EAST AFRICAN PEA SOUP



East African Pea Soup image

This is a recipe I saw originally in the Sundays at Moosewood cookbook. I use some of the habanero peppers I grow to add heat to this soup, but the original recipe called for about 1/8 teaspoon cayenne. Jalapenos or other hot chiles would also be good substitutes for the habs, although they are by far my favorite hot pepper.

2 cups chopped onions
1 teaspoon minced garlic
1 tablespoon vegetable oil
1/2 teaspoon grated fresh ginger
1 teaspoon salt
1/2 teaspoon ground black pepper
1 small habanero pepper, finely chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
1/4 teaspoon ground cardamom
1 dash clove (no more than 1/8 tsp)
1/4 teaspoon turmeric
2 tomatoes, chopped
1 sweet potato, diced (about 2 cups)
3 1/2 cups water
1 lb frozen green pea, thawed

Steps:

  • Sauté the onions gently in oil in a covered pot, stirring frequently, for 5 to 10 minutes, until the onions are just translucent.
  • Add garlic and saute for 1 minute.
  • Mix in the ginger, salt and all the spices and sauté for 2 minutes, stirring often.
  • Add the tomatoes and sweet potato.
  • Stir well.
  • Add 1 1/2 cups water and stir.
  • Bring the soup to a boil.
  • Reduce the heat and simmer, covered for 5 minutes.
  • Add half of the peas and simmer, covered, for another 10 minutes, or until the peas and sweet potato are tender.
  • Remove the soup from the heat and stir in the remaining 2 cups of water.
  • Purée the soup in a blender or food processor in batches until smooth.
  • Return soup to the pot, add the remaining peas and gently reheat.

1 tablespoon olive oil
2 cups chopped onion
2 cups chopped carrot
2 cups finely chopped celery
½ tablespoon minced garlic
1 cup yellow split peas
1 cup green split peas
8 cups fat-free chicken broth
1 ½ teaspoons salt-free seasoning blend
1 teaspoon salt

Steps:

  • In a large pot or Dutch oven over medium heat, heat olive oil. Cook onion, carrot, celery and garlic until onion is translucent. Stir in yellow and green split peas, broth, seasoning and salt. Cover, bring to a boil, then reduce heat and simmer 2 1/2 hours, stirring frequently. Puree with a blender or food processor. Return to pot, heat through, and serve.

2 tablespoons vegetable oil
2 medium onions, chopped
2 garlic cloves, minced
1 teaspoon grated fresh ginger
Salt and pepper to taste
Hot red pepper flakes to taste, crumbled
2 1/2 teaspoons mild curry powder
4 plum tomatoes, chopped
1/2 butternut squash, peeled, seeded, roughly chopped
4 cups vegetable stock
3 cups fresh green peas (or 1 pound frozen)
1/4 cup cilantro leaves, chopped

Steps:

  • In a large saucepan heat oil and saute onions and garlic until onions are translucent. Add ginger, salt, pepper, red pepper flakes, curry powder and saute for about 3 minutes, stirring constantly. Add tomatoes, squash, chicken or vegetable stock and deglaze pan. Bring to a boil, reduce heat and simmer, covered for 20 minutes. Add 2 cups of the peas and simmer, covered, for another 10 minutes or until peas and squash are tender. Using an immersion blender puree soup in pot. Add remaining peas and reheat. Stir in cilantro. Adjust seasoning. Serve hot.

1 cup dried split peas
3 cups water
1 tablespoon olive oil
2 cups onions, chopped
2 large garlic cloves, minced
2 bay leaves
1 teaspoon ground cumin
1/2 teaspoon cinnamon
1/4 teaspoon cayenne
1/2 teaspoon ground cardamom
2 cups vegetable stock
2 teaspoons fresh lemon juice
1/2 cup cooked rice
salt
fresh ground black pepper
1/2-3/4 cup parsley, chopped

Steps:

  • Rinse peas, put in soup pot with 3 cups water and bring to a boil. Reduce heat, cover and simmer for 45 minutes to an hour.
  • Meanwhile, saute the onions and garlic in oil until translucent. Mix in spices and saute for 5 - 10 minutes more, stirring frequently to prevent burning. Set aside.
  • When the split peas are cooked, stir in the onion mixture along with the vegetable stock.
  • Add the lemon juice and cooked rice, season with salt and pepper.
  • Stir in the parsley and gently reheat if necessary.

