An easy homemade chef salad recipe that comes together in 15 minutes! Since chef salad ingredients are simple and customizable, you can make this anytime.

1 cup Cucumbers ((1 medium; cut into quarter moons))
4 oz Cheddar cheese ((cubed))
4 oz Swiss cheese ((cubed))
4 large Hard boiled eggs ((sliced))
1 cup Sugar-Free Thousand Island Dressing

Steps:

  • Place chopped lettuce into a large bowl, or divide among serving bowls.
  • Top with ham, tomatoes, cucumbers, cubed cheeses, and sliced eggs.
  • Add dressing and toss to coat, or serve dressing on the side of individual bowls.

I love all kinds of salads. I need to start eating more fruit, and I found this recipe on another site. This looks like a quick way to enjoy some of favorite fruity flavors! The passive work time is the time that it chills in the fridge.

1 cup mandarin orange, drained
1 cup pineapple chunk, drained
1 cup angel flake coconut
1 cup sour cream
1 cup chopped nuts

  • You can cover with whipped cream or cool whip if desired.

3/4 cup pecans, chopped

Steps:

  • Combine all ingredients for salad in a 2- quart bowl, stir gently, cover with plastic wrap.
  • Refrigerate for 24 hours.
  • To serve: spoon portions in clear glass serving dishes.
  • Garnish with topping: a dollop of Cool Whip Lite, maraschino cherries and a sprinkling of chopped pecans.

This recipe was submitted by Virginia Shufflebarger. I found this recipe in Salads Food Writers' Favorites. I have not tried this recipe, but I plan to use no sugar added fruit cocktail, pineapple chunks and unsweetened coconut.

Steps:

1 tablespoon vegetable oil
3 cups shredded lettuce
3 large hard-boiled large eggs, sliced
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups shredded cooked chicken breast
1 package (10 ounces) frozen peas, thawed
DRESSING:
1 cup mayonnaise
1/4 cup sour cream
2 green onions, chopped
2 teaspoons Dijon mustard
TOPPINGS:
1 cup shredded Colby or Monterey Jack cheese
2 tablespoons minced fresh parsley

Steps:

  • Cook pasta according to package directions; drain and rinse with cold water. Drizzle with oil and toss to coat. , Place the lettuce in a 2-1/2-qt. glass serving bowl; top with pasta and eggs. Sprinkle with salt and pepper. Layer with chicken and peas. In a small bowl, mix dressing ingredients until blended; spread over top.
