APPLE PUDDING CAKE
Serves 14 to 16
This cake can be served immediately or after cooling, and it's good plain or with vanilla ice cream.
2 large eggs, beaten
1½ cups vegetable oil
3 cups flour
2 cups sugar
½ teaspoon salt
1 teaspoon baking soda
1½ teaspoon ground cinnamon
3 cups diced apples (see Note below)
½ cup raisins (optional)

Steps:

  • Preheat the oven to 350°F. Grease and flour a 9 by 13-inch pan and set aside.
  • Mix together the eggs, oil, flour, sugar, salt, baking soda, and cinnamon in a large bowl until well blended. Add the apples and the raisins. The batter will be dough-like, and it may be necessary to knead in the apples and raisins to fully incorporate them. Spread the batter evenly into the prepared pan. Bake for 1 hour, or until the top is golden brown and the edges are firm.
  • Note: Any variety of apple will work fine, but slightly tart apples will lend more flavor to the cake.

2 cups quick oats
3/4 cup granulated sugar
3/4 cup whole milk
1 vanilla bean, scraped (see Cook's Note)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon baking powder
1 egg
Heavy cream
Brown sugar
Berries

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan with butter.
  • Combine the oats and sugar in a medium bowl, then pour in the milk.
  • Add the vanilla seeds, cinnamon, nutmeg, salt and baking powder.
  • Next comes the melted butter and the egg.
  • Then just stir it all together into a big delicious oaty mess of wonder.
  • Plop the mixture into the prepared pan and spread it out.
  • Bake for 30 minutes, until set.
  • Cut into squares while still warm. Serve with cream, brown sugar and berries.

cooking spray
6 medium baking apples, peeled and cored
2 cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon salt
⅔ cup shortening
½ cup milk
3 cups brown sugar, divided
1 teaspoon ground cinnamon
2 cups water
¼ cup butter
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Set apples aside in a cold water bath while you prepare the dough.
  • Combine flour, baking powder, and salt in a medium mixing bowl. Add shortening and cut together with a pastry blender or a fork until crumbly. Add milk and stir until dough comes together.
  • Combine 1 cup brown sugar and cinnamon in another bowl. Separate dough into six equal portions and roll out to about 1/4-inch thickness. Place an apple in the center of each dough portion and fill the core with the cinnamon-sugar mixture. Wrap each apple in dough and place into the prepared pan.
  • Combine remaining brown sugar, water, butter, and nutmeg in a medium saucepan over medium-high heat. Cook until sugar is dissolved and butter is melted, about 5 minutes. Pour syrup over dumplings.
