Air Fryer Okra

I love the taste of deep-fried okra. Sometimes though, I want to limit my carbs, so I make okra "fries". They give me the flavor of fried okra, but with far fewer calories, and much less fat. Okra "fries" are a tasty snack and they can be an interesting veggie side for dinner. I love to munch them, plain, as a snack. Serve with dipping sauce of your choice.

1 pound fresh okra, about 3-inches long
1 ½ teaspoons extra-virgin olive oil
½ teaspoon seasoned salt, or to taste

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Wash and dry okra, trim stems and tips, and slice in half, lengthwise. Place in a bowl and toss with olive oil and seasoned salt.
  • Put okra slices, cut-sides down, in the basket of an air fryer, in batches if necessary, and cook until crispy, 12 to 15 minutes.

1 large egg
½ pound okra pods, cut into 1/2-inch slices
1 cup cornmeal
¼ cup all-purpose flour
cooking spray
salt to taste

Steps:

  • Place egg in a shallow dish and beat; gently stir in sliced okra.
  • Combine cornmeal and flour in a gallon-size resealable plastic bag. Drop 5 slices of okra in the cornmeal mixture, zip the bag, and shake. Remove breaded okra to a plate. Repeat with remaining okra slices.
  • Preheat air fryer to 400 degrees F (200 degrees C). Place 1/2 the breaded okra slices in the basket of the air fryer and spray with cooking spray. Cook 4 minutes. Shake the basket and mist okra with cooking spray again. Cook an additional 4 minutes. Shake the basket one last time and cook for 2 minutes. Remove the okra from the basket and salt to taste.
  • Repeat with remaining okra slices.

1 c Panko breadcrumbs
1 tsp salt
1/4 tsp pepper
1 egg

Steps:

  • Whisk egg in a shallow bowl, in another bowl combine breadcrumbs, salt and pepper together.
  • Dip cut okra pieces into egg, then cover in breadcrumbs so it is coated well.
  • Preheat air fryer to 360 degrees for 5 minutes. Put coated okra into air fryer basket in one layer so they're not overlapping.
  • Set time to 9 minutes. Open and check, if you want them crispier set for a few more minutes.

1/2 pound fresh okra, rinsed, dried, and sliced into 1/2-inch pieces
1 large egg, beaten
Oil for spraying

Steps:

  • Preheat the air fryer to 400 degrees Fahrenheit.
  • Stir the cornmeal, flour, and salt until combined. Pour mixture into a 1-gallon resealable plastic bag.
  • Dip the okra pieces in beaten egg and place them in the bag. Seal the bag and shake until evenly coated.
  • Place the okra pieces in the air fryer basket in a single layer, making sure they don't overlap. Spritz the okra with oil.
  • Air fry the okra for 5 minutes. Shake the basket and cook for another 5 minutes, or until golden and crispy. Repeat this step until all okra pieces are cooked.

10-15 okra (chunky dice)
1 cup Hooter's Wing Breading ((or regular flour) )
2 eggs (beaten)
2 tbsp water
1 cup sweet & spicy panko breadcrumbs ((or plain panko) )
1/2 bag frozen breaded okra

Steps:

  • Cut stem end off okra and dice remainder into thick chunks approx 1 inch each
  • In a medium bowl, beat egg and whisk in water
  • Set up three breading trays with Hooters breading, egg/water and panko bread crumbs
  • Toss cut okra into flour mixture - then egg - then panko
  • Add in a single layer in air fryer tray
  • For best results, spray diced chunks with oil to get golden brown color when done
  • Air fry okra at 400º for 12 minutes cooking time
  • Open air fryer at halfway mark, shake to toss and spray with oil
  • Add 1/2 bag of frozen okra to air fryer
  • Air Fry at 400 for 6 minutes
  • Open air fryer, shake okra and spritz with olive oil spray

1 pound okra, washed, dried and cut in half lengthwise
2 tablespoons avocado oil
3/4 teaspoon Kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon turmeric
1/4 teaspoon chili powder
2-3 tablespoons arrowroot powder (*see note for substitutions)

Steps:

  • Place washed, dried and halved okra in a large bowl.
  • Drizzle avocado oil over the okra and toss to combine.
  • Add the salt, spices and arrowroot powder to the bowl and stir until combined. All pieces of okra should be evenly coated with the mixture.
  • Place the seasoned okra onto the trays (or in the basket) of an air fryer in a single layer.
  • Air fry at 400°F for 20 minutes, rotating trays or shaking basket halfway through cooking time.
  • Remove once the okra is crispy and golden brown around edges.
  • Garnish with fresh parsley if desired and serve as a side dish or as "fries" with your favorite dipping sauce.
