7-Up Pound Cake has a little something-something more than your average slice of pound cake.

For the cake
Cooking spray
1 c. (2 sticks) butter, softened
2 c. granulated sugar
5 large eggs, room temperature
1 tsp. pure vanilla extract
1 tsp. lime zest
1 tsp. lemon zest
3 c. sifted cake flour, plus more for pan
2 tsp. baking powder
1/2 tsp. kosher salt
3/4 c. 7-Up
For the glaze
1 1/2 c. powdered sugar
1 tbsp. lime juice
1/4 tsp. kosher salt
1 tbsp. 7-Up

Steps:

  • Preheat oven to 350° and grease a large bundt pan with cooking spray, then add a little flour and tilt pan around to coat.
  • In a large bowl with a hand mixer, beat together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition, then add vanilla and both zests.
  • In a separate large bowl whisk together flour, baking powder, and salt. Add ⅓ of the dry ingredients to butter mixture, beat to combine, then add ⅓ of 7-Up and mix to combine. Continue to do this until you have used up all of the dry ingredients and the 7-Up. Pour batter into prepared bundt pan and smooth top with an offset.
  • Bake for 1 hour or until a toothpick inserted into the middle comes out clean. Let cool 10 minutes then invert onto a cooling rack to cool completely.
  • Meanwhile, make glaze: Whisk together powdered sugar, lime juice, and salt in a bowl. Add 7-Up, 1 teaspoon at a time, until mixture reaches consistency of sour cream. Drizzle over top of cooled cake before serving.

1 1/2 cups (3 sticks) unsalted butter, at room temperature, plus additional for greasing
3 cups all-purpose flour, sifted, plus additional for the pan
3 cups granulated sugar
5 large eggs
2 tablespoons lemon extract
1 cup lemon-lime soda, such as 7Up
3 cups sifted confectioners' sugar
1/2 cup milk
3 tablespoons lemon-lime soda, such as 7Up
2 teaspoons vanilla extract
1/2 teaspoon lemon extract

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Generously grease and flour a fluted 10- to 12-cup Bundt pan.
  • Beat the granulated sugar and butter together in a bowl with an electric mixer until creamy and smooth, about 2 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the flour 1 cup at a time, blending well after each addition, until the batter is smooth; stir in the lemon extract. Mix the lemon-lime soda into the batter and pour into the prepared pan. Bake until a toothpick inserted in the center of the cake comes out clean, about 1 hour 15 minutes.
  • For the glaze: Beat the confectioners' sugar, milk, lemon-lime soda and extracts together in a bowl with an electric mixer on medium speed until the glaze is smooth.
  • Pierce holes in the cake with a skewer. Pour 1/4 cup glaze over the cake. Flip the cake onto a serving plate to remove from the pan, then pour the remaining glaze on top. The cake can be served immediately, but tastes even better the longer it sits.

GLAZE:
1-1/2 cups confectioners' sugar
1 tablespoon lemon or lime juice
1 to 2 tablespoons 7UP soda
1/2 teaspoon grated lemon or lime zest, optional

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted or plain tube pan., In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in lemon juice and vanilla. Add flour alternately with 7UP, beating well after each addition. , Transfer batter to prepared pan. Bake until a toothpick inserted in center comes out clean, 65-75 minutes. Cool in pan 20 minutes before removing to a wire rack to cool completely., For glaze, in a small bowl, mix confectioners' sugar, lemon juice and enough 7UP to reach desired consistency. If desired, stir in zest. Drizzle over cake.

1 ½ cups butter, softened
5 eggs
3 cups all-purpose flour, sifted
2 tablespoons lemon extract
1 cup lemon-lime carbonated beverage (such as 7Up®)
1 cup sifted confectioners' sugar
¼ cup milk
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Generously grease a fluted tube pan (such as Bundt®).
  • Beat white sugar and butter together in a bowl using an electric mixer until creamy and smooth; add eggs, 1 at a time, mixing well after each addition. Stir flour, 1 cup at a time, blending well after each addition until batter is smooth; stir in lemon extract. Mix lemon-lime beverage into batter and pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 1 hour 15 minutes. Remove cake from pan immediately.

  • Cream sugar& butter together until light& fluffy.
  • Add eggs, one at a time, and beat well.
  • Add flour and mix in.
  • Beat in lemon extract and 7-UP.
  • Pour batter into well-greased and floured Bundt pan.
  • Bake at 325 degrees for 1 to 1-1/4 hours.
  • When cool, ice with a powdered sugar/lemon juice glaze, and garnish with long"curls" of lemon zest.

3/4 cup vegetable oil

1/2 cup butter
1 (4 ounce) can crushed pineapple
1 cup shredded coconut

Steps:

  • Mix everything except 7up in large bowl beat until light and fluffy.
  • Add 7 up, mix on low speed until blended.
  • Put into lightly greased 9x13-inch pan.
  • Bake at 350°F for 40 minutes or until toothpick comes out clean.
  • Cover immediately with topping.
  • Topping: In saucepan over medium heat beat 2 eggs with fork.
  • Add sugar, flour, butter, pineapple and juice.
  • Stir constantly until thick.
  • Add coconut.
  • Prick warm cake with fork and pour topping over.

Gradually add sugar, beating on medium speed until light and fluffy, 3 to 5 minutes. Add eggs, 1 at a time, beating until just blended after each addition. Add lemon zest, lemon juice, lime zest, and vanilla; beat on low speed until just blended, about 30 seconds. Add flour to butter mixture alternately with soft drink, beginning and ending with flour, beating until just blended after each addition.
  • Pour batter into prepared pan. Bake in preheated oven until a wooden pick inserted in center of cake comes out clean, 1 hour to 1 hour and 15 minutes, loosely tenting pan with aluminum foil after about 45 minutes to prevent excessive browning.
  • Cool cake in pan on a wire rack 10 minutes. Remove from pan. Transfer to wire rack, and let cool completely, 2 hours.
  • Spoon Lemon-Lime Cream Cheese Frosting into a piping bag or heavy-duty ziplock plastic bag. Cut a 1-inch hole in corner of bag, and pipe frosting in a roped pattern over top and sides of cake. Top cake with Sugared Lemon-Lime Zest.
