1 cup plus 1 tablespoon all-purpose flour (spooned and leveled), divided, plus more for work surface
3/4 cup granulated sugar
1/2 teaspoon fine salt, divided
6 cups drained jarred sour cherries (from three 24-ounce jars)
1 teaspoon pure vanilla extract
1 Basic Pie Crust or store-bought pie crust in a deep-dish 9-inch plate
1 large egg white, lightly beaten
1/2 cup light-brown sugar
1 stick cold unsalted butter, cut into pieces
1/4 cup almonds

Steps:

  • Preheat oven to 375 degrees, with racks in middle and lower thirds. In a large bowl, stir together 1 tablespoon flour, granulated sugar, and 1/4 teaspoon salt. Stir in cherries and vanilla. Brush crust with egg white and fill with cherry mixture.
  • In a food processor, pulse together remaining 1 cup flour and 1/4 teaspoon salt. Add brown sugar, butter, and almonds; pulse until large pieces form. Scatter crumble over cherry filling.
  • Bake on middle rack, with a foil-lined rimmed baking sheet on lower rack to catch drips, until topping and crust are golden, 45 minutes. Tent pie loosely with foil; bake until juices in center are bubbling, 30 to 45 minutes more. Transfer to a rack and let cool. Serve warm or at room temperature. Cover and keep at room temperature, up to 3 days.

Nonstick cooking spray
1 cup prepared cherry pie filling
1 cup cherry preserves
1/4 cup dried cherries
1 1/2 teaspoons pure almond extract
1 cup quick-cooking oats
1/2 cup dark brown sugar
1/2 cup sliced almonds
1 teaspoon ground cinnamon
5 tablespoons butter, melted
Whipped non-dairy topping, or sour cream

Steps:

  • Preheat oven to 400 degrees F.
  • Spray 4 (8-ounce) ramekins or custard cups with cooking spray. Stir pie filling, preserves, dried cherries, and almond extract in a large bowl to blend. Spoon cherry mixture into ramekins. Place ramekins on a cookie sheet.
  • Toss oats, brown sugar, almonds, and cinnamon in medium bowl to combine. Drizzle melted butter over; stir to moisten. Sprinkle topping over cherry mixture. Bake for 20 minutes, or until topping is golden and cherry mixture bubbles. Serve warm with whipped topping or sour cream.

For the Pie:
1 pound cherries (sweet, pitted ; fresh or frozen; about 4 cups)
1/2 cup sugar
2 tablespoons tapioca (granulated/instant or tapioca starch)
2 tablespoons crystallized ginger (finely chopped)
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 pinch salt
1 pie shell (9-inch, homemade or store-bought, thawed if frozen)
For the Streusel Topping:
3/4 cup old fashioned rolled oats (not instant)
1/4 cup white whole wheat flour (or regular all-purpose flour)
1/4 cup sugar
1/2 teaspoon cinnamon
3 tablespoons unsalted butter (cold, or non-hydrogenated margarine, such as Earth Balance, cut into small pieces)

Steps:

  • Gather the ingredients. Preheat the oven to 350 F. If your cherries are frozen, be sure to completely thaw and drain off most of the liquid. A little left behind is ok, but you want barely any.
  • Add the cherries, sugar, cornstarch, and lemon juice to a medium saucepan. Cook over low heat, gently stirring, until the cornstarch and sugar dissolves, and the mixture is thick. Do not over-stir, or it will break up the cherries. Remove from the heat, stir in the vanilla and almond extracts and set aside.
  • Roll out your pie crust until it is about 1-inch wider than your pie plate .
  • Place the pie crust into the pie plate and crimp the edges.
  • Gather your ingredients.
  • Melt the butter.
  • Stir the brown sugar, flour, vanilla extract, and cinnamon into the melted butter. Keep stirring until soft crumbs form.
  • Pour the cherry pie filling into the prepared crust.
  • Top with the crumb mixture, breaking up into pea sized balls as you sprinkle over the top.
  • Bake until the crumb topping is browned and the filling is bubbling, 50 to 60 minutes. Check on the pie while it cooks and if the top becomes too brown, cover with aluminum foil for the remaining cooking time.
  • Let cool for 15 minutes to allow the juices to gel together. Serve with vanilla ice cream or whipped cream. Enjoy!

4 ounces marzipan (about 1/3 cup)
3 tablespoons butter, softened
1/2 cup old fashioned oats
2 tablespoons flour
2 (21 ounce) cans cherry pie filling
1/4 teaspoon almond extract

Steps:

  • Heat oven to 375. Make pie crust as directed on box for one-crust baked shell using 9-inch glass pie pan. Bake 8 to 10 minutes or just until set, but not brown.
  • Meanwhile, in small bowl, place marzipan and butter; with pastry blender or fork, mix until well blended. Stir in oats and flour until crumbly. In large bowl, mix filling ingredients.
  • Remove partially baked shell from oven. Pour filling into shell. Crumble topping over filling.
  • Return to oven; bake 30 to 40 minutes longer or until topping is golden brown and filling is bubbly around edges. If necessary, after 15 minutes of baking, cover edge of crust with strips of foil to prevent excessive browning.

4 cups pitted canned or frozen tart red cherries
3/4 cup sugar
1 tablespoon butter
Pinch salt
1/4 cup cornstarch
1/3 cup cold water
1/4 teaspoon almond extract
1/4 teaspoon red food coloring, optional
Pastry for double-crust pie (9 inches)

Steps:

  • Drain cherries, reserving 2/3 cup juice in a saucepan; discard remaining juice. To the juice, add the cherries, sugar, butter and salt. In a small bowl, combine cornstarch and water until smooth; stir into cherry mixture. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat; stir in the almond extract and food coloring if desired. Cool. , Line a 9-in. pie plate with bottom pastry; add filling. Make a lattice crust. Trim, seal and flute edges. Bake at 375° for 45-50 minutes or until crust is golden and filling is bubbly. Cool on a wire rack.
