In the early 1950's, I received this recipe on an open-line, talk-radio show. It makes the lightest, crispiest batter imaginable. This makes enough to coat approximately 2 pounds of fish.

½ cup milk
½ cup water
¼ cup baking powder
1 teaspoon salt

Steps:

Whisk together the flour, milk, water, baking powder, and salt in a bowl until smooth.

This batter gives fried fish a fantastic flavor and is SO easy. You will be glad you tried this.I received this recipe from an avid fisherman and is even better than he promised it to be. It quickly has become a family favorite. Look for Lemony Tartar Sauce recipe-goes perfectly with this fish.

Ingredients

1 large egg
1 (10 ounce) package batter frying mix (I use McCormick fish-n-chips)
3 dashes hot sauce
1/4 teaspoon cayenne
1 tablespoon Old Bay Seasoning
1 teaspoon grated lemon zest
6 ounces beer
2 lbs fish fillets
vegetable oil (1 gallon, for frying)

Steps:

Pour oil into deep fryer and preheat to 350 degrees.
Wash fillets and dry on paper towels.
In a large bowl, combine batter mix, cayenne, Old Bay seasoning, and lemon zest.
Add egg, hot sauce, and beer and stir until well combined and no lumps remain.
Batter should resemble pancake batter.
Dip fillets into batter and coat evenly.
Carefully place into hot oil and cook 4 minutes or until golden.

Mix all the dry ingredients in a large bowl. Add the soda water and mix using a whisk and add the egg. Whisk until the batter is smooth
Pat the fish dry with some paper towels. Heat the oil on medium to high heat. If your oil is not hot enough the batter will soak in the oil. You can drop some batter in the oil and if it rises immediately then you know the oil is hot enough. Alternatively you can use a thermometer and cook them once your oil reaches a temperature of 175 degrees Celsius.
Dredge each piece of fish in the batter and place in the oil. Fry both sides until golden brown and crisp. Do not let the batter brown too quickly or the inside won't be cooked
