1 tablespoon olive oil
¼ teaspoon ground turmeric
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Drizzle the cauliflower florets with olive oil, then toss with turmeric, smoked paprika, salt, and pepper so that they're well coated in the seasoning.
  • Roast in the Air Fryer at 390°F (200°C) for around 15 minutes flipping every 3 minutes.
  • When the air frying process is done, remove from the air fryer basket and serve on a plate. It can be enjoyed either warm or cold.

4 slices Swiss cheese, torn into 4 pieces each

Steps:

  • Combine cauliflower and black garlic in the bowl of a food processor; process until finely "riced". Transfer to a bowl. Add flour, eggs, bread crumbs, baking powder, salt, black pepper, basil, parsley, oregano, rosemary, red pepper flakes, and onion powder. Stir until well combined.
  • Preheat an air fryer to 400 degrees F (200 degrees C). Line the air fryer basket with parchment paper and spray with cooking spray.
  • Drop cauliflower mixture onto the parchment paper using a large cookie scoop; flatten slightly with your fingers.
  • Air fry for 4 to 6 minutes, flip using a spatula, and continue cooking until patties are set, about 1 minute more. Remove from the air fryer and top each patty with 1/4 slice of Swiss cheese. Return to the air fryer and cook until cheese is melted, 30 to 40 seconds more.

  • Cut the top off the head of garlic and place on a square piece of aluminum foil. Bring the foil up and around garlic. Pour olive oil on top and season with salt and pepper. Close ends of foil over garlic, creating a pouch.

2/3 cup frozen corn

2/3 cup chopped green onions

6 whole wheat tortillas (8 inches), warmed if necessary
4 teaspoons olive oil
Optional: Guacamole and salsa

Steps:

  • Preheat air fryer to 400°. In a large microwave-safe bowl, mix beans, rice and corn; microwave, covered, until heated through, 4-5 minutes, stirring halfway. Stir in cilantro, green onions and salt., To assemble, spoon 3/4 cup bean mixture across the center of each tortilla. Fold bottom and sides of tortilla over filling and roll up.
