GLAZED ALMOND MINI CAKES

Glazed Almond Mini Cakes image

When my husband and I honeymooned in Austria, there were little pink rum cakes that caught my eye in every bakery we'd visit, they were so pretty! When I got back I created this version inspired by them, swapping out the traditional Rum soak for an almond soak!

Time 40m

Yield 16 two-in square cakes

Number Of Ingredients 23

2 cups (240 grams) all-purpose flour, plus more for the baking pan
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 cup (2 sticks/226 grams) unsalted butter, at room temperature, plus 1/4 cup melted
1 cup (400 grams) sugar
4 large eggs, at room temperature
1 tablespoon pure vanilla extract
1/2 teaspoon almond extract
3 tablespoons whole milk
3/4 cup (240 grams) seedless raspberry jam
1/3 cup (50 grams) unsalted blanched toasted almonds, finely chopped,
Syrup, recipe follows
Icing, recipe follows
Nonpareils or sprinkles, for decorating
1/2 cup (200 grams) sugar
1/2 cup (57 grams) water
1/4 teaspoon almond extract
2 cups (340 grams) white candy melts (or white chocolate chips)
2 pounds (900 grams) confectioner's sugar, sifted
1/2 cup (160 grams) light corn syrup
3/4 cup (170 grams) very hot water, plus more as needed (tip: use this from the bottom of the double boiler)
1 teaspoon pure vanilla extract
Oil based pink food coloring

Steps:

  • Set an oven rack in the middle position. Preheat the oven to 350 degrees F.
  • Grease the bottom of an 8-by-12 inch metal baking pan and line the bottom with parchment. Then grease and flour the bottom and sides of the pan. Set aside.
  • For the cake: sift together the flour and baking powder. Add the salt and stir to combine.
  • In the bowl of a stand mixer fitted with the paddle attachment, add 1 cup of butter and sugar and beat on medium-high speed until light and fluffy, 2 to 3 minutes. Using a rubber spatula, scrape the bottom and sides of the bowl, as needed. Add the eggs, 1 at a time, beating on medium speed and scraping down the sides of the bowl between additions. Add the vanilla and almond extracts and beat to combine. On low speed, mix in half of the flour mixture, then mix in the milk. Mix in remaining flour mixture until just combined. Transfer the batter to the prepared pan and bake until a tester comes out clean, 18 to 20 minutes. Transfer to a rack to cool slightly, then unmold and cool completely.
  • To make the cake filling, using a serrated knife, cut the cake into an 8x8-inch square. Set aside. Crumble the portion of the cake that was removed and reserve 2 1/2 cups. Add the remainder of the cake crumbs to a large mixing bowl along with the remaining 1/4 cup melted butter, jam and almonds. Mix well (your hands are the best tool here) to make a spreadable filling.
  • To assemble the cake, use a serrated knife to split the cake crosswise into 2 halves. Arrange both halves so they're facing cut-side up. Brush the cake with about 2/3 of the cooled almond syrup. With a small offset spatula, gently spread the jammy filling over the entire bottom half of the cake and top with the top half of the cake, cut side down. Press gently to adhere. Flip the cake so the flat bottom is now facing up, to create a flat top. Freeze the cake until firm, 1 hour.
  • With a serrated knife, cut off the rough sides on the frozen cake and cut into 16 squares. Set the cake on a cooling rack over a parchment-lined baking sheet.
  • Coat the cakes 1 at a time by pouring the icing around the edges and letting it drip down to coat the sides, then fill in the top. (Set the bowl over hot water and stir if it begins to thicken before you are done.) Top with sprinkles or non pareils before the icing begins to set.
  • Combine the sugar and water in a small saucepan over low heat and cook to dissolve the sugar, 2 to 3 minutes. Remove from the heat. Add the almond extract and stir to combine. Cool completely.
  • Melt the chocolate chips or candy melts in a double boiler and stir until smooth.
  • In the bowl of a stand mixer fitted with the whisk attachment, add the confectioner's sugar, corn syrup, hot water and vanilla. Mix on low speed until smooth. Add the melted chocolate and continue to mix to make a very smooth, pourable icing, about the consistency of molasses. Add food coloring as desired.

BA'S BEST CHOCOLATE MACAROON CAKE

BA's Best Chocolate Macaroon Cake image

A flourless, gluten-free, and grain-free chocolate cake reminiscent of chocolate-dipped macaroons with almonds, coconut, and ganache topping.