1 cup chopped yellow onions
2 cloves garlic, minced
1/8 cup good olive oil
1/2 teaspoon dried oregano
1-1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 cups medium-diced carrots (3 to 4 carrots)
1 cup medium-diced red boiling potatoes, unpeeled (3 small)
1 pound dried split green peas
8 cups chicken stock or water

Steps:

  • In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot.

SPLIT PEA SOUP WITH CRISPY KIELBASA

One of my all-time favorite comfort foods is a bowl of split pea soup, dating back to the days when my mother served us canned pea soup with cut-up hot dogs (very '50s!). Now I prefer a big pot of homemade soup to serve with sautéed kielbasa on top. I love the way the earthy, creamy soup contrasts with the crispy, spicy sausage.

Good olive oil
2 cups chopped leeks, white and light green parts, spun-dried (2 leeks)
1 1/2 cups chopped yellow onion (1 large)
2 cups (1/2-inch) diced, scrubbed carrots (3 large)
1 tablespoon minced garlic (3 cloves)
1 pound dry green split peas
8 cups good chicken stock, preferably homemade
1 smoked ham hock
8 fresh thyme sprigs, tied with kitchen twine
2 large fresh bay leaves
Kosher salt and freshly ground black pepper
12 ounces smoked kielbasa, halved lengthwise and sliced diagonally in 1/4-inch-thick pieces
Minced fresh parsley, for serving

Steps:

  • Heat 1/4 cup olive oil in a large (11 to 12-inch) pot or Dutch oven, such as Le Creuset, over medium-high heat. Add the leeks, onion, and carrots and cook for 7 to 8 minutes, stirring occasionally, until tender and starting to brown. Stir in the garlic and cook for one minute. Stir in the peas to coat with oil and cook for one minute. Add 8 cups of the chicken stock, 2 cups water, the ham hock, thyme bundle, bay leaves, 2 teaspoons salt, and 1 teaspoon pepper. Bring to a boil, lower the heat, and simmer, partially covered, for 1 1/4 hours, stirring occasionally, until the peas are very tender and falling apart. After 45 minutes, stir more frequently, scraping the bottom of the pot to be sure the soup doesn't burn.
  • Discard the thyme bundle, bay leaves, and ham hock. Transfer 2 cups of the soup to the bowl of a food processor fitted with the steel blade and purée. Return the purée to the pot, adding more chicken stock or water if the soup is too thick.
  • To serve, heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan over medium heat. Add the kielbasa and sauté for 5 to 6 minutes, tossing occasionally, until the kielbasa is browned. Serve the soup hot with the kielbasa and parsley sprinkled on top.
  • Make ahead: Reheat the soup over low heat, adding chicken stock or water to thin.

VEGAN SPLIT PEA SOUP I

This makes a very thick vegetarian split pea soup. To make it thinner, reduce the amount of split peas or add more water. Depending on the density of split peas, it may take a while for the vegetables and peas to soften, but you can't really overcook this soup; just stir occasionally, and add water if it gets too dry. Seasonings can be altered to taste. Tastes even better reheated.

  • Add the carrots, celery, potatoes, parsley, basil, thyme and ground black pepper. Simmer for another hour, or until the peas and vegetables are tender.

LIBERIAN BLACK-EYED PEA SOUP

Black-eyed peas are a favorite ingredient in all of the regions of West Africa. There, traditional soups are rather plain, so to add cornmon greens, and/or okra to this soup would be considered quite "fancy" by most West Africans. And if you add the quantity of cayenne that most West Africans would, this soup would be considered insanely fiery by the majority of North Americans! Try varying the combination of vegetables a bit, playing with the quantities of the optional ingredients, or doubling the amount of greens. Reduce the water and you'll have a stew, delicious served on polenta or grits. Top each bowl with chopped scallions or more chopped cilantro.

  • Stir in the cayenne, allspice, and thyme and cook for 1 to 2 minutes, stirring frequently.
  • Add the bell peppers, stir well, cover, and cook for 3 to 4 minutes.
  • Stir in the corn, okra, tomatoes, and the remaining 2 cups of water.
  • Cover and bring just to a boil; then add the greens, gently simmer until tender, and remove from the heat until the black- eyed peas are ready.
  • When the black-eyed peas are tender, remove the garlic cloves or mash them with a fork against the side of the pan.
  • Add the black-eyed peas and their cooking liquid to the soup pot.
  • Stir in the cilantro, if using, and add salt and black pepper to taste.
