MACARONI AND CHEESE PIZZA

Number Of Ingredients 17

1/2 pound dried rotini pasta
Olive oil cooking spray
6 slices thick-cut good quality bacon
2 tablespoons unsalted butter
1 white onion, finely chopped
1 clove garlic, finely chopped
Pinch ground nutmeg
Salt and freshly ground black pepper
3 tablespoons all-purpose flour
2 cups whole milk
2 cups grated sharp Cheddar
1 cup grated mozzarella
1 cup panko breadcrumbs
1/2 cup Parmesan
3 tablespoons chopped fresh chives
1 tablespoon olive oil
1 store-bought pizza dough, rolled out and spread on a well-oiled baking sheet

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of water to a boil and cook the rotini al dente. Drain and spray with olive oil cooking spray, making sure the noodles are coated well. Set aside.
  • In a large saute pan over medium-high heat, cook the bacon until crispy. Remove to a paper towel-lined plate. Remove all but 1 tablespoon of the bacon drippings and add the butter. Add the onions, garlic and nutmeg. Season the vegetables with salt and pepper and saute until the onions wilt and become translucent, about 4 minutes. Reduce the heat to medium-low and sprinkle in the flour, stirring to coat the onions and garlic. Continue to cook until you have a blond roux, about 5 minutes. Whisk in the milk until you have a thick enough sauce that it coats the back of a spoon. Crumble the bacon and add half to the sauce. Mix in the Cheddar and mozzarella. Turn the heat to low. Add the pasta to the cheese sauce and stir to coat. Cover and keep warm.
  • In a small bowl, add the breadcrumbs, Parmesan, chives and olive oil. Add the rest of the crumbled bacon and add it to the bowl, stirring well to combine.
  • Spray the pizza dough with the olive oil spray and place into the oven for 7 minutes. Remove from the oven and set down. Spread the macaroni and cheese on the pizza, being careful to leave a 1-inch border. Sprinkle with the breadcrumb mixture on the macaroni and cheese and bake in the oven for 10 minutes. Remove from the oven and let stand for 10 minutes to set the macaroni and cheese.

1 (11 ounce) package refrigerated pizza crust
1 ½ cups elbow macaroni
¼ cup butter
1 tablespoon all-purpose flour
milk
¾ pound processed cheese (such as Velveeta®), cubed
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 10x15-inch baking sheet with cooking spray. Unroll pizza crust and place on the prepared baking pan.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Melt butter in a large saucepan over medium heat; cook and stir flour with butter until it has a slightly toasted fragrance, about 2 minutes. Whisk in milk and simmer until thickened, whisking constantly, 2 more minutes. Stir in processed cheese cubes. Let the cheese cubes melt, stirring often, to make a smooth cheese sauce.
  • Spread about 3/4 cup of cheese sauce onto the pizza crust. Stir cooked macaroni into remaining cheese sauce in the saucepan and spoon the macaroni and cheese onto the crust in an even layer. Sprinkle top of pizza with mozzarella cheese.
  • Bake in the preheated oven until the crust is lightly browned and the mozzarella cheese is golden brown, about 15 minutes.

8 ounces uncooked elbow macaroni
3 eggs
1 cup shredded cheddar cheese
1 lb ground beef
3/4 cup chopped onion
1 (15 ounce) can pizza sauce
1 (4 ounce) can mushroom stems and pieces, DRAINED
29 pepperoni slices
1 cup shredded Mexican blend cheese or 1 cup additional cheddar cheese

Steps:

  • Cook macaroni according to package directions; drain. In a bowl, beat the eggs; stir in cheddar cheese and macaroni. Spread onto a greased 14 inch pizza pan. Bake at 375°F for 15 minutes.
  • Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add pizza sauce; mix well.
  • Spread over macaroni crust. Sprinkle with mushrooms, pepperoni and Mexican cheese.
  • Bake for 15-20 minutes or until the cheese is melted.
  • Let stand for 5-10 minutes before slicing. Yield: 6-8 servings.

2 cups milk
8 ounces cream cheese, diced
3 ounces Velveeta cheese, diced
2 cups shredded monterey jack cheese, plus 1 cup

1 lb elbow macaroni, cooked for 6 minutes, drained and rinsed with cool water
1 cup marinara sauce
1/2 red onion, sliced into 1/2 moon strips
1/2 red bell pepper, cut into julienne strips
1/2 green bell pepper, cut into julienne strips
2 ounces mini pepperoni
1 cup panko breadcrumbs
3 tablespoons olive oil
1 1/2 teaspoons italian seasoning
kosher salt

Steps:

  • Preheat oven to 450 degrees. In a large pot, combine the milk, cream cheese and Velveeta over medium heat. Stir until cheeses are melted and mixture starts to simmer, then whisk in 2 cups shredded monterey jack cheese and 2 cups shredded cheddar cheese until melted.
  • Fold the macaroni and marinara sauce into the cheese sauce to combine completely and season to taste with salt and pepper. Spread onto a baking sheet and top with remaining 1 cup shredded monterey jack cheese, 1 cup cheddar cheese, onions, red and green peppers and pepperoni.

This macaroni and cheese is TO DIE FOR. People inhale it and drool over it as it's cooking, the aroma fills the whole house. Once it's on the table, it's gone in 3 seconds flat. It's pretty much AMAZING, if I do say so myself. DON'T skip any steps or substitute any of the ingredients, you have to make it just as it is for it to be amazing. NOT for the faint of heart! Quite an indulgence (look at the ingredients), but it's COMPLETELY worth it. It's the only way to make macaroni and cheese.

2 lbs macaroni
12 eggs
1 cup cubed Velveeta cheese
1 cup butter, melted
6 cups half-and-half
4 cups sharp cheddar cheese, grated
2 cups extra-sharp white cheddar cheese, grated
1 1/2 cups mozzarella cheese, grated
1 1/2 cups asiago cheese, grated
1 cup gruyere cheese, grated
1 cup monterey jack cheese, grated
1 cup muenster cheese, grated
1 cup parmesan cheese
1 cup Velveeta cheese, cubed
1/4 cup goat cheese (adds a kick) (optional)
1/8 teaspoon salt
1 tablespoon black pepper
1 pinch mustard
1 pinch cayenne pepper

Steps:

  • Preheat oven to 325 degrees Fahrenheit.
  • Cook macaroni according to package directions, al dente. Drain and set aside.
  • Whisk eggs together in big bowl until frothy. Add Velveeta, butter, and 2 cups of the half-and-half.
  • Add warm macaroni, mix until smooth.
  • Add rest of half-and-half, 3 cups sharp yellow Cheddar cheese, the rest of the various cheeses, salt, and pepper, tossing together.
  • Pour into greased 9 x 13 inch casserole dish, and bake for 30 minutes.
  • Sprinkle with the remaining 1 cup of sharp yellow cheddar cheese and bake about 30 minutes more, until golden brown. If you want, you could dot the top with a few tiny pieces of butter, just to help it brown more.
  • Serve hot. Enjoy!
