Moist, fall spiced muffins with a streusel crumble topping.

1/2 cup all purpose flour
1/2 cup light brown sugar (packed)
1/2 teaspoon ground allspice (see note)
5 tablespoons cold unsalted butter (cut into small pieces)
2 cups all purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon ground allspice (see note)
1/4 teaspoon salt
1/4 cup light brown sugar (packed)
8 tablespoons unsalted butter (melted and cooled)
2 large eggs
3/4 cup whole milk
1/4 teaspoon vanilla extract
zest of 1 lemon (optional)

Steps:

  • Center a rack in the oven and preheat to 375 degrees F.
  • Line a 12-cup muffin tin with paper liners or spray with cooking spray. Place the muffin pan on a baking sheet.

There are muffins that aspire to be healthful, filled with the likes of whole grains, wheat germ and fruit purée. Then there are rich, chocolate-chip laden muffins that are more like cupcakes in disguise. These muffins fall squarely into that last camp. But they are as tender and buttery as any crumb cake. And like a crumb cake, their nubby, cinnamon-scented crumb topping makes them feel more appropriate for brunch than dessert. This is breakfast food at its most elegant and delicious.

255 grams all-purpose flour (about 1 1/2 cups)
75 grams granulated sugar (about 1/3 cup)
105 grams dark brown sugar, lightly packed (about 1/2 cup)
6 grams ground cinnamon (about 1 1/2 teaspoons)
1 gram ground allspice (about 1/4 teaspoon)
1 gram fine sea salt (about 1/4 teaspoon)
170 grams unsalted butter, melted (12 tablespoons; 1 1/2 sticks)
170 grams unsalted butter, at room temperature (12 tablespoons; 1 1/2 sticks)
200 grams granulated sugar (about 1 cup)
3 large eggs, at room temperature
1 cup sour cream
1 1/2 teaspoons vanilla extract
Finely grated zest of 1 lemon
325 grams all-purpose flour (about 2 1/2 cups)
10 grams baking powder (about 2 teaspoons)
3 grams baking soda (about 1/2 teaspoon)
3 grams fine sea salt (about 1/2 teaspoon)
1/2 pint fresh blackberries (or use raspberries, blueberries or diced strawberries)

Steps:

  • Heat oven to 350. Grease or line 24 muffin cups.
  • Make the crumb topping: whisk together flour, sugars, spices and salt in a medium-sized bowl. Pour in melted butter and stir until crumbs form.
  • Prepare the cake: using an electric mixer fitted with the paddle, cream butter and sugar until light and fluffy, about 5 minutes. Add eggs 1 at a time, then scrape down sides of mixer. Mix in sour cream, vanilla and zest.
  • In a separate bowl, mix together flour, baking powder, baking soda and salt. With mixer on low speed, add flour mixture to batter and beat until just mixed. Fold in berries with a spatula and make sure batter is completely mixed.
  • Spoon batter into prepared muffin pans, filling each cup only halfway. Pinch large crumbs from topping mixture and scatter evenly on top of the batter.
  • Bake for 25 to 30 minutes, until muffins are golden and their centers spring back when very gently pressed with a finger. (A cake tester will come out with crumbs attached, but it shouldn't be wet.) Transfer muffins to a wire rack. Serve warm or let cool completely and freeze.

2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon ground allspice
1/4 teaspoon salt
1/4 teaspoon packed light brown sugar
8 tablespoons unsalted butter, melted and cooled
2 large eggs
3/4 cup whole milk
1/4 teaspoon pure vanilla extract
1 lemon, zest of (optional)

Steps:

  • Center a rack in the oven; preheat oven to 375°.
  • Butter or spray the 12 molds in a regular-size muffin pan or fit the molds with paper muffins cups.
  • Alternatively, may use a silicone muffin pan, which needs neither greasing nor paper cups.
  • Place the muffin pan on a baking sheet.
  • Streusel-add flour, brown sugar, and allspice to a bowl; sift them through our fingers to blend.
  • Add the bits of cold butter and toss to coat, then use your fingers to work the butter into the dry ingredients until you've got irregularly shaped crumbs.
  • Set aside in the refrigerator for the moment (you can make the crumbs up to 3 days ahead and keep them covered in the refrigerator).
  • Muffins-in a bowl, whisk together the flour, sugar, baking powder, allspice, and salt.
  • Stir in the brown sugar, making certain there are no lumps.
  • In a large glass measuring cup or another bowl, whisk the melted butter, eggs, milk, and vanilla together until well combined.
  • Pour the liquid ingredients over the dry ingredients and, with the whisk or rubber spatula, gently but quickly stir to blend.
  • Don't worry about being thorough--the batter will be lumpy, and that is just as it should be.
  • Stir in the lemon zest, if using.
  • Divide the batter evenly among the muffin cups.
  • Sprinkle some streusel over each muffin, then use your fingertips to gently press the crumbs into the batter.
  • Bake for about 20 minutes, or until the tops are golden and a thin knife inserted into the center of the muffins comes out clean.
  • Transfer the pan to a rack and cool for about 5 minutes before carefully removing each muffin from its mold.

Somewhere between muffins and mini-crumb cakes, these tender breakfast treats have a surprise layer of crunchy, cinnamon-scented crumbs hiding underneath. Browning the butter for the crumbs adds a rich, caramelized depth that rounds out the flavors of vanilla and lemon zest in the batter. These muffins keep well for several days stored airtight at room temperature, and freeze perfectly for up to two months.

1/2 cup/115 grams unsalted butter (1 stick)
1 1/3 cups/165 grams all-purpose flour
1/2 cup/110 grams dark brown sugar, packed
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground allspice or cardamom
1/4 teaspoon fine sea salt
3/4 cup/180 milliliters sour cream
2 large eggs
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon finely grated lemon zest
1 1/2 cups/190 grams all-purpose flour
2/3 cup/135 grams granulated sugar
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon fine sea salt
1/2 cup/115 grams unsalted butter (1 stick), cut into 1-inch slices and softened

Steps:

  • Heat oven to 375 degrees and line a 12-cup muffin tin with liners.
  • Make the topping: In a medium saucepan over medium-high heat, melt butter, then let it simmer until the foam on top falls to the bottom of the pot and turns brown, 4 to 6 minutes. It will smell nutty when it's ready. Immediately pour butter into a small bowl to keep it from getting any browner, and let cool for 5 minutes.
  • Whisk together flour, sugar, spices and salt in a medium bowl. Pour in the brown butter and stir, pinching the mixture together, until crumbs form. Set aside.
  • Make the batter: Whisk together sour cream, eggs, vanilla, almond extract and lemon zest in a mixing bowl.
  • In a large bowl, using a stand mixer fitted with the paddle attachment or a handheld electric mixer, mix together flour, sugar, baking soda, baking powder and salt until combined, about 10 seconds. Add softened butter and beat for 20 seconds to work it into the flour. Add egg mixture and continue beating until the batter is very smooth, about 1 minute.
  • Sprinkle a scant tablespoon of the topping crumbs into the bottom of each muffin liner. Spoon the batter on top of the crumbs, dividing it evenly.
  • Bake muffins for 5 minutes to firm up the tops so the crumbs don't sink into the batter. Remove muffin pan from the oven and lower heat to 350 degrees. Sprinkle the remaining crumbs on top of each muffin. Continue to bake until the muffins are springy to the touch and a toothpick inserted into the center comes out clean, 25 to 30 minutes longer. Cool on a rack for 15 minutes. Use an offset spatula or butter knife to lift the muffins out of the pan. Finish cooling muffins on a rack.
