AIR FRYER BREAKFAST FRITTATA
This tasty air fryer breakfast frittata is quick, easy to make, and perfect for a healthy protein-packed start to the day!

Steps:
- Beat the eggs and milk together in a jug.
- Add all of the other ingredients (except the oil) and mix.
- Preheat the air fryer to 180°c (350F) and line a 20cm round springform tin with baking paper. Lightly oil the sides of the tin to prevent the frittata from sticking.
- Pour the egg mixture into the tin and place in the air fryer. Cook for 16 minutes, but start checking to see if it's done after 12 minutes, as all air fryer models vary.
- Allow to cool for 5 minutes before running a knife around the edge of the tin to loosen it. Release the frittata from the springform tin and cut it into slices.

- Preheat an air fryer to 400 degrees F (200 degrees C). Spray a 4 1/2-inch ramekin with nonstick spray.
- Whisk eggs and cream together in a bowl. Stir in spinach, mushrooms, Cheddar cheese, salt, and pepper until well combined. Pour into the prepared ramekin and cover tightly with foil.
- Air-fry for 12 minutes. Remove foil and air-fry until top starts to brown and a toothpick inserted into the center comes out clean, 4 to 8 more minutes.

AIR FRYER SPINACH, PEPPER AND HAVARTI FRITTATA
You may not have thought to make a frittata in your air fryer, but you can! You'll get a gorgeous brown crust with a creamy interior-and clever use of a cake pan makes it a cinch to unmold. We used Havarti for its mild flavor and superior melting qualities, but substitute another good melting cheese such as Cheddar, jack or fontina if you like. Serve the frittata warm or at room temperature.

- Spray an 8-inch round nonstick cake pan with cooking spray. Whisk the eggs in a large bowl with 1 teaspoon salt and several grinds of pepper. Add the spinach, pepper, scallions, basil and parsley and stir to combine. Fold in the Havarti and Parmesan.
- Preheat a 3.5-quart air fryer to 310 degrees F. Pour the mixture into the prepared cake pan and place in the basket. Cook until the frittata is slightly puffed, deep golden and a tester inserted in the center comes out clean, about 25 minutes.
- Let the frittata cool in the pan for 10 minutes before unmolding. To unmold, invert onto a plate, then invert again, browned-side up, onto a serving plate.
AIR FRYER FRITTATA
This frittata is ready in less than 20 minutes. Take a little bit of leftover breakfast sausage, a few chopped veggies, some shredded cheese, and some eggs, and create a hot breakfast! Make it a meal with some whole wheat toast and juice, or just wrap it up in a napkin and eat as you run! If there is any left, it reheats well.

- Preheat a 5.8-quart or larger air fryer to 350 degrees F (175 degrees C) according to manufacturer's instructions.
- Spray cooking spray on the bottom and sides of a small metal container, designed to be an inner pot, about 6 inches round and 4 inches high.
- Add butter for flavor, insert inner pot into the air fryer, and melt butter for 45 seconds. Add bell pepper and onion and fry for 2 minutes.
- Carefully remove the inner pot and stir in sausage crumbles. Sprinkle with Colby Jack cheese and set aside.
- Crack eggs into a bowl and stir until yolks and whites are well combined. Season with salt, pepper, and hot sauce; stir to combine. Pour egg mixture over the other ingredients in the inner pot and lightly mix everything together.

- Preheat the oven to 350 degrees F (175 degrees C).
- Melt butter in a skillet over medium heat. Add garlic and cook until soft and fragrant, 1 to 2 minutes. Fill the skillet with spinach and saute until wilted, 1 to 2 minutes. - Preheat the oven to 400 degrees F (200 degrees C).
- Melt butter in a 10-inch, oven-proof skillet over medium heat. Add onions and cook until they start to turn translucent, about 2 minutes. Stir in potatoes and spinach, and remove from heat. Sprinkle with feta cheese.

- Preheat broiler and place heating rack 4-5" from the heating element. Microwave fresh spinach in a loosely covered bowl on high for about 3 minutes or until it is slightly wilted. Dry spinach thouroughly with paper towels and chop it coarsely.
- Meanwhile, coat bottom and sides of a 12" ovenproof skillet with cooking spray. Heat 1 Tbs. oil in the skillet on med-high and add onion. Cook until lightly browned.
- In a large bowl, beat eggs thoroughly. Stir in tomatoes, spinach, cheese, Italian seasoning, salt & pepper.
- Add remaining 2 teaspoons oil to the skillet with onion and tilt pan to distribute oil evenly. Pour egg mixture in, evenly distributing vegetables with the back of a wooden spoon. Cook over medium heat without stirring for about 7 minutes or until only te surface is loose.
- Place skillet under broiler and cook for approximately 2 minutes or until surface is lightly browned. To serve, loosen edges with a knife, flip it onto a cutting board and slice.

- Preheat oven to 350F degrees.
- Cook onion in olive oil until opaque in a medium skillet.
- Add mushrooms and cook for about 1 minute.
- Add the spinach and cook until warmed through.
- Grease a 9" casserole dish with cooking spray.
