3/4 cup whole milk
6 slices white bread
2 lbs ground beef
1 teaspoon salt
fresh ground black pepper
1/2 diced onion
4 beaten eggs
10 slices bacon
1 1/2 cups ketchup
1/4 cup brown sugar
1 teaspoon dry mustard
Tabasco sauce (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Pour milk over the bread slices. Allow it to soak in for several minutes.
  • Place the ground beef, milk-soaked bread, salt, and black pepper in a large mixing bowl. Add in your beaten eggs.
  • USE YOUR HANDS and git in there, mix it up well.
  • Form into a log. Hint: don't "smoosh" it down to tight, that just compacts the meat and tends to make for a dense er heavy meatloaf. I honest and truly believe THIS step was the defining factor in the most juiciest meatloaf I have ever eaten.
  • Lay bacon slices across the top, width wise, tucking the ends underneath the meatloaf.
  • Spread a good amount of sauce onto your loaf, leaving a little for your second application later in cooking process.
  • Bake for 45 minutes, then slather the rest of the sauce over the top.
  • Bake for 15 more minutes or so, you can raise oven temperature to 400 after the second application,.

1 (12 ounce) can evaporated milk
1 (1 ounce) packet dry onion soup mix
1 large egg
2 tablespoons tomato ketchup

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients together in bowl. The consistency will seem extremely soupy, but don't worry, it will come out perfectly.
  • Pour mixture into a greased 9"x5" loaf pan.
  • Bake for 1 1/2 hours, draining fat every 30 minutes.
  • Top with ketchup 20 minutes before baking time is up.
  • Let cool in pan for 5 minutes.
  • Remove from pan and slice.

1 tablespoon olive oil, or as needed
1 onion, diced
½ red bell pepper, diced
½ green bell pepper, diced
1 clove garlic, minced, or to taste
salt and ground black pepper to taste
1 pound ground turkey
1 pound lean ground beef
2 cups cooked quinoa, or more to taste
½ cup milk
2 eggs, beaten
2 tablespoons Worcestershire sauce
2 tablespoons sweet chili sauce
¾ teaspoon ground ginger
¼ cup bread crumbs, or as needed
¼ cup brown sugar
¼ cup ketchup
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Heat olive oil in a large skillet over medium-high heat. Saute onion, red bell pepper, and green bell pepper in hot oil until soft and translucent, about 5 minutes. Add garlic to vegetable mixture; saute until fragrant, about 1 minute more. Season with salt and black pepper; remove from heat to cool.
  • Mix turkey, beef, quinoa, milk, eggs, 2 tablespoons Worcestershire sauce, sweet chili sauce, and ground ginger together in a bowl until well-combined. Add sauteed vegetable mixture; stir until completely incorporated. Gradually add bread crumbs to meat mixture until mixture is moist and holds together. Form into 6 mini loves and place loaves on prepared baking sheet.
  • Whisk brown sugar, ketchup, and 1 tablespoon Worcestershire sauce together in a bowl until sugar is dissolved and glaze is smooth.
  • Bake meat loaves in the preheated oven for 30 minutes. Spread glaze over each loaf and continue baking until no loaves are longer pink in the center, 10 to 15 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

This is an adapted recipe from one my mother used to make. My favorite part of meatloaf was always the tangy candied topping. I hope you like this version.

1 lb ground chuck
1 lb ground turkey
10 3/4 ounces Campbell's condensed tomato soup
4 tablespoons dried onion flakes
1/2 cup instant oatmeal
1 egg
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup tomato ketchup
4 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees.
  • Lightly spray a 8 x 4 x 2 1/2 inches glass loaf pan.
  • Knead together the ground chuck and ground turkey, tomato soup (do not add water), dried minced onion, the oatmeal, the egg, and salt and black pepper.
  • Mold the meat mixture into a loaf to fit your pan.
  • Place the meatloaf in 350 degree oven for 50 minutes.
  • Carefully remove the meatloaf and turn off the oven. Drain any access fat immediately if you wish.
  • Stir together the ketchup and brown sugar and use it to glaze the top of the meatloaf.
  • Return the meatloaf to the oven under a 500 degree broiler (or high setting) for 5 to 8 minutes. Watch carefully as it will burn quickly once the topping begins to caramelize.
  • Remove when browned to your liking, let stand about 5 minutes before cutting and serving.

I always liked the way my mom made meatloaf, I remember her cleaning out the frig to make it. But it always seemed like the more I added the less it tasted like I wanted it to. Finally I think I've come up with the perfect recipe for our taste. I did add a pinch of Caribbean Rub, (Not caribbean jerk) which added a savory hint, but it is not absolutely necessary. (See my Caribbean Coleslaw Masterpiece recipe for an explanation about what to use for a good Caribbean Rub if you decide to include it). I Loved the way the glaze turned out! I think the thing I enjoyed most in this batch was the addition of the cabbage, we all Really enjoyed it. The amounts are estimates, so use your best judgment as you build it. I made this batch in muffin tins, which is a fun way to do it sometimes, when you want it to cook a little quicker, and want things portioned, it also allows each serving to have a bit more glaze, & makes it a little easier to freeze and pull out individual portions.

1 lb ground pork
2 eggs
1/2-3/4 cup breadcrumbs (mine were homemade, but not too coarse)
3/4 cup shredded cabbage
1/2 cup grated carrot
1 teaspoon fresh ground horseradish
1/2 teaspoon chopped fresh garlic (1-2 cloves)
1/2 teaspoon ground black pepper
1/2 teaspoon garlic salt
1/2 teaspoon grill seasoning
1/4 teaspoon blackening seasoning
1/4 teaspoon sweet basil (measurement is for dried)
1 pinch caribbean rub seasoning (not jerk)
2/3 cup ketchup
1 1/2 tablespoons brown sugar
1 1/2 tablespoons balsamic vinegar (really should be balsamic)

Steps:

  • For Loaf:.
  • Mix all ingredients by hand until everything is well incorporated.
  • Put in large loaf pan (or 2 smaller loaf pans) leaving 1/2-1" gap on one end for grease to drain to.
  • OR for muffins, form meat mixture packed & rounded into each muffin space (makes approximately 10 regular sized muffins, usually 2 per person). Do place over a cookie sheet so that you don't have grease drip onto your oven.
  • Generously brush on glaze to top(s).
  • For loaf: Bake at 350 approx 1 hours.
  • For "Muffins": Bake at 350 for approx 30-40 minutes.
  • Or until meat tests done in center at 160-170 degrees.
  • Serve with a side of the glaze, & use any leftover glaze with leftovers.

When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.
