PINEAPPLE BREAD
Steps:
- Gather the ingredients.
- Preheat the oven to 350 F. Grease and flour a loaf pan .
- Cream the butter and sugar in a large mixing bowl until light and fluffy.
- Beat in the eggs, one at a time, and blend well after each addition.
- Stir in the pineapple.
- Sift the flour, baking powder, and salt together in a medium bowl.
- Stir in the nuts.
- Add the dry ingredients to the wet ingredients and mix just until moistened. Do not over mix.
- Pour the batter into the prepared pan.
- Bake for 50 to 65 minutes, or until risen, browned, and a toothpick comes out clean.
- Let cool for a few minutes in the pan before turning out onto a cooling rack. Let cool completely before slicing, serving, and storing.

Delicious zucchini bread made even more delectable and moist with crushed pineapple. The addition of grated carrots and chopped walnuts meld really well with the zucchini and pineapple.

- Combine flour, baking powder, baking soda and salt.
- In a large bowl, mix oil, eggs, vanilla, sugar, cinnamon, and nutmeg. blend in pineapple, zucchini and carrots. Stir flour mixture into zucchini mixture. Fold in chopped walnuts. Pour batter into two greased and floured 9 x 5 loaf pans.
- Bake at 350°F for 1 hour. Cool on wire racks.
- Tip: If you have an abundance of zucchini on hand, grate the zucchini and some carrots and store them in freezer bags (2 cups zucchini and 1/2 cup of carrots). This freezes really well and you will always have the zucchini and carrots on hand to make this bread in the fall and winter months. This will also save time during the preparation.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
- Beat eggs slightly. Add butter and sugar. Beat smooth. Stir in pineapple and vanilla.
- In separate bowl put flour, baking powder, soda, salt, and walnuts. Stir well and pour into pineapple mixture. Stir to moisten. Pour into greased 9x5x3 inch loaf pan.
- Bake in 350 degree F (175 degree C) oven for 1 hour. Test with toothpick. Let stand 10 minutes. Remove from pan. Cool and wrap.

I found this in a cookbook from college. It's an excellent way to use up your zucchini's in the summer and makes your house smell wonderful.

Steps:
- Beat eggs in a large bowl to blend.
- Add oil, sugar, and vanilla and beat until thick and foamy.
- Stir in zucchini and pineapple.
- In a separate bowl combine flour, baking soda, salt, baking powder, cinnamon, nutmeg, cloves, orange zest, and nuts.
- Stir gently into zucchini mixture to blend.
- Bake in 2 greased loaf pans at 350 degrees.
- Check after 50 minutes by testing with a toothpick, if toothpick comes out clean bread is done, if not put back in for another 5 minutes.
- Cool 10 minutes.
- * For 4 small loaves, bake approximately 35 - 40 minutes.
