This goes fast! A great late night snack, goes perfectly with burgers, soup, and sandwiches! Adapted from Food & Wine magazine. Onion rings are a type of fast food commonly found in the United States, Canada, United Kingdom, Australia and Spain.

2 quarts vegetable oil, for frying
3 cups flour (cake flour is best)
1 cup cornstarch
2 teaspoons baking soda
2 teaspoons salt, plus more for sprinkling (use kosher if possible)
2 1/2-3 cups chilled club soda
2 large Spanish onions, cut into 1/2-inch slices and separated into rings

Steps:

  • In a very large pot (or deep fryer), heat the oil to 365°.
  • In a bowl, whisk the flour with the cornstarch, baking soda and 2 teaspoons of salt.
  • Add 2 1/2 cups of the club soda and whisk until smooth; the batter should be thick but pourable. If needed, add the remaining 1/2 cup of club soda, a few tablespoons at a time.
  • Working with 6 or 7 onion rings at a time, dip them in the batter until completely coated; as you pull the rings from the batter, scrape some of the excess against the side of the bowl.
  • Carefully add the onion rings to the hot oil and fry until golden and crisp, about 2 minutes.
  • Drain the onion rings on paper towels.
  • Sprinkle the onion rings with salt and serve immediately or keep warm in an oven on low heat while you coat and fry the rest. Enjoy!

With their crispy golden outside and soft, sweet interior, these homemade onion rings are impossible to resist. Serve with your favorite dipping sauce like the Awesome Blossom Sauce in the notes below.

1 large sweet or yellow onion (thickly sliced into 1/2-inch thick rings)
1 cup milk
1 Tbsp white vinegar
1/2 cup sour cream
1 cup all-purpose flour
1/2 Tbsp salt
1/4 tsp black pepper
1 tsp garlic powder
Oil for frying (I used canola oil - use something with a high smoke point)

Steps:

  • Heat a dutch oven over medium heat with 1" of oil (or enough to cover the onion rings). You can use a deep fryer if you have one.
  • In a medium bowl, whisk together 1 cup milk with 1 Tbsp vinegar and let sit 5 minutes. Whisk in 1/2 cup sour cream.
  • In a separate bowl, whisk together: 1 cup flour, 1/2 Tbsp salt, 1/4 tsp black pepper, and 1 tsp garlic powder.
  • Separate the onion rings and dip each ring in the milk mixture, then dredge with flour. (I used a fork to transfer from the wet bowl to the dry bowl so my hands didn't get as gunky). Repeat by dipping in milk mixture a second time and dredging again in flour. Place the finished onion rings on a plate until ready to fry.
  • Once the oil is at 375˚F on a thermometer, or hot enough for the onion rings to sizzle, place 3-4 double battered onion rings in a single layer in the hot oil and cook for about 3 minutes, flipping halfway and fry until exterior is crisp and light golden brown. Let onion rings cool on paper towels so soak up any excess oil.

2 large onions, cut into 1⁄2-inch rounds
2 quarts peanut oil
1 cup all-purpose flour
1⁄2 cup cornstarch
1 teaspoon baking powder
1⁄4 teaspoon baking soda
1⁄2 teaspoon paprika
3/4 cup light-flavored beer (such as PBR or Budweiser), ice-cold
1/4 cup 80-proof vodka
Kosher Salt

Steps:

  • Separate the onion rounds into individual rings. Place in a gallon-sized zipper-lock freezer bag and put them in the freezer until completely frozen, at least 1 hour (they can stay in the freezer for up to 1 month).
  • When ready to fry, remove the onion rings from the freezer bag, transfer to a bowl, and thaw under tepid running water. Transfer to a rimmed baking sheet lined with a clean kitchen towel or several layers of paper towels and dry the rings thoroughly. Carefully peel off the inner papery membrane from each ring and discard (the rings will be very floppy). Set aside.
  • Preheat the oil to 375°F in a large wok or a Dutch oven over medium-high heat. Combine the flour, cornstarch, baking powder, baking soda, and paprika in a medium bowl and whisk together. Combine the beer and vodka in a small bowl.
  • Slowly add the beer mixture to the flour mixture, whisking constantly until the batter has texture of thick paint (you may not need all of the beer). The batter should leave a trail if you drip it back into the bowl off the whisk. Do not overmix; a few small lumps are OK. Dip one onion ring in the batter, making sure that all surfaces are coated, lift it out, letting the excess batter drip off, and add it to the hot oil by slowly lowering it in with your fingers until just one side is sticking out, then dropping it in. Repeat until half of the rings are in the oil. Fry, flipping the rings halfway through cooking, until they are deep golden brown, about 4 minutes. Transfer the rings to a large mixing bowl lined with paper towels and toss while sprinkling salt over them. The fried rings can be placed on a rack on a rimmed baking sheet and kept hot in a 200°F oven while you fry the remaining rings. Serve the rings immediately.

