Your family will go nuts over this zesty twist on lemon bread. For extra creaminess use any Almond Breeze Almond-Cashew Blend instead of Almond Breeze Unsweetened Original.

1 ½ cups all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 cup granulated sugar
2 tablespoons lemon zest
¾ cup Almond Breeze Unsweetened Original OR any Almond Breeze Almond-Cashew Blend
½ cup canola or vegetable oil
2 large eggs, slightly beaten
1 teaspoon fresh lemon juice
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup powdered sugar
1 ½ tablespoons fresh lemon juice
1 teaspoon almond extract
3 tablespoons sliced almonds for garnish

Steps:

  • Preheat oven to 350 degrees F. Spray a 8 1/2 x 4 1/2 loaf pan with cooking spray and set aside.
  • In a large bowl, whisk together the flour, salt, and baking powder. In a small bowl, combine sugar and lemon zest. Rub together with your fingers until fragrant. Whisk into the flour mixture. Set aside.
  • In a separate medium bowl, combine the almond milk, oil, eggs, 1 teaspoon lemon juice, vanilla, and almond extract.
  • Slowly add the wet ingredients to the dry ingredients. Stir until combined. Pour batter into prepared loaf pan.
  • Bake for 55-60 minutes, or until toothpick comes out clean. Place the loaf on a cooling rack and cool for 15 minutes. Loosen the sides of the bread with a knife. Carefully remove loaf from pan. Let cool completely on wire rack.
  • While the bread is cooling, make the lemon glaze. In a small bowl, combine powdered sugar, 1 1/2 tablespoons lemon juice, and almond extract. Whisk until smooth. Drizzle the glaze over the lemon almond bread. Sprinkle sliced almonds over the bread. Cut and serve.

Steps:

  • Preheat oven to 350 degrees F. Grease and flour a standard 9x5'' loaf pan.
  • In a small bowl sift together flour, baking powder and salt.
  • In another large bowl cream together the butter and sugar.
  • Add the eggs and mix. Add zest and juice from one lemon, and almond extract. Add the almond milk and sour cream and mix.
  • Slowly stir in dry ingredients, just until combined.
  • Pour batter into prepared pan. Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.
  • Remove to a wire cooling rack to cool completely.
  • Mix together glaze ingredients until smooth. Drizzle over the top of the cooled cake. Sprinkle with sliced almonds.

The crunchy toasted almonds and sweet cinnamony topping on these round loaves make them look and taste terrific. "My niece shared this recipe with me a few years ago, and I adapted it to use the dough setting on my bread machine," notes Sally Ball of Gladwin, Michigan. "It's delicious as a breakfast bread or served warm with ice cream."

DOUGH:
2/3 cup warm milk (70° to 80°)
1 egg yolk
1/4 cup butter, softened
1/4 cup applesauce, room temperature
1/3 cup sugar
1/2 teaspoon salt
2-3/4 cups bread flour
2-1/4 teaspoons active dry yeast
TOPPING:
1/4 cup butter, cubed
3 tablespoons sugar
1 tablespoon milk
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
6 tablespoons sliced almonds

Steps:

  • In bread machine pan, place dough ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a floured surface and punch down. Divide dough in half. Roll each portion into a 6-in. circle and place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. Meanwhile, for topping, combine butter, sugar, milk, cinnamon and salt in a small saucepan. Cook and stir over low heat until butter is melted. Simmer for 1 minute. Remove from the heat; cool for 5 minutes. Make a 1/4-in. depression in the center of each loaf with the tip of a wooden spoon. Brush with butter mixture and sprinkle with almonds. Bake at 375° for 18-20 minutes or until golden brown. Cool for 10 minutes. Serve warm.

1/2 cup plus 1 tablespoon cream cheese, softened (4-1/2 ounces)
2/3 cup confectioners' sugar, divided
2 tablespoons lemon curd
2 teaspoons grated lemon zest
1/4 teaspoon almond extract
1 sheet frozen puff pastry, thawed
1 large egg, beaten
2 tablespoons water
2 teaspoons lemon juice
2 teaspoons 2% milk
3 tablespoons sliced almonds, toasted

Steps:

