HARD TIMES CREAMED TUNA
Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

Steps:
- Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
- Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
- Ladle tuna mixture over toasted bread to serve.

AIMEE'S CREAMED TUNA LUNCHEON
I used to make this for my daughter and her little friends, when they would come over. It was very cold and they didn't want soup, they would ask me for something "fancy" for their luncheon. I used to make the little frozen puffed pastries and would serve the tuna in them! It turned out beautifully and they were overjoyed! Of course, I enjoyed it too. Let me clarify - she was 4 at the time, she wouldn't be caught dead eating it today - too many carbs!

Steps:
- In a small sauce pan cook onion in butter over low heat, until tender.
- Add flour, salt, pepper if using, stirring until smooth and bubbly.
- Gradually stir in milk, stirring constantly until mixture thickens.
- Stir in sour cream.
- Add tuna, sherry if using, parsley it using, and peas if using.
- Spoon into baked puff pastry shells or on toasted English Muffins and garnish with paprika and slivered almonds, if using.
- Enjoy!

CREAMED TUNA
This is a quick way of fixing it and one that I have used for years as a quick lunch or supper. Add a salad and drink and it equals a good meal.

- Mix soup and milk until well blended, heat until very hot (do not boil) add tuna and pimientos.
- Heat until hot and serve over toast or biscuits.
- Garnish with a couple of small sweet pickles (goes great with this).

- In a medium saucepan melt butter, stir in flour and spices until mixture is thick creamy paste. Slowly stir in milk being careful to constantly stir to prevent lumping. Add cheese. Add tuna after cheese has melted into mixture. Simmer over low heat for ten minutes.
- Toast bread, then pour over layer of creamed tuna -- Enjoy.

- Thaw frozen peas in a collendar.
- Melt the margarine in a saucepan.
- Add the flour and blend.
- Add the milk, stirring constantly to prevent clumping and stir until creamy.
- Add the tuna, peas, salt and pepper and warm through.
- As the tuna is warming, toast bread.
- After toasted, cut in triangles and spoon tuna mixture over the toast.
