1 lb granulated sugar
6 cups water
1 1/4 ounces lime juice concentrate
8 1/2 ounces lemonade concentrate
3/4 cup creme de menthe (syrup available at liquor stores. Do not confuse it with creme de menthe liqueur)
mint leaf
lime slice
maraschino cherry

Steps:

  • Combine the sugar and water in a 3 quart saucepan. Stir the contents until the sugar is dissolved.
  • Stir in lime and lemonade concentrate next. Continue stirring and bring to boil just below the boiling point (210 degrees.) DO NOT BOIL!
  • Remove pan from heat and chill. Once chilled, add a ratio of 1 part syrup to 5 parts chilled water.
  • Transfer beverage to pitcher and enjoy!
  • Garnish each serving with mint leaves, lime slice and a maraschino cherry.

¼ cup water
¼ cup white sugar
1 tablespoon chopped fresh mint leaves
2 cups crushed ice
½ cup prepared lemonade
Fresh mint sprigs, for garnish

Steps:

  • In a small saucepan, combine the water, sugar and 1 tablespoon of chopped mint. Stir and bring to a boil. Cook until sugar has dissolved, then remove from heat and set aside to cool. After about an hour, strain out mint leaves.
  • Fill 2 cups or frozen goblets with crushed ice. Pour 1/2 of the lemonade into each glass and top with a splash of the sugar syrup. Garnish each with a mint sprig and a straw. Serve on a silver platter.

3/4 cup lemon juice
6 mint sprigs
5 cups ice cubes
2-1/2 cups ginger ale, chilled
Lemon slices and additional mint, optional

Steps:

  • In a large bowl, combine the water, sugar, lemon juice and mint. Let stand for at least 45 minutes. , Strain and discard mint. Place ice cubes in two 2-qt. pitchers; add half of the lemon mixture and ginger ale to each. Garnish with lemon and mint if desired.

6 stalks lemongrass
2 cups sugar
one 1-inch slice fresh ginger
2 sprigs of fresh mint, plus more for garnish
ice
3/4 ounce lemongrass-ginger simple syrup
cold club soda
lime

Steps:

  • Lemongrass-Ginger Simple Syrup:.
  • Trim the lemongrass stalks so you have the bases only. Bash with the back of a knife (or a meat mallet) so the oils and aroma release more easily.
  • Combine the lemongrass, sugar, 2 cups cold water and ginger together in a medium saucepan and set over medium heat. Simmer until the sugar dissolves. Reduce the heat and allow to sit so the lemongrass and ginger steeps in the syrup. Once the syrup is fragrant, 30 to 40 minutes, strain and use. Yield: 2 cups.
  • Add the mint and ice to a cocktail shaker and muddle. Add the Lemongrass-Ginger Simple Syrup and shake vigorously to combine. Serve on the rocks in a Collins glass. Top with club soda, a squeeze of lime juice and garnish with a sprig of mint.
