander set over a large bowl to reserve cooking liquid. Set drained beans and cooking liquid aside.
- To the same pot, add onions and bacon. Cook over medium heat until onions are soft and bacon is lightly crisp. Return the beans to the pot with the onions and bacon along with the remaining ingredients. Stir in 3 cups of reserved cooking liquid (if you don’t have 3 cups of cooking liquid, add enough water to make up the difference.).

- Put the chicken (one piece at a time) in a large ziptop bag and seal. Using a mullet or the back of a heavy cast iron skillet, pound the chicken. The chicken pieces should be large and quite thin (about 1/8-inch in thickness or so) by the time you’re done pounding.
- Season the chicken with kosher salt and black pepper on both sides. In a small bowl, combine the garlic powder, paprika and oregano then sprinkle the mixture on both sides of the chicken.
- Preparing a dredging station. Put the flour in one bowl. Beat the eggs in another bowl and place it next to the flour. And put the panko in a third bowl next to the eggs.
- Take one piece of chicken, and place it in the flour bowl. Coat the chicken on both sides with the flour and shake off excess. Then dip the chicken in the egg bowl. Finally coat the chicken with the panko bread crumbs on both sides. Repeat with the remaining chicken.
