SMOKED BRISKET RECIPE

Pure and simple, melt in your mouth and packed with flavor, this smoked beef brisket is seasoned with salt and pepper, then smoked low and slow with oak.

12 to 16 lb Prime grade whole packer brisket ((fat trimmed to 1/4" to 1/2" and silver skin removed))
1/2 cup Diamond kosher salt
1/2 cup freshly ground black pepper
Spritz of 50:50 apple cider vinegar and water ((if necessary))

Steps:

  • Combine the Kosher salt and freshly ground black pepper in a small bowl or spice shaker, then evenly season the brisket on all sides. Let the brisket sit out at room temperature for 1 hour.
  • While the brisket comes to room temperature, prepare the smoker according to the manufacturer's instructions for indirect cooking with a water-filled drip pan in place. Bring the temperature between 250 and 275° F. Add 3 to 5 fist-size oak, mesquite or your favorite wood chunks for smoke.
  • Place the brisket in the smoker with the thicker tip closest to the heat. Leave the lid closed for at least 3 hours. Cook for a total of 6 to 8 hours until dark brown bark is formed and the internal temperature reaches 165° F after the stall (when the temp stops rising for hours around 150° F).
  • Remove the brisket from the smoker and tightly wrap it with uncoated butcher paper (or aluminum foil). Place it back in the smoker and continue cooking until the internal temperature of the flat (thinner side) reaches between 200 and 205° F, about 6 to 8 more hours.
  • Carefully transfer the brisket (still wrapped in the butcher paper) to a cooler to rest for at least 1 and preferably 2 hours or until the internal temp drops to 140 to 145° F. You can line the cooler with a towel to further insulate the brisket if you prefer.
  • Separate the point from the flat muscle. Slice against the grain (which is different for each muscle) into 1/4" slices just before serving. Enjoy!

1/2 cup kosher salt
1 cup coarsely ground black pepper
1 brisket flat (5 to 8 pounds)

Steps:

  • Preheat a smoker to 225 degrees F using your preferred heating method. Then add the woodchips.
  • Mix the salt and pepper to make the seasoning rub. Apply the rub to the brisket.
  • Place the brisket on the smoker. Add more woodchips as necessary to supply smoke throughout cooking. Cook the brisket until it reaches and internal temperature of 170 degrees F, 4 to 5 hours.
  • Carefully wrap the brisket in foil or butcher paper and return to the smoker. Continue cooking until the brisket reaches an internal temperature of 190 degrees F, 1 to 2 more hours.
  • Rest the meat, still wrapped, for 30 minutes to 1 hour.
  • Unwrap the brisket and slice the meat against the grain to serve.

I got this from someone because I had it in my recipes and I hand wrote it. I like the way it sounds. To make this Kosher use non-dairy cream of mushroom soup. *For crockpot, put meat in fat side up and mix ingredients and pour over meat. Cook on low for about 6 hours or until done (tender).

1 (10 1/2 ounce) can cream of mushroom soup
3/4 cup red wine
1 tablespoon dried thyme

4 lbs beef brisket

Steps:

  • Preheat oven to 350 degrees.
  • In a large roasting pan, with foil, place onions and garlic.
  • Put brisket in now and season meat with salt and pepper.
  • In a bowl, mix the soup, wine, thyme and olive oil together well and pour over the meat.
  • Cover tightly with more foil and roast for 3 to 3 1/2 hours until done.
  • Cool a bit before slicing meat on the diagonal of the grain.

With its assertive coffee and spice rub, this brisket cooks long enough to become very tender. A final sear under the broiler thickens the sauce into a glaze for the top. This recipe calls for the lean first cut, also known as the flat cut, and works with the much fattier second cut, sometimes labeled the point cut or deckle. This dish is delicious the day it's made, but tastes even better prepared ahead of time. After chilling, the meat is easier to slice and the fat a snap to remove.

2 tablespoons finely ground coffee
1 tablespoon smoked paprika
1 teaspoon ground coriander
1 teaspoon garlic powder
1/2 teaspoon ground cinnamon
1/2 teaspoon black pepper
2 1/2 teaspoons kosher salt
1 (4- to 5-pound) first-cut brisket
2 tablespoons olive oil
1 large onion, sliced
6 garlic cloves, peeled
1/2 cup dry red wine
1 1/2 cups pomegranate juice
1 cup chicken stock or water
1 1/2 pounds cipollini onions or small shallots, peeled
1 cup lightly packed Italian parsley leaves with tender stems
1 teaspoon lemon juice (from 1 lemon)
2 teaspoons olive oil
Kosher salt and black pepper
1/2 cup pomegranate seeds
Mashed potatoes, for serving

