Air Fryer Venison Jerky is so easy to make. You can make this recipe in your dehydrator or Ninja Foodi. This is a wonderful and simple deer jerky recipe.

3-5 pounds deer roast (or do more if you would like)
Hi-Mountain cure and jerky mix or another brand
1 teaspoon liquid smoke PER pound of meat

Steps:

  • First you want to start by slicing your roast into thin strips, and removing any silver skin on each piece of the meat.
  • Lay it all out flat, and then mix up your seasoning per the box. Sprinkle on both sides of the meat, massaging it in.
  • Then transfer the meat into a bag and add in the liquid smoke. 1 teaspoon per pound of meat you have. Massage bag.
  • Store in the fridge for 24 hours to let it marinade and cure.
  • Lay the jerky out on your air fryer trays, don't let the pieces touch. Then cook at 160 degrees for 3-4 hours. Make sure to flip and randomly check, and remove the meat when it is cooked to your texture liking.

2 (5 ounce) boneless chicken breasts, cut into strips
½ cup mojo criollo marinade (such as Goya®)
2 teaspoons Cajun seasoning
wooden skewers

Steps:

  • Combine chicken strips, marinade, and Cajun seasoning in a resealable plastic bag. Refrigerate for 8 hours, or up to overnight.
  • Measure skewers to fit across the air fryer basket, slightly overlapping the edge. Trim off excess length.
  • Preheat the air fryer to 180 degrees F (80 degrees C) for 10 minutes.
  • Thread chicken strips onto skewers, leaving room in between each strip, while the air fryer is preheating.
  • Air fry for 1 hour 15 minutes. Adjust cooking time as most air fryers have a maximum setting of 30 minutes. Rearrange the skewers during the reset time.
  • Increase temperature to 200 degrees F (95 degrees C) and air fry for an additional 15 minutes.
  • Remove strips to a paper towel-lined storage container. Seal. Allow to rest overnight before serving.

1 pound beef sirloin steak, cut into thin strips
¼ cup reduced-sodium soy sauce
1 tablespoon steak seasoning
1 ½ teaspoons brown sugar
1 teaspoon Worcestershire sauce
½ teaspoon liquid smoke flavoring

Steps:

  • Combine steak strips, soy sauce, steak seasoning, brown sugar, Worcestershire sauce, and liquid smoke in a resealable plastic bag. Marinate for at least 8 hours, or overnight.
  • Measure skewers to fit across the air fryer basket, slightly overlapping the edge. Trim off excess length.
  • Preheat the air fryer to 200 degrees F (95 degrees C) for 10 minutes.
  • Thread beef strips onto skewers, leaving room in between each strip, while the air fryer is preheating.

A zesty venison jerky that you can make at home in your oven. If you have a food dehydrator, you can dry the jerky in it by following the manufacturer's instructions. You can also reuse the marinade for additional batches.

1 pound boneless venison roast
4 tablespoons soy sauce
4 tablespoons Worcestershire sauce
2 tablespoons liquid smoke flavoring
1 tablespoon ketchup
¼ teaspoon pepper
¼ teaspoon garlic powder
¼ teaspoon onion salt
½ teaspoon salt

Steps:

  • Slice meat into long strips, 1 inch wide and 1/8 inch thick. In a large releasable plastic bag, combine soy sauce, Worcestershire sauce, liquid smoke, ketchup, pepper, garlic powder, onion salt and salt. Place meat in, and close bag. Refrigerate overnight. Knead occasionally, to evenly distribute marinade.
  • Preheat oven to 160 degrees F (70 degrees C). Place a pan on the bottom of oven to catch drips, or line with aluminum foil.
  • Place meat strips on a rack so that they do not touch each other, and dehydrate for 6 to 8 hours in the oven, or until desired consistency is achieved.

Using your air fryer oven makes whipping up a big batch of jerky as easy as 1-2-3. All it takes is a few ingredients and some patience. Make sure to cut your beef paper thin or plan on a longer drying time. I find it helpful to freeze the beef for an hour for easy slicing. Refrigerate any that is not consumed in 3 days.

4 pounds London broil, thinly sliced and fat removed
2 tablespoons jerky seasoning
2 tablespoons cure
2 teaspoons cure

Steps:

  • Place beef, jerky seasoning, and 2 tablespoons plus 2 teaspoons cure in a large bowl. Massage beef with your hands until evenly combined. Cover and refrigerate, 8 hours to overnight.
  • Preheat the air fryer to 160 degrees F (70 degrees C). Place beef slices on the rack, making sure none are overlapping.
  • Air fry for 3 hours. Open the air fryer and let beef sit for 1 hour for final drying and cooling. Store in an airtight container.

I typically leave the jerky making to my husband but I got an air fryer oven and decided to try my hand at it. While it does take time, it doesn't take near as long as the dehydrator method he uses. This was so easy, full of flavor, stores well, and just overall impressive! This is the perfect snack for camping, hiking, fishing, hunting, or any outdoor activity.

2 pounds ground pork
1 tablespoon sesame oil
1 tablespoon Sriracha
1 tablespoon soy sauce
1 tablespoon rice vinegar
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon pink curing salt

Steps:

  • Combine ground pork, sesame oil, Sriracha, soy sauce, rice vinegar, salt, black pepper, onion powder, and pink curing salt in a large bowl; mix until evenly combined. Cover and refrigerate for 8 hours.
  • Using a jerky gun, form as many sticks as you can fit on all three of the air fryer oven racks. They will shrink almost immediately so you can put them close together and utilize the full length of the racks. I was able to get 21 sticks the first go around.
  • Set the air fryer oven to 160 degrees Fahrenheit. Place all three racks in and cook for 1 hour.
  • Remove racks from the oven and blot excess moisture with paper towels. Flip each stick and cook for 1 more hour.
  • Repeat step 4 for a total cook time of 3 hours. Transfer jerky sticks to a paper towel-lined baking sheet. Cover with another layer of paper towels and let sit out 8 hours for final drying. Repeat with any remaining jerky mix.
  • Transfer jerky to an airtight container and refrigerate for up to 30 days.

12 ounces top sirloin beef
1 garlic clove, minced
1 inch piece fresh gingerroot, peeled and grated
2 tablespoons reduced sodium soy sauce
1 tablespoon turbinado sugar
1 tablespoon chili paste (such as Sambal Oelek)
1 tablespoon rice vinegar

Steps:

  • Using a sharp knife, thinly slice beef and place in a resealable bag.
  • In a bowl, combine garlic, ginger, soy sauce, sugar chili paste and rice vinegar; whisk well.
  • Pour marinade into bag, seal and place in the refrigerator for at least 4 or up to 24 hours.
  • When ready to cook, remove pieces of beef from a marinade and pat dry with a paper towel.
  • Preheat air fryer to 160-degrees. Place beef in basket and cook for 3 to 4 hours. Checking the jerky periodically for desired doneness. Allow to cool completely and then store in an airtight container.
