5 pounds fresh leaf spinach, cleaned, stemmed and chopped
1 cup (1/4-inch diced) smoked bacon
1 tablespoon butter
3 cups sliced fresh mushrooms
1 tablespoon chipotle puree with adobo sauce
2 cups fresh diced onion
3 tablespoons fresh minced garlic
1/3 cup fresh diced red bell pepper
1 1/2 tablespoon seasoned salt
8 ounces processed cheese, cut into 2-inch cubes
6 ounces cream cheese, cut into 2-inch cubes
2 cups frozen whole-kernel corn
1/2 cup grated Monterey jack and Cheddar cheese combined

Steps:

  • Braise spinach in stock pot until limp but still bright green. Brown bacon in saucepan and drain, discarding drippings. Add butter to bacon in pan. Add mushrooms, chipotle puree, onions, garlic, red bell pepper and seasoning salt and saute until onions and mushrooms are tender. Stir in processed cheese and cream cheese cubes and cook until cheese has melted, stirring continuously. Place spinach in strainer and press to remove all water. Place spinach in cheese mixture and stir well. Add corn and stir well. Cook for an additional three minutes and stir continually. Place in casserole and top with grated cheese. Heat in oven until cheese is melted.

1 (15 ounce) can tomato sauce
1 cup sour cream
1 teaspoon dried thyme
3 ½ cups farfalle (bow tie) pasta, uncooked
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Bring a pan of lightly salted water to a boil. Add the pasta, and cook until tender, about 8 minutes.
  • Crumble ground beef into a skillet over medium-high heat. Cook, stirring constantly until evenly browned. Drain excess grease, and stir in the tomato sauce, sour cream and thyme.
  • Place the cooked pasta into the bottom of a 2 quart casserole dish. Pour the ground beef mixture over the pasta. Cover with a layer of spinach. Top with shredded cheese.
  • Bake for 30 minutes in the preheated oven, until heated through and lightly browned on the top.

2 cups frozen whole kernel corn
1/2 cup grated monterey jack and cheddar cheese blend, combined

Steps:

  • Preheat oven to 350°F.
  • Braise spinach in stock pot until limp but still bright green.
  • Place spinach in strainer and press to remove all water.
  • Brown bacon in saucepan and drain, discarding drippings.
  • Add butter to bacon in pan.

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
8 ounces crumbled feta cheese
6 tablespoons all-purpose flour
1/2 teaspoon pepper
1/4 teaspoon salt
4 large eggs, lightly beaten

Steps:

  • Preheat oven to 350°. In a large bowl, combine the cottage cheese, spinach and feta cheese. Stir in the flour, pepper and salt. Add eggs and mix well. , Spoon into a greased 9-in. square baking dish. Bake, uncovered, until a thermometer reads 160°, about 1 hour.

2 tablespoons dry bread crumbs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9-inch square pan.
  • Heat butter, cream cheese, 1/3 cup Parmesan cheese, garlic powder, onion powder, and white pepper in a large saucepan over medium heat. Continue stirring until smooth.
