Steps:
- Preheat oven to 375ºF.
- Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and both sugars in a bowl; cut in butter with a pastry blender or 2 knives until mixture is crumbly.
- Add almonds, toss well.
- Combine apple, nutmeg, cinnamon and Amaretto in a bowl; toss well.
- Spoon apple mixture in an 8" square baking dish or 1-1/2 quart casserole.
- Sprinkle with crumb mixture.
- Bake at 375ºF for 45 minutes or until golden brown.

AMARETTO BAKED APPLES

- 1 Place a rack in the center of the oven. Preheat the oven to 375°F. Butter a baking dish just large enough to hold the apples standing upright. 2 Remove the apple cores and peel the apples about two-thirds of the way down from the stem end. 3 Place the amaretti cookies in a plastic bag and crush them gently with a heavy object, such as a rolling pin. In a medium bowl, blend the crumbs with the sugar and butter. 4 Stuff a little of the mixture into the center of each apple. Spoon the amaretto over the apples. Pour 1 cup water around the apples. 5 Bake 45 minutes or until the apples are tender when pierced with a knife. Serve warm or at room temperature. From "1,000 Italian Recipes." AMARETTO APPLE TART
Elegant fruit pastry that combines apples, amaretto liqueur, heavy cream and almonds. The crust is a bit sweeter than a normal pastry. This is adapted from a treasured Soup and Stew cookbook.

- Prepare pastry: in medium bowl, mix flour and sugar.
- Cut in chilled butter until crumbly.
- Beat egg yolk and mix with vanilla.
- With fork, stir egg mxture lightly into flour mixture.
- Press dough together into a smooth ball, then flatten.
- Press pastry into bottom and up the sides of an 11 inch removable bottom tart pan.
- Peel apples and cut in halves lengthwise; remove cores.
- Cut each half in thin lengthwise slices, keeping slices together in apple shape.
- Arrange apples in prepared pastry shell, round sides up.
- After placing apple rounds in pastry shell, fan out slightly to cover most of pastry.
- In a medium bowl, beat eggs with amaretto, sugar and salt until well mixed.
- Blend in cream and pour evenly over apples.
- Sprinkle with almonds.
- Bake in preheated 450* oven for 15 minutes, reduce heat to 350* and bake until filling is set and apples are tender- 50 minutes to an hour.
- Remove and place on wire rack to cool.
- Stir preserves in small saucepan on low heat until melted and bubbly.
- Strain to remove any solid pieces of fruit and brush glaze over pastry tart.
- Remove pan sides and serve tart at room temperature.

One of my favorite autumn activities is going apple picking. I created this recipe as a way to combine the apples that we pick and one of my favorite flavors - Amaretto. This cake is moist, sweet, and bursting with flavor...Enjoy!

Steps:
- Preheat oven to 350 degrees.
- Grease 4 mini-loaf pans or 1 regular-sized loaf pan.
- With an electric mixer, beat butter until light and fluffy.
- Add eggs and vanilla, continuing to beat until well mixed.
- In a separate bowl, combine flour, sugar, baking powder and cinnamon, mix well.
- Add half of the flour mixture to the butter/egg mixture, mix well.
- Add milk and Amaretto to the mixture, then the rest of the flour mixture, beating well after each addition.
- Fold in chopped apple, mixing gently but thoroughly.
- Pour mixture into loaf pan, or divide among mini-loaf pans.
- Bake at 350 degrees for 45-50 minutes (25-30 for mini-loaf pans) until toothpick stuck in the middle comes out clean.
- Remove from oven and let cool in pan for 10 minutes.
- Remove from pan and let cool on a rack.
