Steps:
- In a large skillet, melt butter over medium-high heat. Add the potatoes, onion and pepper; toss to coat. Cover and cook for 8-10 minutes or until potatoes are tender, stirring occasionally. Uncover; cook until potatoes are browned, about 6 minutes. , Top with cheese. Remove from the heat. Cover and let stand for 2-3 minutes or until cheese is melted. Garnish with parsley.

Steps:
- Set oven to 400 degrees.
- Butter a 13 x 9-inch baking dish.
- Cook the sliced potatoes in boiling water for about 5 minutes; drain.
- Layer one-third of the partially-cooked potatoes in bottom of the baking dish, then one-third of onion slices, then one-third of the cheese slices.
- Sprinkle with salt and pepper, then repeat layers two more times.
- Sprinkle top with the shredded cheddar.
- For the sauce; in a medium heavy saucepan melt butter over low heat.
- Add in flour and cayenne then stir for 1 minute.
- Slowly add in milk; whisk or stir until bubbly and thickened (about 3 minutes).
- Pour the sauce over the cheese and potato mixture.
- Bake for about 35 minutes or until golden.
- Let stand for 10 minutes before serving.

This is the recipe my husband uses when he makes Potatoes Au Gratin. You will need to refer to Recipe #207024 for this to make the cheese sauce. Using a food processor or mandoline to slice the veggies is key.

- Preheat oven to 200C/400°F.
- Generously butter the inside of a 9X13 baking dish and set aside.
- Peel the potatoes and thinly slice along with the onions and mushrooms, using a food processor or mandoline.
- Layer half the potatoes into the bottom of the baking dish, then half of the onions, followed by half the mushrooms. Season with salt and pepper. Repeat layers with remaining veggies and season with salt and pepper.
- Pour cheese sauce over potatoes and cover with aluminum foil.
- Bake for 1 1/4 hours. Remove from oven and take foil off. Put a single layer of sliced tomatoes on top, if using. Sprinkle with remaining 50g cheese and return to oven for 15 minutes, turning on broiler/grill for the last 3-5 minutes to brown cheese.
- Allow to sit 10 minutes before serving.

- Boil the diced onions and potatoes together.
- Once potatoes are soft, drain and mash together with the butter and milk or cream and slowly add 2/3 of the cheese (set aside the other 1/3).
- Add some ground pepper to taste. I also add a pinch of paprika and cayenne pepper.
- Take the mash off the hob and set aside. When slightly cooled add 1 beaten egg to the mix. (This step shouldn't be skipped it really adds to the flavour!).
- When everything has been combined together, place the mixture into a baking dish, and cover with the remaining cheese, add the tomato slices around the dish as you please.
- (You could also top with cooked bacon to make a change when you cook the dish again!).
- Bake at 180 C / Gas 4 in the centre of the oven until the cheese has melted and is starting to turn a nice golden brown around the edges.

A WINTER DISH OF POTATOES, ONIONS, AND MELTED CHEESE

- Bring a large pan of water to a boil while you peel the potatoes and cut them as you would for boiling. Salt the water, add the potatoes, and let them simmer for fifteen to twenty minutes, until just tender enough to take the tip of a knife.
- Preheat the oven to 350°F (180°C). As the potatoes are cooking, peel the onion, cut it in half and then into thick slices. Warm a little olive oil in a deep Dutch oven or other heavy pot over medium heat, add the onion, and let it soften and color lightly, stirring from time to time so that it does not brown.
- When the potatoes are tender, drain them, then cut through each one (I do this while they are still in the pan) so that they are roughly bite sized. Add them to the onion pan-if they crumble a bit, that is all to the good-then toss them with the Gruyère. Grind over some salt and black pepper, then scatter with the grated Parmesan.
- Bake for about thirty-five to forty minutes, until the cheese is melted and the potatoes and onion are golden. You can steam or boil the greens while this is happening, a few minutes before you expect the potatoes to be ready.
