The retro 7-layer salad made in single serving mason jars!

Steps:
- Whisk together dressing ingredients. Taste and add more sugar or seasoning salt if needed.
- Divide ingredients between 2 mason jars (about 2 cup capacity), starting with lettuce, then 2-3 tablespoons salad dressing, tomatoes, peas, onion, cheese and finally the bacon.
- Feel free to add other favorite ingredients or add more or less of each to your tastes.

SALAD IN A JAR
Besides my cast-iron skillet, I love using a mason jar. Here, it's the perfect vessel for making a prep-ahead salad. I fill the bottom with the vinaigrette, then top with hearty greens, sliced plums, crispy roasted chickpeas and almonds, and then wait to shake it until right before I'm ready to eat.

Steps:
- For the crispy chickpeas: Preheat the oven to 425 degrees F.
- Pat the chickpeas dry with paper towels. Transfer to a bowl. Add the oil, cumin, garlic powder, salt, pepper, cayenne and paprika. Spread the chickpeas in a single layer in a rimmed baking sheet. Bake, stirring once halfway through to promote even browning, until the chickpeas are browned and crispy, about 30 minutes.
- Make the vinaigrette: Whisk together the oil, vinegar, sugar, mustard, salt and pepper.
- Assemble the salads: Pour 2 tablespoons of the dressing into each of two 16-ounce mason jars. Top with the kale, plums, almonds and 1/4 cup crispy chickpeas (reserve the remaining chickpeas for snacking). Seal the lids. Shake the jars to combine just before serving.
7 LAYER SALAD
This 7 layer salad recipe sounds like a bunch of vegetables thrown together, but every occasion people ask me if I will make this, it is really gooooooood. Overnight chilling not included in preparation time.

- Layer all of the above vegetables in order, evenly.
- Cover with plastic wrap securely and refrigerate overnight.
YUMMY 7 LAYER SALAD
Quick Easy and if your lucky enough (left overs are the best)! Make sure to slice the red onion super super thin (I use the mandolin). Oh!!!! Print the recipe you'll be asked for it. This doesn't get soggy so you can make the day before. This is great for pot lucks. Just layer all in a foil pan. If vegetarian you can use imitation bacon made of soy, you can change the fillings to anything you enjoy but I do suggest keeping the iceberg you can use romaine successfully and the peas and celery are a must in this recipe.

Steps:
- Layer first 5 ingredients, one at a time, in a large glass bowl so you can see each layer. Don't mix the ingredients.
- Mix the dressing ingredients together and pour evenly over the salad in the bowl.
- Add a layer of cheese, then a layer of bacon.
- Then top with egg if using.