Steps:

  • Make the brisket: Heat oven to 300 degrees. In a small bowl, combine the coffee, smoked paprika, coriander, garlic powder, cinnamon, pepper and 2 teaspoons salt. Mix well and rub all over the brisket.
  • Heat a large Dutch oven over medium. Add the oil and brown the brisket, taking care not to burn the spices, about 5 minutes per side. Transfer to a plate.
  • Reduce the heat to medium-low. Add sliced onion, garlic and remaining 1/2 teaspoon salt. Cook, stirring occasionally, until the onion is softened and golden, 8 to 10 minutes.
  • Add the red wine, scrape up any brown bits and reduce the liquid by half. Add the pomegranate juice and stock. Bring to a simmer and return the brisket to the pot with the fatty-side up. Cover with the lid, place in the center of the oven, and braise until fork-tender, about 3 1/2 hours, basting every hour or so.
  • Uncover and nestle the cipollini onions in the liquid. Cover and braise in the oven for another 45 minutes. The meat should be very tender. Uncover and carefully transfer the meat to a cutting board. Let stand until cool enough to handle.
  • Meanwhile, scoop the cipollini onions into a bowl with a slotted spoon. Pour the sauce into a fat separator or a tall container and remove as much fat as you can. Pour the sauce back into the pot, slice the meat and return it to the pot along with the onions, using a brush or spoon to encourage the sauce between the slices. Heat the broiler with the rack 8 inches from the heat source.
  • Partly cover the Dutch oven and bring to a boil over high heat. Reduce the heat to simmer until the meat is completely warmed through. Remove the lid and transfer the Dutch oven to the broiler. Broil, basting a few times, until the sauce thickens and the top is glazed, about 8 minutes.
  • To serve, dress the parsley with the lemon juice, olive oil, salt and pepper, and sprinkle over top along with the pomegranate seeds. Serve immediately with mashed potatoes.

1 teaspoon ground cinnamon
1 teaspoon ground mild or medium red chile powder

1 tablespoon coarse kosher salt, plus more to taste
1 teaspoon coarsely ground black pepper
1 (5-pound) brisket
2 large red onions, cut into rounds
4 tablespoons extra-virgin olive oil
3 white or yellow onions, diced
3 bell peppers (green, red and yellow), diced
1 (14.5-ounce) can diced tomatoes (Kosher for Passover), drained
2 cups chicken, beef or vegetable stock (Kosher for Passover)
1 tablespoon brown sugar
1 teaspoon prepared horseradish
2 fresh or dried bay leaves
1 sprig fresh thyme or 1 teaspoon dried thyme

Steps:

  • Heat oven to 325 degrees. Combine the paprika, garlic, ginger, turmeric, cinnamon, chile powder and cayenne with the salt and pepper. Save 2 teaspoons for the vegetables, then sprinkle the rest all over the brisket and rub in well.
  • Arrange the red onion rounds in a single layer in a roasting pan or large baking dish that can fit the brisket and drizzle with 1 tablespoon olive oil.
  • Heat the remaining 3 tablespoons olive oil over medium-low in a very large Dutch oven or large, deep skillet that fits the brisket. Cook the beef until lightly seared (don't let the spices burn), about 5 to 6 minutes on both sides. Transfer to the roasting pan, placing the brisket on top of the red onion rounds.
  • Add the diced onions and bell peppers to the oil in the Dutch oven and season with the saved 2 teaspoons of seasoning. Raise the heat to medium and cook, stirring occasionally, until the onions are translucent, about 10 minutes. Add the tomatoes, mix together, and cook for about 5 minutes, stirring often.
  • Add the stock, brown sugar, horseradish, bay leaves and thyme. Spoon the vegetables over the brisket to cover it and pour everything else from the Dutch oven into the roasting pan.
  • Cover the pan tightly with foil. If the foil touches the top of the brisket, cover the brisket with parchment paper first, then cover the pan with the foil. Bake until a fork slides into the brisket with only a little resistance, about 3½ hours.
  • To serve right away, transfer the brisket to a cutting board and cut across the grain into thin slices. Transfer to a serving platter, sprinkle with salt and spoon the vegetables on top. You can serve the remaining sauce alongside or save for another use. To make ahead, cool the brisket, then cover tightly and refrigerate for up to 2 days. Once the brisket is chilled, cut off and discard excess fat if you'd like, and then slice the meat against the grain. Place the sliced brisket in a pan or pot, cover with the vegetables and sauce, and heat in a 350-degree oven until heated through, about 30 minutes.
