1/3 cup milk
1/3 cup Amaretto
1 (8 ounce) container Cool Whip
1 jello vanilla pudding mix (instant kind - French Vanilla works, also, 4-serving package)
fresh fruit

Steps:

  • In a medium bowl, pour in pudding mix- add milk and stir (just to dissolve the mix).
  • Fold in Cool Whip until blended.
  • Add the Amaretto and stir all together.
  • Keep cool until serving- use any fresh fruit for dipping- Strawberries, grapes, and apples work great!

1/3 cup sugar
1/4 cup water
1/4 cup honey
3 -4 tablespoons Amaretto
1 tablespoon lemon juice
3 cups mixed fruit, cut-up (watermelon, honeydew, cantaloupe, seedless grapes, pineapple, peaches, etc)

Steps:

  • For syrup: In a small saucepan, stir together the sugar, water and honey. Bring the mixture to a boil. Reduce the heat and simmer, uncovered, for 5 minutes. Set the mixture aside to cool.
  • Stir in the amaretto and lemon juice. Place fruit in a large mixing bowl. Pour syrup over fruit. Cover and chill for 1 1/2 to 2 hours.
  • Serve over ice cream or top with whipped cream and toasted almonds or pecans.

1 package yellow cake mix
4 eggs
1 (3 1/2 ounce) package instant vanilla pudding
2 tablespoons amaretto liqueur
1/2 cup water
1/2 cup vegetable oil
1/2 teaspoon almond extract
1/4-1/2 cup lightly toasted sliced almonds (optional)
1/2 cup amaretto liqueur
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour a 10 inch Bundt pan.
  • Sprinkle evenly with almonds to coat pan.
  • Combine cake mix, eggs, pudding, amaretto, water, oil, and almond extract and mix together well.
  • Pour batter into prepared Bundt pan.
  • Bake for 40 to 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • Remove cake from oven, and while cake is still warm and in the pan poke holes in the bottom and pour the Amaretto glaze into the holes and bottom of the cake.
  • Let the cake cool for at least 2 hours (the longer the better!) before removing from the pan.
  • To Make Amaretto Glaze: Combine the confectioners sugar and Amaretto.
  • Blend until smooth.
  • You can add more Amaretto as needed.

ALMOND COFFEE CAKE W/ AMARETTO GLAZE

This is nice almond-spiked coffee cake that gets better the longer it sits. Make at least one day before serving.

4 ounces almond paste (I use marzipan)
1 cup sugar
1/2 cup unsalted butter
1 teaspoon vanilla extract
3 eggs
3/4 cup low-fat milk
3 cups flour
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1 tablespoon cornstarch
1/4 cup sliced toasted almond
confectioners' sugar (optional)
1/4 cup water
1/4 cup granulated sugar
1/4 cup Amaretto (see note)

Steps:

  • Preheat oven to 350-degrees.
  • Generously grease and flour a tube pan.
  • You can also use a 9X5-inch loaf pan, a 9-inch springform pan, bundt or kugelhupf cake mold.
  • Cake: In a bowl, cream the almond paste with sugar and butter.
  • As the almond paste breaks up, add the vanilla, eggs and milk.
  • Blend well and fold in the flour, salt, baking powder and cornstarch to make a thick but fluffy batter.
  • If serving cake bottom side up, sprinkle the almonds into the bottom of the pan here.
  • Spoon the batter into the prepared pan.
  • Sprinkle the almonds on top, otherwise.
  • Bake 50-55 minutes.
  • The cake should be evenly golden brown and slightly cracked.
  • When completely cool, dust with the confectioners' sugar, if using.
  • Or, alternatively, poke holes into the top of the cake and drizzle on the Amaretto glaze.
  • (I used the glaze, and then dusted confectioners' sugar on top.).
  • Glaze: Stir together the water and sugar in a small saucepan.
  • Set on low heat to dissolve the sugar.
  • Stir in the liqueur, heat for 2-3 minutes more.
  • Cool slightly.
  • NOTE: You can replace the liqueur with an additional 1/4 cup water combined with 1/2 teaspoon almond extract.

AMARETTO SAUCE

This sauce is so YUMMY!! It was originally a topping for bread pudding(check out my recipe for that too!) but this is too delicious to hide in another recipe. I use it to top so many thing but my favorite is for ice cream! I also usually double the recipe.

1 lb carrot
3 tablespoons butter
2 tablespoons sugar
1/4 cup Amaretto
salt and pepper

Steps:

  • Parboil sliced carrots (I usually use the baby carrots whole) until al dente, about 10 minutes.
  • Drain and rinse under cold water to stop cooking. This can be done a couple of hours ahead of time.
  • Heat butter over medium heat until melted. Add carrots, sugar and heat to caramelize sugar.
  • Add Amaretto and cook to reduce sauce to a glaze.
  • Season to taste with salt and pepper.
  • Serve immediately.

2 (16 ounce) cans pear halves, drained but reserve juice
1 (16 ounce) can apricot halves, drained
1 (20 ounce) can pineapple chunks, drained
2 tablespoons Amaretto
2 teaspoons brown sugar
1 teaspoon cornstarch
1/2 teaspoon vanilla

Steps:

  • In small bowl, combine 1/3 cup of reserved pear juice with the cornstarch and stir until blended. Then add Amaretto, brown sugar and vanilla. Stir well. Set aside.
  • Spray a large skillet with Pam and add pear and apricot halves and pineapple chunks to warmed pan and saute for 2 to 3 minutes. Pour in Amaretto mixture and cook over medium heat for a few minutes until thickened, stirring frequently. Do not overcook.
  • Place in individual serving dishes or you may use this as a warm side dish with a hot entree. Top with a dollop of sorbet and/or sprinkle with finely chopped nuts.