  • Beat cream cheese, 3 tablespoons confectioners' sugar, lemon curd, lemon zest and almond extract on medium until combined. Refrigerate, covered, for 30 minutes., Preheat oven to 400°. On a lightly floured surface, unfold puff pastry. Roll into a 12x9-in. rectangle. Using a pastry cutter or sharp knife, cut into 9 rectangles. Spoon rounded tablespoons of cream cheese mixture in center of each rectangle. In a small bowl, whisk egg with water. Brush edges with egg mixture., Wrap puff pastry around filling to cover completely. Pinch edges together to form a ball. Place seam side down, 2 inches apart, on a parchment-lined baking sheet. Brush pastries with remaining egg mixture. Pierce each once with a fork. Bake until golden brown, 15-18 minutes. Cool on wire rack for 5 minutes. Loosen pastries from the parchment., Meanwhile, combine lemon juice, milk and remaining confectioners' sugar. Brush each pastry with lemon glaze. Top with almonds. When glaze is set, in 1-2 minutes, peel off parchment. Serve warm.

Ready, Set, Cook! Reynolds Wrap Contest Entry. I am the innkeeper at Belle Oaks Inn in South Central Texas. Our signature breakfast bread, Pecan Orange Bread, is always a big hit with guests. I have changed it up here to include ingredients from the contest list, and have made it several times for guests -- who love it just as much as the original!

1 (8 count) can Pillsbury Grands refrigerated buttermilk biscuits
4 ounces cream cheese, cut into 8 squares
1/2 cup sugar
1/2 cup butter
1/2 cup sliced almonds
2 lemons, zest of
Reynolds Wrap Foil

Steps:

  • Spray a bundt pan with non-stick spray. Melt butter in microwave; set aside.
  • Add lemon zest and almonds to sugar, mix to combine. Take biscuits one at a time, split each in half and insert a square of cream cheese. Reseal. Dip each biscuit in the melted butter, then in sugar mixture. Set biscuits on their sides around inside of bundt pan. Pour remaining sugar mixture and butter over biscuits.
  • Cover with Reynolds Wrap foil, bake at 400 degrees for 40 minutes, removing foil for last 10 minutes of baking time.
  • Invert bundt pan on serving plate. Serve warm.

Use Reynolds Wrap Foil as an aid to help form the dough into a roll before chilling. Also use Reynolds Wrap Foil to line your cookie sheet, no greasing required, to give the bottom of the shortbread an extra golden brown crunch.

1/2 teaspoon baking powder
1 tablespoon chopped fresh rosemary
1/2 cup finely chopped almonds
1 tablespoon lemon zest
3/4 cup unsalted butter, softened
2 tablespoons honey
1 cup confectioners' sugar, divided
1 1/2 tablespoons lemon juice

Steps:

  • Whisk together flour, salt, baking powder, rosemary, almonds and lemon zest in a bowl.
  • Mix together, butter, honey and 1/2 cup of the confectioners sugar in a large bowl with an electric mixer at low speed, then add the flour mixture and mix until the ingredients are just incorporated.
  • Lay a roughly 12 x 17 inch sheet of Reynolds Wrap Foil onto a work surface. Dump the dough onto the center of the foil and with your hands form the dough into a roll approximately 12 inches long. Wrap the roll with the foil, using the foil as an aid to further compress the dough. Chill the dough in the foil for 1 hour.
  • Unwrap the chilled dough and slice it carefully with a sharp knife into 1/3 inch rounds. Place rounds onto an ungreased Reynolds Wrap Foil lined baking sheet and bake in a 300 degree oven for 10 to 12 minutes or until the edges of the shortbread are golden brown. Cool the shortbread in the pan.
  • Meanwhile combine the remaining 1/2 cup confectioners sugar with the lemon juice. Drizzle over the cooled shortbread. Use the foil liner to wrap and store the shortbread if desired.

1/4 cup whole wheat pastry flour

2 tablespoons honey
1/2 cup unsalted butter, softened
1 egg
1 teaspoon fresh lemon zest

Steps:

  • Wisk together dry ingredients. Set aside.
  • In a large bowl beat with a hand mixer (crumbled up or grated) almond paste, sugar, honey and butter until well blended. Add egg, zest and lemon juice. Beat until fluffy and light. Stir in dry ingredients. Stir in chocolate chips. Cover bowl with Reynolds wrap and refrigerate for at least 1 hour.
  • Preheat oven to 350 degrees. Line a cookie sheet with Reynolds wrap, and lightly spray with non stick spray.
  • Roll dough into walnut sized balls (1 inch). Roll in the almonds and place 2 inches apart on prepared cookie sheet and bake 9-12 minutes, or until lightly browning.
  • Let it set on sheet for 2 minutes and remove to a rack to cool.