4 large sweet onions
3 cups of milk or buttermilk
2/3 cup yellow cornmeal
1 2/3 cup all-purpose flour (divided)
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons melted shortening
1 beaten egg
1 2/3 cups milk

Steps:

  • To keep the onion rings warm while frying subsequent batches, heat the oven to 200 F.
  • Line a baking sheet with paper towels for draining the onion rings and place another baking pan nearby for keeping them warm in the oven.
  • Peel the onions and slice them into rounds about 1/4-inch thick. Separate the rounds into rings.
  • Pour a few inches of milk or buttermilk in a large, wide bowl. Add the onion rings and let them soak for 15 to 20 minutes.
  • Heat about 1 quart of vegetable oil in a deep, heavy pan or deep fryer to 365 F.
  • Meanwhile, in another bowl, combine the cornmeal, 2/3 cup of the flour, salt, pepper, melted shortening, egg, and 1 2/3 cups milk. Mix until the batter is smooth.
  • Put about 1 cup of flour in another bowl.
  • Remove some of the onion rings from the milk. Dredge them first in the plain flour and then dip them in the batter to coat.
  • Fry the onion rings in batches in the vegetable oil for 2 to 3 minutes, or until golden brown. Make sure the oil is at the correct temperature and don't crowd the onions.

3 large yellow onions
3/4 cup all-purpose flour
1/4 cup cornmeal (or corn muffin mix, as a substitute)
1/2 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1/8 teaspoon cayenne pepper
1/3 cup milk (or more if desired or necessary)

Steps:

  • In a 3 quart pot, heat about 3-4 inches of vegetable oil on medium to medium high heat.
  • Combine all dry ingredients in a medium sized bowl and mix in milk with a whisk, adding more milk if needed until mixture is the consistency is like a thin-medium pancake batter.
  • Cut onions into thin rings and toss in batter.
  • Place a single ring into the oil to test for appropriate heat. Onion ring should sizzle and start to brown immediately.
  • Place small batches of onion rings into the oil and when they turn dark golden brown on one side, flip them over to the othe side with a slotted spoon or carving fork.
  • Drain on a paper towel-lined plate. Repeat until all onions are done. (Add a bit more milk to the batter if it appears that the last batch isn't getting coated enough.).
  • I like to salt the cooked onion rings, but that is optional.

1 (8-ounce) beer (recommended: Heineken)
1 (2-ounce) shot of vodka (the cheaper the better)
2 tablespoons plus 1 teaspoon paprika
1 cup all-purpose flour, plus a little extra, if needed
3 large white onions, peeled and cut into 1-inch thick rounds
Kosher salt

Steps:

  • In a large pot, heat the oil to 375 degrees F.
  • Pour the beer into a medium bowl and stir in the vodka. Slowly whisk in 1 teaspoon paprika and 1 cup flour. The batter should be fairly thick (to coat the onion rings before frying) but also easy to stir. Set aside in a warm place.
  • Gather the onion rings in a medium bowl and use a small strainer to sprinkle it with remaining 2 tablespoons paprika. Toss to blend.
  • Prepare a baking sheet fitted with a kitchen towel to drain the onion rings as they come out of the oil. Stir the batter slightly. To test the consistency of the batter and the temperature of the oil, put an onion ring on a slotted spoon and submerge it completely in the batter. It should coat the piece lightly. If the batter is too thick, add a little water to thin it out. If the batter is too thin, sift and whisk in a little more flour.
  • Dip the onion ring in the batter, drain the excess batter, and use a slotted spoon or a pair of kitchen tongs to lower the onion ring into the oil. It should bubble slightly and the onion should gradually rise to the top. Fry until light brown, 2 to 3 minutes, and transfer them to the kitchen towel. Fry the onions in small batches. Season with salt and serve immediately.

  • Mix flour, baking powder, paprika, seasoning salt and water. Stir until smooth.
  • Slice onions 1/8-1/4" inch thick and seperate into rings.
  • Drop onions into batter in bowl and stir gently with a spoon. This saves time, over dipping each ring separately into batter. Make sure all onion rings are coated with batter.
  • Using a fork, drop one onion ring into fat to test temperature. Your onion ring should not cook too quickly or turn dark. If necessary, reduce temperature. You want your fried onion rings to puff up and turn golden brown, not overcook. If they over cook they will taste bitter.
  • When fat is ready, gently drop onion rings into pot or place in fryer basket and lower into fryer.
  • When onions rings are golden, using a slotted spoon lift into a metal strainer to drain. If using a fryer, simply lift the basket and allow your onion rings to drain.

Steps:

  • Use a fork to steady your onion. Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
  • Heat the oil to 180C in a heavy-based pan - it should be no more than 1/ 3 full.
  • Meanwhile put the flour and sparkling water in a bowl and season generously. Whisk together to form a batter.
