Kids can have fun helping to prepare these mini meat loaves in muffin cups. For extra spice, we sometimes add 2 teaspoons chili powder and 1 cup of salsa. -Linda Call, Falun, Kansas

1 package (6 ounces) stuffing mix
1 cup water
2 tablespoons hickory smoke-flavored barbecue sauce
1 pound ground beef
1 cup shredded cheddar cheese
Additional hickory smoke-flavored barbecue sauce, optional

Steps:

  • Preheat oven to 375°. In a large bowl, combine stuffing mix, water and 2 tablespoons barbecue sauce. Add beef; mix lightly but thoroughly. Press 1/3 cup mixture into each of 12 ungreased muffin cups., Bake, uncovered, 18-22 minutes or until a thermometer reads 160°. Sprinkle tops with cheese; bake 2-4 minutes longer or until cheese is melted. If desired, serve with additional barbecue sauce. , Freeze option: Securely wrap and freeze cooled meat loaf in foil. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Bake in a preheated 350° oven until heated through. Top with cheese as directed.

After taking advantage of a sale of gluten free products at my local supermarket I was left with a mass of sausages and mixes, and looking for something other than "bangers and mash" I decided to search for inspiration. This recipe was inspired by"Fluffy's" meatloaf-50393, it was my first experience of meatloaf but it will definately be becoming a regular on the family menu.

1 (6 ounce) box seasoned stuffing mix, gluten-free, sage and onion flavor
2 teaspoons gluten free Worcestershire sauce
1 egg, lightly beaten
1/2 cup milk
1/2 lb minced beef
1 lb gluten free pork sausage
2 large onions, chopped
2 garlic cloves, crushed
4 tablespoons ketchup
1/2 cup gluten free barbecue sauce
1 tablespoon brown sugar
1 teaspoon mustard powder

Steps:

  • Preheat oven to 350f.
  • Combine contents of stuffing mix with the milk, egg and Worcestershire sauce and set aside.
  • Saute onion and garlic in oil, when translucent and soft add half to stuffing mixture, retainind other half for sauce topping.
  • Remove sausagemeat from the skins and add to the minced beef, mix well until all meat is combined.
  • Add to the stuffing and onion mix, blend well.
  • Press into a loaf tin or four individual tins.
  • Prepare mustard to maufacturers instructions, add to ketchup and BBQ sauce.
  • Return remaining onion an garlic to the heat and gently stir in the sugar. When the sugar has melted add ketchup mix and cover the meat with sauce.
  • Place tin or tins carefully in a Ban-Marie and bake for 45mins.
  • Serve hot or cold.

1 ounce fresh breadcrumbs or 1/2 cup fresh breadcrumb
cooking spray
1 cup chopped onion
2 garlic cloves, chopped
1/4 cup ketchup
1/4 cup chopped fresh parsley
2 tablespoons grated fresh parmesan cheese
1 tablespoon prepared horseradish
1 tablespoon Dijon mustard
3/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 ounces white cheddar cheese, diced small
1 1/2 lbs ground sirloin
1 large egg, lightly beaten
1 tablespoon brown sugar
2 tablespoons ketchup
1/8 teaspoon ground ginger
1/8 teaspoon cumin

Steps:

  • Preheat oven to 425 degrees.
  • Heat a skillet over medium high heat. Add fresh breadcrumbs, cook 3 minutes or until toasted, stirring frequently.
  • While the breadcrumbs cook, heat a large skillet over medium high heat. Coat the pan with cooking spray. Add the onion and garlic; saute 3 minutes.
  • Combine onion mixture, breadcrumbs, 1/4 cup ketchup, and remaining ingredients. Shape into 6 (4x2 inch) loaves; place on a broiler pan coated with cooking spray. Bake for 15 minutes at 425 degrees. After 15 minutes, spoon the glaze evenly over each meatloaf. Bake an additional 10 minutes until done.

1 cup water
3/4 cup kraft shredded cheddar cheese

3/4 cup barbecue sauce (Kraft or Bull's-Eye Original, for the American-Style Version)
1 teaspoon italian seasoning, for the Italian-Style Version
3/4 cup spaghetti sauce, for the Italian-Style Version
2 teaspoons chili powder, for the Mexican-Style Version
3/4 cup Taco Bell Home Originals thick 'n chunky salsa, for the Mexican-Style Version

Steps:

  • Preheat the oven to 375.
  • Spray a 12-cup muffin tin with cooking spray.
  • Mix meat, stuffing mix, water and the spice add-in for the version of meatloaf that you prefer.
  • Divide equally into the muffin cups.
  • Make an indentation in the center of each meatloaf with a spoon; fill with the sauce add-in for the version of meatloaf that you prefer.
  • Bake for 30 minutes or until cooked through, 160 degrees.
  • Top with cheese; continue baking 5 minutes or until the cheese is melted.

  • Place your gluten free crackers in a food processor to to ground into a panko like texture. You can also finely Crush in a ziplock bag, just be sure it’s enough to thicken the meat/egg batter. Set aside. (see notes)
  • In a small bowl or stand mixer, place your ground meat, onion, and egg. Add in your ground crackers and seasonings and mix again until meatloaf batter is evenly combined. If you are using beef, you might need an extra 1-2 tbsp of ground crackers due to fat content of beef.
  • Press batter into pan and bake, cover with 1/2 to 2/3 sweet bbq sauce. Save extra sauce to brush on before serving.
