- Score your pork roast with similar sized square slits. Spray with extra virgin olive oil. Season your pork with salt and pepper and your other seasonings.
- Place the rod through the pork shoulder so that it has come through both ends.
- Secure the clamps on each side.
- Place in the air fryer oven and make sure its secure. Set the time to 1 hour and the temperature to 180c/360f.
- When the air fryer beeps, remove from the air fryer to rest.
- After it has rested for about 5 minutes remove the clamps and rod and allow to rest for 5 minutes before slicing.

- Dry your pork with paper towel, score the skin. Then rub table salt over the skin, cover with a tea towel and place in the fridge over night.
- Remove the pork from the fridge to bring up to room tempeture before cooking.
- Cover the pork, including underneath with olive oil. Rub sea salt over the skin making sure it goes into the score marks also. Add some more oil over the top of the skin and a rub another light amount of seat salt over the top.
- Pre heat your air fryer for 2 minutes at 200°C.
- Spray the air fryer basket with non-stick cooking spay and place the pork in the basket.
- Cook at 200°C for 20 minutes on the roast setting, then reduce heat to 180°C and cook for 25 minutes per 500gms
- When the pork reaches 68°C remove from the air fryer to rest. Your pork will cook further while resting. Once it reaches 71°C you can carve and serve.

- Score the skin with a sharp knife. Most butchers will do this for you.
- Rub the skin with olive oil and salt.
- Preheat the air fryer to 200°C (390°F).
- Place the pork into the air fryer skin side up.
- Cook for 30 minutes.
- Turn the air fryer down to 180°C (350°F) and cook for 40 minutes.
- Depending on the weight of the pork, you may need to cook it for longer. Add roughly 30 minutes for every extra 500g (1.1 lb). The internal temperature of the pork should be at least 65°C (150°F).

- Mix garlic, oil, vinegar, sazon, adobo, pepper, and oregano together to form a paste.
- Cut a wide pocket at the large end of the roast to separate skin from the fat, leaving skin attached at the sides and stopping before roast narrows to bone. Make 1-inch deep slits under the skin and on all meaty sides, twisting the knife to widen the openings.
- Stuff the garlic paste into the slits and rub all over the meat. Transfer to a large zip-top bag or ceramic or glass bowl, cover, and let marinate in the refrigerator for at least 2 hours or up to 8 hours.

- Coat the roast with olive oil and add the seasoning rub. Massage it well onto the entire roast.

- Preheat air fryer to 390°F (200°C).
- Mix sea salt, rosemary and oil on a plate.
- Pat the beef roast dry with paper towels. Place beef roast on plate and turn so that the oil-herb mix coats the outside of the beef.
- If using, peel onion and cut it in half, place onion halves in the air fryer basket.
- Place beef roast in the air fryer basket.
- Set to air fry beef for 5 minutes.
- When the time is up, change the temperature to 360°F (180°C). Flip the beef roast over half way through the cooking time if required by your air fryer [Note 1].
- Set the beef to cook for an additional 30 minutes. This should give you medium-rare beef. Though is best to monitor the temperature with a meat thermometer to ensure that it is cooked to your liking. Check it early, and cook for additional 5 minute intervals if you prefer it more well done.
- Remove roast beef from air fryer, cover with kitchen foil and leave to rest for at least ten minutes before serving. This allows the meat to finish cooking and the juices to reabsorb into the meat.
- Carve the roast beef thinly against the grain and serve with roasted or steamed vegetables, wholegrain mustard, and gravy.

- Remove your roast from the packaging and any netting and pat dry with paper towel. With a small sharp knife, score the rind at 1cm intervals, being careful to not cut into the meat. Alternatively, get your butcher to score your rind for you.
- If time allows, leave the meat uncovered in the fridge overnight (but even just 1 hour will help dry the rind & assist in the crackling process).
- When ready to roast, rub the pork all over with olive oil. Next add a generous amount of salt to the rind, being sure to rub into the scores.
- Place the roast into the air fryer basket with the rind up and cook on 200c / 400F for 20 minutes, then 180c / 350F until cooked through (approx. 25 minutes for every 500g / 1lbs).

- Remove the pork loin roast from the refrigerator 25 minutes prior to cooking. Give it a quick rinse under cold water and pat dry with paper towels. With a sharp knife, trim off any sliver skin from the underside. Trim the tough skin, if still on the pork, leaving approximately 1/4 inch of fat cap. Score the fat lightly in a 1 inch diagonal or checkered pattern.
- In a small bowl, mix together the olive oil, garlic, salt, pepper, thyme, and sage. Coat the loin all over with the oil and seasoning mixture. Place the pork on a wire rack and set aside for the 25 minutes.
- Preheat your air fryer to 360°F.
- Place the roast in the air fryer basket or on the rack, fat side up. Set the timer for 60 minutes. Cook for 45 minutes and check the internal temperature with a digital meat thermometer. You are looking for 145 to 150°F. Continue cooking, checking every 5 to 10 minutes, until the desired temperature is achieved.
- Remove the roast to a clean cutting board and tent with foil. Allow the meat to rest for at least 10 minutes before slicing.
- Slice the roast against the grain into 1/4 inch thick portions. Place these on a platter and spoon some of the pan drippings over the top, if desired. Serve with recommended side dishes and beverages.
