Simple ingredients in perfect proportion make a this dip a crowd-pleasing favorite for any event. We decided not to use tomato in ours -- it makes the guac watery -- and included both onion and garlic for extra zip. A healthy dose of fresh lime juice balances and brightens the flavors.

1/2 small red onion, diced small
1 tablespoon distilled white vinegar
4 ripe Hass avocados
1/4 cup lime juice (about 2 limes)
1 jalapeno, minced (seeds and membranes included if you prefer heat or removed for a milder version)
1 clove garlic, grated
1 teaspoon kosher salt
1/2 cup lightly packed cilantro leaves, finely chopped (about 1/4 cup finely chopped)
Tortilla chips, for serving

Steps:

  • Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
  • Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
  • Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.

3 Haas avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
1/2 jalapeno pepper, seeded and minced
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced

Steps:

  • In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

3 limes, juiced
1/2 red onion, chopped
1 garlic clove, minced
2 serrano chiles, sliced thinly
1 big handful fresh cilantro, finely chopped
Extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Halve and pit the avocados. Scoop out the flesh with a tablespoon into a mixing bowl. Mash the avocados with a fork, leaving them somewhat chunky. Add the remaining ingredients, and fold everything together to gently mix. Lay a piece of plastic wrap right on the surface of the guacamole so it doesn't brown and refrigerate 1 hour before serving.

3 large ripe avocados
Juice of 1 lemon
1/4 cup finely diced red onion
1/4 cup jarred sliced roasted peppers, drained and chopped
1/4 cup pitted kalamata olives, drained and chopped
2 Roma tomatoes, diced
1 clove garlic, grated
3/4 cup crumbled feta
1/4 cup chopped fresh parsley leaves
3 tablespoons chopped fresh dill
1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
1 cucumber, sliced into thin rounds, for serving
Blue tortilla chips, for serving

Steps:

  • Halve the avocados and remove the pits. Dice the avocado inside the skin and scoop into a medium bowl. Add the lemon juice and mash with a fork until you get the desired consistency.
  • Add the red onion, roasted peppers, olives, tomatoes, garlic and most of the feta, parsley and dill, reserving some for garnish. Add the salt and cumin and mix together until well combined. Taste and adjust the seasoning if needed.
  • Transfer to a serving a bowl and sprinkle over the remaining feta, parsley and dill. Serve with the sliced cucumbers and tortilla chips.

Kosher salt
3 ripe avocados, peeled, pitted and diced
1 medium tomato, diced, plus more diced for garnish

Steps:

  • Pile the onion, serranos, cilantro and a big pinch of kosher salt on a cutting board. Chop, then mash into a paste with the flat side of a large knife. Transfer to a medium bowl, add the avocados and mash with a wooden spoon until combined but still chunky. Stir in the tomato and season with salt. Garnish with more tomato, cilantro and onion.

Who knew jalapeno's were the secret ingredient in terrific guacamole. I'll never leave them out now that I know. You can make this ahead and wrap it in plastic for up to 24 hours (good luck with that, I can't keep my hands off it once it's made). Just make sure the plastic wrap is touching the surface of the guacamole and bring to room temperature and season with additional fresh lime juice and salt before serving. 1/2 ripe tomatoes
1 jalapeno
1 bunch fresh cilantro
3 avocados
1 lime, juice of

Steps:

  • Dice onion, tomato, cilantro, and jalapeno. If you don't like spice, then remove seeds. Place in medium bowl.
  • Remove pits from avacados. Spoon the meat of the avacados from the skin. Smash with fork; I use a large meat fork. Add to bowl of vegetables.
  • Add juice and salt. Stir well.
  • Cover with saran wrap (it should be touching the guacamole to prevent air). Let set for one hour.
  • Serve with chips or on tacos, etc.

4 avocados
1 tablespoon medium salsa
1 tablespoon sour cream
1 tablespoon mayonnaise
1 teaspoon onion powder
1 teaspoon pepper
1 teaspoon salt
1 teaspoon minced garlic
1 -2 teaspoon lemon juice
fresh chives or green onion, chopped

Steps:

  • Cut avocados in half and take out the seed,scoop out meat with a spoon and place in bowl.
  • Mash the avocado with a fork (make it lumpy or smooth, whichever you like).
  • Add the salsa, mayonnaise, sour cream, salt, pepper, garlic and onion powder. Mix together well.
  • Add lemon juice (not too much), Mix and serve.
  • Garnish with fresh chives.

CARIBBEAN STYLE GUACAMOLE

4 avocados, ripe
3/4 cup red onion, diced
1/4 scotch bonnet pepper (any hot pepper will work)
2 limes, juice of
3/4 cup mango, diced (ripe but firm)
1/2 cup cilantro, chopped (shado beni )
1 garlic clove
1/4 teaspoon salt
1 tablespoon olive oil

Steps:

  • Using a mortar and pestle, crush the scotch bonnet pepper, garlic and salt into a somewhat smooth paste. Then place this wicked spicy paste into a deep bowl and add the peeled and diced avocado to it. Using the back of a fork, crush the avocado until you have a chunky texture (you can make it as smooth as you like). To prevent the avocado from going discolored, squeeze in the lime juice at this point and give it a good stir.
  • It's now time to peel and cube the mango. Be sure to get a mango that's not fully ripe, so it's firm enough to dice and will not fall apart. You'll need about 1/2 of a large mango. Add the cubed mango to the bowl.
  • Add the chopped shado beni (or cilantro) and top with finely diced onion. Don't stir yet.
  • Heat the oil on a medium flame and just before you start seeing smoke... pour it directly on the diced onions. This will help take some of the rawness out, so you won't have karate breath after. Give it a good stir and serve or chill in the fridge. Get some corn chips or toast some flat bread and your guests will be praising you for sure!
  • There's enough dip with this recipe for a small group of people (8-10) and it can last up to a day or so in the refrigerator. Remember to use the lime juice to prevent it going nasty looking (lemon works just as well). If you love heat, do add a bit more of the scotch bonnet pepper.
