Amish Bread image

My husband's ancestors were Amish and Mennonite. This delicious recipe is adapted from an old Amish recipe, but made in the bread machine.

2 ¾ cups bread flour
¼ cup canola oil
1 teaspoon active dry yeast
¼ cup white sugar
½ teaspoon salt
18 tablespoons warm water

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select White Bread cycle; press Start.
  • When the dough has raised once and second cycle of kneading begins, turn machine off. Reset by pressing Start once again. This gives the dough two full raising cycles before the final raising cycle prior to baking.

18 tablespoons water (1 1/8 cup)
1/2 teaspoon salt
1/4 cup oil
1/4 cup sugar
2 3/4 cups bread flour
1 teaspoon yeast

Steps:

  • Add ingredients in order given.
  • Select basic bread cycle. Let it go until the bread completes the 2nd rising. Then turn off the machine and restart it on basic cycle again.
  • Let cook as normal.

I got this recipe from a friend. It is very easy, and doesn't take long to make.

2 cups warm water (110 degrees F/45 degrees C)
⅔ cup white sugar
1 ½ tablespoons active dry yeast
1 ½ teaspoons salt
¼ cup vegetable oil
6 cups bread flour

Steps:

  • In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
  • Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
  • Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes.

2/3 cup sugar
1 1/2 tablespoons yeast
1 1/2 teaspoons salt
1/4 cup vegetable oil
6 cups flour

Steps:

  • Dissolve sugar in warm water in a bowl.
  • Add yeast and allow to sit 10 minutes.
  • Add oil, salt and flour.
  • Mix well.
  • Knead well.
  • Place in a well oiled bowl, and cover for one hour to one and one half hours.
  • Knead down.
  • Let rest 10 minutes.
  • Form into 2 loaves
  • Place in greased loaf pans.
  • Allow to rise, covered, for one hour.
  • Bake 350F 30 minutes til golden.

1 cup Amish Friendship Bread Starter
3 eggs
1 cup oil
½ cup milk
1 cup sugar
½ teaspoon vanilla
2 teaspoons cinnamon
1½ teaspoon baking powder
½ teaspoon salt
½ teaspoon baking soda
2 cups flour
1 small box vanilla instant pudding
1 cup nuts (chopped (optional))
1 cup raisins ((optional))

Steps:

  • Preheat oven to 325° F (165° C).
  • In a large mixing bowl, add ingredients as listed.
  • Grease two large loaf pans.
  • Dust the greased pans with a mixture of ½ cup sugar and 1½ teaspoons cinnamon.
  • Pour the batter evenly into loaf or cake pans and sprinkle the remaining cinnamon-sugar mixture on the top.
  • Bake for one hour or until the bread loosens evenly from the sides and a toothpick inserted in the center of the bread comes out clean.

1 cup unsalted butter
½ cup tablespoons granulated sugar
½ cups brown sugar
2 eggs
1 teaspoons vanilla
½ cup yogurt
½ cup whole milk
1 ½ cups all-purpose flour
½ cup whole wheat flour
1 ½ teaspoons cinnamon
1 teaspoons baking soda

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and heat to 350 F. Spray an 8 1/2 x 4 1/2-inch loaf pan with cooking spray.
  • In a large bowl, cream the butter, 1/2 cup granulated sugar, and brown sugar until light and fluffy, about 3 minutes if using a handheld mixer, 8 to 10 minutes if mixing by hand.
  • Add the egg and vanilla and mix until fully incorporated, about 30 seconds.
  • Add the yogurt and milk. Mix until fully incorporated.
  • Sift in the flours , 3/4 teaspoon cinnamon, and baking soda, and mix until just incorporated.
  • Spread half the batter into the prepared pan.
  • Mix 2 tablespoons sugar and 3/4 teaspoon cinnamon in a small bowl. Sprinkle on top of the batter in the loaf pan.
  • Top with remaining batter and sprinkle with sugar, if desired.
  • Bake until a toothpick inserted in the middle comes out clean, about 45 to 55 minutes.
  • Allow the bread to cool for a few minutes, then remove from the pan and place on a wire rack to cool completely.
  • Slice and serve with butter.
