VELVEETA ULTIMATE MACARONI AND CHEESE
I got this off a box of Velveeta Cheese when I saw it made on Good Morning America. The recipe is exact, i haven't changed it. I usually buy the large block of Velveeta cheese and store any unused cheese in ziploc bags, so I'm forever searching for the recipe. It's easy and fast. My family swears it tastes just like KFC! You can also put the Macaroni and Cheese in a greased casserole dish and make a topping out of 1 sleeve of crushed Ritz Crackers and 1 stick of melted butter. Combine and then sprinkle on top of casserole. Bake in 350 degree oven till top is golden brown.

This recipe is a revised version of my Mom's Cooper Sharp Mac & Cheese recipe which I have been making for 25 years. But, I didn't have the correct ingredients for it, so this is how it came out. My DH and DD loved it so much better, that I now have my own version. LOL!

Steps:
- Pre-heat the oven to 400 degrees F.
- In a 2-quart baking dish place 1/2 a cup of cooked macaroni.
- Add 4 slices of Velveeta on top of the macaroni covering them.
- Layer another 1/2 a cup of of macaroni on top of the Velveeta slices.
- Add 4 slices of Velveeta on top of the macaroni covering them.
- Layer another 1/2 a cup of of macaroni on top of the Velveeta slices.
- Add 4 slices of Velveeta on top of the macaroni covering them.
- Add two tablespoons of butter on top of the Velveeta.
- Place in oven for 15 minutes so Veelveta melts.
- Remove from oven and give it a quick stir.
- Pre heat the oven to Broil.
- Add milk to baking dish.
- Layer the Cooper sharp cheese so it covers the top of the.
- Velveeta and macaroni mixture.
- Poor light cream on top of the Cooper sharp cheese.
- Place in the broiler for 5-7 minutes on the lowest rack.
- It will get a bubbly crust on top.
- HOT! Let sit for 5 minutes before serving.
- Enjoy!

- Preheat oven to 350 degrees.
- Cook macaroni according to directions and drain.
- Melt margarine in a large saucepan.
- Add flour and whisk together.
- Whisk in milk and cook over medium heat until mixture starts to bubble and thickens.
- Stir constantly.
- Add chunks of Velveeta and allow to melt.
- Salt and pepper to taste.
- Pour macaroni into a 13x9 oblong baking dish.

- Preheat oven to 350°F.
- Prepare macaroni according to package directions.
- Melt butter in a large pan.
- Whisk flour into melted butter to create a light roux (paste).
- Slowly whisk milk into the roux, whisking constantly to avoid lumps.
- Allow milk and roux to heat for about one minute, then begin adding the Velveeta.
- Continue to gently whisk the mixture until all Velveeta has melted, then add a pinch of white or black pepper.
