Salmon with Smokehouse pepper, pesto smear, and a Parmesan crust. Serve with fresh-cooked green beans, asparagus, red wine, garlic bread, and Greek salad.

1 ½ pounds salmon fillets with skin on
1 teaspoon kosher salt
1 teaspoon ground smoked black pepper (such as McCormick® Smokehouse)
2 tablespoons pesto in olive oil
2 tablespoons grated Parmesan cheese
2 tablespoons butter, melted
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pull out any salmon bones with pliers. Slice salmon into 5 equal portions. Place salmon skin side-down on a sheet of aluminum foil. Transfer to a large baking pan. Season salmon with salt and pepper; loosely cover with foil.
  • Bake in the preheated oven for 10 minutes.
  • Remove baking pan from oven and uncover. Smear pesto over each portion of salmon. Sprinkle with Parmesan cheese. Continue baking, uncovered, until cheese is melted, about 10 minutes.
  • Whisk butter and lemon juice together in a small bowl. Drizzle over salmon.

You will love these parmesan pesto crusted salmon fillets. This is a simple air fryer salmon recipe. You will definitely enjoy this parmesan crusted salmon that is a super quick salmon dinner. This Italian salmon recipe is the easy way to cook salmon fillet.

4 Oz. salmon fillets
1/2 Tsp. sea salt
1/2 Tsp. garlic powder
1 Cup Parmesan (Shredded )
6 Cloves garlic (whole)
2 Tbsp. canola oil (for roasting garlic)
1 1/2 Cup basil (fresh)
3 Tbsp. pine nuts
1/3 Cup Parmesan (grated )
1 Tsp. sea salt
1 Tsp. black pepper (ground )
1/3 Cup olive oil ( extra virgin )
2 Tsp. truffle oil (black, or black truffle flavored olive oil)
1 lemon (juiced )

Steps:

  • Preheat a cast iron skillet over medium high heat on the stove.
  • Roast the garlic. Add 2 Tbsp. of canola oil to the skillet. Then, add garlic cloves and cook for 5 minutes. Be sure to gently shake the skillet often to toss the cloves so they evenly roast. Remove from heat.
  • Prepare pesto. Combine all ingredients except the olive oil, truffle oil, and lemon in a food processor. Pulse for 15 seconds. Add the olive oil, truffle oil, and lemon juice and pulse for 15 seconds. Add contents into a mason jar and refrigerate. This recipe will make 8 oz of pesto. *For this step, it is ok to include the stems of the basil as they provide a lot of flavor! I will also place whole roasted garlic cloves into the food processor without cutting them because they will be softened and easily broken up.
  • Preheat the air fryer to 390 degrees F for 5 minutes
  • Lightly spray the air fryer with non-stick cooking spray. Evenly season the salmon fillets with sea salt and garlic powder. Set fillets into the air fryer. Cook for 12 minutes.
  • Spread 1 tbsp of pesto atop each of the salmon fillets and sprinkle with shredded Parmesan cheese. Place back into the air fryer and cook for 3 minutes.
  • Remove from heat and serve with fresh veggies and rice.

Salmon fillets cook beautifully in an air fryer and make a delicious meal when coated in a herb seasoning and served with greens and grains

1 tsp salt
1 tsp pepper
1 tsp mixed herbs
1 tsp garlic granules (optional)
4 salmon fillets (we used 4 x 130g fillets), skin on or removed
½ tbsp olive oil
cooked seasonal greens and grains such as quinoa or brown rice, to serve (optional)

Steps:

  • Combine the salt, pepper, mixed herbs and garlic granules, if using, in a bowl, then scatter onto a plate. Rub each salmon fillet with a little olive oil and roll in the seasoning to coat.
  • Put in the air fryer basket in one layer and cook at 180C for 8-10 mins, until cooked through. If you have larger salmon fillets they will need to be cooked for longer - keep checking after 10 mins and cook in 1-2 min blasts, until ready. Serve with greens and quinoa or rice, if you like.
