Steps:
- Preheat oven to 325 degrees. Clean and cut carrots into large pieces. Cook carrots in boiling water until soft. Drain well and mash. Saute onion over medium-high heat in the 1 tablespoon of butter/margarine until very soft. In a large bowl, combine carrots, onions, ½ cup butter/margarine, egg, salt, pepper and garlic. Mix well. Spray an 8 by 8 inch Pyrex dish with nonstick cooking spray. Place carrot mixture in dish and top with crackers and cheese. Bake for 20 to 20 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
- Bring a pot of water to a boil. Add carrots and cook until tender but still firm, about 8 minutes; drain.
- Melt 3 tablespoons butter in a medium saucepan. Saute onions and stir in soup, salt, pepper and cheese. Stir in cooked carrots. Transfer mixture to prepared dish.
- Toss croutons with 1/3 cup melted butter; scatter over casserole.
- Bake in preheated oven for 20 to 30 minutes, or until heated through.

- In a large bowl, combine the first six ingredients; place in a greased 1-1/2-qt. baking dish. Combine brown sugar and flour; cut in butter until crumbly. Stir in nuts and coconut. Sprinkle over carrot mixture. , Bake, uncovered, at 350° for 30 minutes or until a thermometer reads 160°.

- Mix melted butter, brown sugar, cinnamon and salt in a small bowl. Stir in hot water. If microwaving use 1/4 cup hot water.
- Place carrots in baking dish and pour butter mixture over carrots. Stir to coat.
- Spray or grease a 1 1/2 quart baking dish. BAKE 50 to 60 minutes in a 350 degree oven until tender or MICROWAVE for approximately 15 minutes. (Tenderness will depend on size of sliced carrots.).
- Serve hot or cold.

- Boil enough water to cover carrots.
- Pre-heat oven to 350°F.
- Peel and slice carrots into bite sized pieces.
- Boil carrots for 10 minutes. Drain.
- Place carrots in 9 x 13 casserole dish.
- Sprinkle brown sugar over carrots.
- Melt butter and Velveeta. Pour over carrots.
- Crumble Ritz crackers over casserole.
- Bake for 30-35 minutes.
