2 cups rolled oats
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 cup fat free milk
1/2 cup honey
1/4 cup applesauce
1 egg
1 teaspoon pure almond extract
1 1/2 cups frozen mixed berries, divided
1/4 cup sliced almonds

Steps:

  • Preheat oven to 350°F. Stir together the oats, baking powder, cinnamon, nutmeg, and salt. Whisk together the milk, honey, applesauce, egg, and extract. Pour over the dry ingredients and mix together. Gently stir in 1 cup of the frozen berries. Pour into a greased 9x7 or 8x8 baking dish. Top with remaining berries and sliced almonds. Bake for 45 minutes. Let cool slightly to firm up. Cut into 8 or 9 squares, depending on the pan size. Serve warm with honey and milk. Store leftovers in a covered container in the refrigerator.

1/2 cup old-fashioned rolled oats
1/3 cup blueberries
1 teaspoon packed light brown sugar
1/4 teaspoon finely grated lemon zest
1/8 teaspoon pure vanilla extract
3 drops pure almond extract
Kosher salt
1 tablespoon toasted sliced almonds
2 teaspoons honey or agave nectar

Steps:

  • The night before, combine the milk, oats, blueberries, brown sugar, lemon zest, vanilla, almond extract and a pinch of salt in a glass pint jar or other container with a lid. Secure the lid and shake. Refrigerate at least 6 hours up to overnight. In the morning, top with the almonds and drizzle with honey.

1 large egg

1/3 cup skin-on sliced almonds
1/3 cup old-fashioned rolled oats
1/3 cup light brown sugar
2 tablespoons unsalted butter, melted
1 tablespoon whole-wheat pastry flour or unbleached all-purpose flour
1/8 teaspoon ground cinnamon
Kosher salt
12 ounces frozen mixed berries, thawed (2 1/2 cups frozen; 1 1/2 cups thawed)
Two-percent Greek yogurt or low-fat milk, for serving, optional

Steps:

  • Preheat the oven to 350 degrees F. Grease a 2-quart baking dish or 8-inch square baking pan with the butter.
  • For the oatmeal: Stir together the oats, sugar and 1/8 teaspoon salt in a large bowl. Whisk together the almond milk, egg, vanilla and almond extract in a medium bowl. Pour the milk mixture into the oat mixture and stir well to combine.
  • For the topping: Stir together the almonds, oats, sugar, butter, flour, cinnamon and 1/8 teaspoon salt in a medium bowl until evenly combined.
  • To assemble: Pour the oatmeal into the prepared baking dish. Arrange the berries (including any juices) over the oatmeal. Sprinkle with the topping. Bake until lightly browned and just set, about 50 minutes. Let cool on a rack for 10 to 15 minutes. Serve warm with a dollop of yogurt or a splash of milk if using.

Steps:

  • Preheat oven to 375°F (190°C).
  • In a bowl, whisk wet ingredients until combined.
  • In a separate bowl, combine dry ingredients.

2 cups milk (or substitute coconut or almond milk)
2 large eggs

Steps:
