6 cups water (room temperature)
4 limes (juice)
4 Tbsp brown sugar (read notes)
1 lime or lemon (cut into slices)
mint leaves (optional)
ice cubes (as needed)

Steps:

  • Add water in a large pitcher.
  • Add lemon juice and then stir in chia seeds slowly while whisking vigoroulsy.
  • Add sugar and mix until dissolved, taste and adjust sugar to your liking.
  • Add mint leaves and the lemon slices.
  • Mix and serve in glasses with ice.

Steps:

  • Combine the lime juice, honey and water in a pitcher.
  • Stir well. Then add the chia seeds. Stir again.
  • Refrigerate the water for at least 30 minutes before serving to allow the chia seeds to soften.
  • Stir once more before serving as the chia seeds will settle at the bottom of the pitcher.

  • In a medium bowl, mix the chia seeds with 1 cup cold water. Let stand 15 minutes. Drain and rinse the seeds.
  • Mix 4 cups cold water and the sugar in a medium pitcher, stirring until the sugar dissolves. Add the lime juice and stir to combine. Mix in the chia seeds. Garnish with mint leaves and serve over ice.

3 large limes, quartered
4 cups water
1/2 cup sugar, or more if needed
1/4 cup chia seeds

Steps:

  • Put the limes, water, and sugar in a blender and pulse 3 to 4 times, just enough to extract the juice from the limes but not crush the skins (which would make the drink too bitter). Strain through a fi ne-mesh sieve into a pitcher. Taste and add more sugar if you like.
  • Whisk in the chia seeds and refrigerate for at least 30 minutes, until completely chilled. Stir before serving, then serve over ice.

Steps:

  • First, add the water to a large mason jar or pitcher. Squeeze in the lime juice, and add sweetener of choice (cane sugar, agave, piloncillo, etc).
  • While stirring vigorously, add in the chia seeds slowly to avoid clumping. Taste and add more sweetener or chia seeds to your preferences. Stir constantly for another minute or so, then transfer the jar to your fridge for a few hours.
  • Serve over ice with more lime wheels or mint garnishes. Happy drinking!
