For the donuts
Cooking spray
1/2 c. milk
1/4 c. plus 1 tsp. granulated sugar, divided
1 (0.25-oz.) packet or 2 1/4 tsp. active-dry yeast
2 c. all-purpose flour
1/2 tsp. kosher salt
4 tbsp. butter, melted
1 large egg
1 tsp. pure vanilla extract
For the vanilla glaze
1 c. powdered sugar
2 oz. milk
1/2 tsp. pure vanilla extract
For the chocolate glaze
3/4 c. powdered sugar
1/4 c. unsweetened cocoa powder
3 tbsp. milk
For the cinnamon sugar
1/2 c. granulated sugar
2 tbsp. ground cinnamon
2 tbsp. melted butter

Steps:

  • Grease a large bowl with cooking spray. In a small, microwave-safe bowl or glass measuring cup, add milk. Microwave until lukewarm, 40 seconds. Add a teaspoon of sugar and stir to dissolve, then sprinkle over yeast and let sit until frothy, about 8 minutes.
  • In a medium bowl, whisk together flour and salt. In a large bowl, whisk together remaining ¼ cup sugar, butter, egg, and vanilla. Pour in yeast mixture, mix to combine, then add in dry ingredients, stirring with a wooden spoon until a shaggy dough forms.
  • Transfer to a lightly floured surface and knead until elastic and only slightly tacky, adding more flour a teaspoon at a time if needed, about 5 minutes. Form into a ball then place dough in oiled bowl and cover with a clean dish towel. Let dough rise in a warm spot until doubled in size, about 1 hour.
  • Line a large baking sheet with parchment paper and lightly grease with cooking spray. Punch down dough, then turn onto a lightly floured work surface and roll out into a ½" thick rectangle.
  • Using a doughnut cutter or 3" and 1" biscuit cutters, punch out your doughnuts. Knead any scraps together and punch out more doughnuts or holes. Place doughnuts and holes onto baking sheets, cover with dish towel, and let rise again, 40 minutes to 1 hour more.
  • Grease basket of air fryer with cooking spray and add 2 doughnuts and 2 doughnut holes at a time, making sure doughnuts don't touch. Cook at 375° for 6 minutes, until deeply golden. Place on cooling rack and repeat with remaining dough.
  • Dip doughnuts in glaze (see below) or follow instructions for cinnamon sugar. Return to cooling rack and let set for 5 minutes before serving.
  • In a medium bowl whisk together powdered sugar, milk, and vanilla until smooth.

1 teaspoon ground cinnamon
4 Tablespoons butter, melted (OPTIONAL)
1/2 cup milk, warmed to 100-110 degrees F
2 Tablespoons granulated sugar
1 packet (2 1/4 teaspoons active dry yeast
3 Tablespoons butter, melted
1 egg
1 teaspoon vanilla extract
2 cups all purpose flour
1 teaspoon ground cinnamon

Steps:

  • For the doughnut holes:Combine the milk, sugar, and yeast in a large bowl. Allow the mixture to sit for 5 minutes, or until the yeast becomes foamy on top. Add the melted butter, egg, and vanilla. Whisk to combine. Add the flour and cinnamon and stir until the shaggy dough forms Transfer the dough to a lightly floured surface and knead gently until a smooth dough forms--about 2-3 minutes. Place the dough in a lightly oiled bowl and set it in a warm spot to rise until doubled in size--about 2 hours. Once the dough has risen, place it on a lightly floured surface (don't punch it down) and cut it into 20 small pieces. Shape the dough into balls and place them on a baking sheet to rise for another 45 minutes. Once the dough has risen slightly, place a few doughnut holes in the air fryer and cook at 375Ffor 6-8 minutes, or until they're golden brown on the outside. Repeat with the remaining doughnut holes For the Cinnamon Sugar: Combine the sugar and cinnamon in a large bowl. If you like a thin coating of cinnamon sugar, roll the hot doughnuts in the cinnamon sugar immediately when they come out of the air fryer. If you like a thick coating of cinnamon sugar, roll the doughnut holes in melted butter before adding them to the cinnamon sugar.

2 tablespoons white sugar
1 teaspoon baking powder
¼ teaspoon salt
4 tablespoons cold unsalted butter, cut into small pieces
¼ cup whole milk, or more as needed
1 ½ teaspoons vanilla extract
cooking spray
5 tablespoons confectioners' sugar
1 tablespoon fresh lemon juice

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl. Add butter and use a fork or pastry cutter to work butter into the flour mixture until it resembles coarse cornmeal.
  • Pour in milk and vanilla and combine until liquid is evenly distributed. Add additional milk, 1 tablespoon at a time, if dough does not come together. Knead dough for 1 to 2 minutes.
  • Preheat an air fryer to 320 degrees F (160 degrees C). Lightly spray the basket with cooking spray.
  • Divide dough into 12 equal portions and set 6 portions into the basket without touching. Lightly spray with cooking spray.

Who doesn't love a doughnut? With the help of an air fryer, you can enjoy homemade yeast doughnuts without any of the hassle of cooking with hot oil. But are they as good? Well, after much testing, we cracked the code for creating a tender doughnut that is not deep fried - it's all about using a combination of all-purpose and cake flour. This recipe results in a tender doughnut that is lighter than air. Dusted in cinnamon sugar, these become simply irresistible!

2 1/4 teaspoons active dry yeast
3/4 cup whole milk, warmed (110 degrees F)
1 large egg
2 tablespoons canola oil
1/2 teaspoon pure vanilla extract
4 tablespoons unsalted butter, melted, plus more for the bowl
2 1/4 cups all-purpose flour, plus more for dusting
1 cup cake flour (not self-rising)
1/2 cup sugar
1/2 teaspoon kosher salt
2 tablespoons ground cinnamon

Steps:

  • Sprinkle the yeast over the warm milk in a liquid measuring cup. Let stand until foamy on top, about 10 minutes.
  • Beat the egg and oil using a stand mixer fitted with the paddle attachment on medium speed until combined. Add the vanilla, 2 tablespoons of the melted butter, and the yeast mixture. Mix on low speed until combined.
  • Whisk the all-purpose flour, cake flour, 1/4 cup of the sugar, and the salt in a medium bowl. Add to the stand mixer in two additions, mixing on low speed after each addition until combined. Continue beating on medium speed, scraping down the sides of the bowl as needed, until the dough is no longer sticky to the touch, about 1 minute.
  • Turn the dough out onto a lightly floured surface. Knead into a smooth ball. Brush a large bowl with melted butter. Add the dough and cover with a clean kitchen cloth. Let rise until doubled in size, about 2 hours.
  • Turn the dough out onto a lightly floured surface. Roll out to 1/2 inch thick. Cut out 8 doughnuts with a doughnut cutter (or use a wide-mouth Mason jar to create the outer edge and the wide end of a metal pastry tip or a shot glass for the inner edge). Reserve the smaller rounds for making doughnut holes. Cover with the clean cloth and let rise for 30 minutes more.
  • Place half of the doughnuts in a 6-quart air fryer and cook at 350 degrees F until golden brown all over, 5 to 6 minutes. Remove to a cooling rack and repeat with the remaining doughnuts and doughnut holes.
  • Brush the doughnuts on all sides with the remaining 2 tablespoons melted butter. Combine the remaining 1/4 cup sugar with the cinnamon in a shallow bowl. Place the doughnuts into the cinnamon sugar and sprinkle to coat on all sides. Serve warm or at room temperature.