Yield 10 servings

Number Of Ingredients 19

Cake:
1 cup virgin coconut oil, melted, cooled, plus more for pan
1/4 cup unsweetened cocoa powder, plus more for pan
1 cup skin-on almonds
8 ounces semisweet or bittersweet chocolate, chopped
1 teaspoon kosher salt
1/2 cup unsweetened shredded coconut
6 large eggs, room temperature
1/2 cup granulated sugar
1/2 cup (packed) light brown sugar
2 teaspoons vanilla extract
Ganache and assembly:
4 ounces semisweet chocolate, chopped
1 tablespoon plus 1 teaspoon light agave nectar or pure maple syrup
Pinch of kosher salt
1/2 cup unsweetened coconut milk (from a very well shaken 13.5-ounce can)
2 tablespoons unsweetened coconut flakes
1 tablespoon sliced almonds
1 teaspoon granulated sugar

Steps:

  • Cake:
  • Place a rack in middle of oven and preheat to 350°F. Lightly brush a 10"-diameter cake pan with oil. Line the bottom with a round of parchment; brush parchment with oil. Dust sides of pan with cocoa powder; tap out excess. Toast almonds on a rimmed baking sheet until fragrant and slightly darkened, 8-10 minutes. Let cool. Reduce oven temperature to 325°F.
  • Meanwhile, heat chocolate and 1 cup oil in a medium heatproof bowl set over a saucepan of barely simmering water (don't let bowl touch the water), stirring often, until mixture is smooth. Remove from heat.
  • Pulse almonds, salt, and 1/4 cup cocoa in food processor until nuts are finely ground. Add shredded coconut and pulse a couple of times to combine.
  • Beat eggs on medium speed in the bowl of a stand mixer fitted with the whisk attachment until no longer streaky, about 20 seconds. Add both sugars and vanilla, increase speed to high, and beat until mixture is pale, thick, and starts to hold the marks of the whisk, about 2 minutes (it should fall off the whisk and immediately sink back into itself). Switch to the paddle attachment and with mixer on low speed, gradually add chocolate mixture. Beat to incorporate, then mix in almond mixture. Fold batter several times with a rubber spatula, making sure to scrape the bottom and sides. Scrape batter into prepared pan; smooth top.
  • Bake cake until firm to the touch and a tester inserted into the center comes out clean but greasy, 35-45 minutes. Transfer pan to a wire rack and let cake cool 15-20 minutes in pan (cake might fall slightly in the center; that's okay). Run a paring knife or small offset spatula around edges of cake; invert onto rack. Carefully peel away parchment; let cool completely.
  • Ganache and assembly:
  • Preheat oven to 350°F. Combine chocolate, 1 Tbsp. agave nectar, and salt in a medium bowl. Bring coconut milk to a simmer in a small saucepan over low; pour over chocolate mixture. Let sit until chocolate is melted, about 5 minutes.
  • Meanwhile, toss coconut flakes, almonds, sugar, and remaining 1 tsp. agave nectar on a parchment-lined rimmed baking sheet and toast until golden, about 4 minutes. Let almond-coconut mixture cool, then break into smaller clusters.
  • Using an electric mixer on medium speed, beat chocolate mixture until it has lost its sheen and is thick enough to hold very soft peaks, 6-8 minutes (ganache won't be quite as thick as frosting but close).
  • Working quickly before ganache starts to set, scrape on top of cake and spread to edges with a small offset spatula or knife. Top with almond-coconut clusters.
  • Do Ahead
  • Cake can be baked and cooled 1 day ahead. Store tightly covered at room temperature until ready to serve.

TOASTED ALMOND-COCONUT FINANCIERS

Toasted Almond-Coconut Financiers image

These simple, French-style cookie-cakes are usually baked in special rectangular molds to resemble little bars of gold. In her book "Paris Sweets" (Clarkson Potter, 2012), Dorie Greenspan makes the process easier by baking them in mini-muffin tins, and the method works beautifully. They bake up soft and chewy, into perfect two-bite-size treats. This recipe uses toasted almond flour, which deepens the flavor. A dip in melted bittersweet chocolate gives the financiers a polished look and balances out their sweetness. This recipe makes 12, but easily doubles for a crowd.

Time 40m

Yield 12 financiers

Number Of Ingredients 10

1/2 cup/113 grams unsalted butter, melted and slightly cooled, plus more for greasing the tin
1/2 cup/45 grams sweetened, shredded coconut
1/2 cup/55 grams almond flour
1/3 cup/67 grams granulated sugar
2 tablespoons all-purpose flour
Pinch of kosher salt
2 large egg whites
1/4 teaspoon almond extract
3 ounces/85 grams bittersweet chocolate, finely chopped
1 teaspoon neutral oil

Steps:

  • Heat the oven to 350 degrees. Grease a 12-cup mini-muffin tin.
  • On a rimmed baking sheet, spread out the coconut and almond flour, side by side. Toast until both are lightly browned, 8 to 10 minutes, stirring halfway through and keeping a close watch at the end. Transfer to a large bowl and let cool slightly.
  • Use your fingertips to grind the coconut with the almond flour to break it down into small pieces. Add the sugar, flour and salt, and whisk to combine.
  • Whisk in the egg whites and almond extract, then the melted butter.
  • Divide the batter evenly among the greased cups. (A small cookie scoop makes easy work of this task.) Tap the pan on the countertop to smooth the tops.
  • Bake until the cakes spring back when pressed gently in the center, 18 to 20 minutes. Pop them out of the tin, using a small offset spatula or knife to loosen the edges if needed, and let them cool completely on a wire rack.
  • Melt the chocolate and oil together in a small bowl in short, 10-second bursts in the microwave, stirring between each. (Alternatively, melt the chocolate and oil over a double boiler on the stove.)
  • Dip half of each financier in the chocolate and set on a rack until set, at least 30 minutes.
