1 8-pound fully cooked bone-in half ham (shank or butt)
1 cup low-sodium chicken broth
1 cup honey
3/4 cup packed light brown sugar
1/2 cup dijon mustard
1/2 cup whole-grain mustard
3 tablespoons apple cider vinegar
3 tablespoons hot sauce
1 tablespoon chopped fresh thyme
1/2 teaspoon red pepper flakes
Bring the ham to room temperature 1 hour before baking.

Steps:

  • Position an oven rack in the lowest position; preheat to 350 degrees F. Trim off any skin from the ham, leaving a 1/4-inch layer of fat. Score the fat with a sharp knife in a 1-inch crosshatch pattern without cutting through to the meat. Place the ham flat-side down in a roasting pan and add the chicken broth to the pan. Cover with foil and bake 1 1/2 hours.
  • Meanwhile, make the glaze: Whisk the honey, brown sugar, mustards, vinegar, hot sauce, thyme and red pepper flakes in a medium bowl. Remove 3/4 cup of the glaze to a separate bowl and set aside for serving. Remove the ham from the oven, discard the foil and brush with about one-quarter of the remaining glaze. Continue baking, brushing with the glaze and the pan juices every 30 minutes, until the ham is a deep reddish-brown and a thermometer inserted into the center registers 140 degrees F, 1 to 1 1/2 more hours. (Add 1/2 cup water to the pan if the juices dry out.)
  • Transfer the ham to a cutting board and let rest 20 minutes before slicing. Serve with the reserved glaze.

1 cup plum preserves
1/2 cup orange juice
2 tablespoons lime juice
1 tablespoon yellow mustard
1 tablespoon honey
2 teaspoons minced fresh ginger
1/2 teaspoon red pepper flakes
7 lbs smoked fully cooked bone-in ham
pineapple, for garnish
kiwi, for garnish
green onion, for garnish
sesame seeds, for garnish

Steps:

  • Combine the preserves, orange juice, lime juice, mustard, honey, ginger and red pepper in a saucepan.
  • On medium high heat, bring to a boil, constantly stirring.
  • Reduce heat to medium low and simmer (still stirring constantly) until the preserves are melted and the mixture is blended.
  • Reserve half of this plum mixture in a microwave bowl.
  • Trim the excess fat on the ham to 1/8" thickness and cut shallow diamond patterns over the entire ham.
  • Place the ham on a rack in a foil lined pan.
  • Brush ham with some of the plum mixture that is still in the saucepan.
  • Bake the ham, uncovered, at 350 degrees on the lower oven rack for 1 1/2 hours.
  • Baste with the plum mixture in the saucepan every 30 minutes.
  • Loosely cover the ham with foil and bake 1 hour 45 minutes, basting every 30 minutes.
  • A meat thermometer should register 140 degrees in the thickest portion.
  • Let the ham stand for 15 minutes before slicing.
  • Warm the reserved plum mixture in a microwave and serve with the ham.
  • Place the ham on a platter and garnish with the fruit and onions.
  • Sprinkle the sesame seeds over the garnish.

Steps:

  • Preheat oven to 180C/355F/Gas 4.
  • Using a small sharp knife, cut through the rind around the shank of the ham. Carefully lift the rind from the fat in one piece, running your fingers through where the rind and fat are joined to ease away. Reserve the rind and use to cover the cut ham when storing.
  • Score the white fat in a diamond pattern and press star anise into the centre of every second or third scored diamond.
  • Place the ham on a rack over a roasting tray, then pour a small amount of water into the base of the roasting tray to prevent the glaze from burning.
  • Place the remaining ham ingredients into a saucepan over low heat, stirring until the sugar has completely dissolved.
  • Remove the glaze mixture from the heat and carefully pour over the ham making sure that all of the exposed fat is covered.
  • Transfer the ham to the oven to bake for 30-40 minutes, basting occasionally, until the ham is golden all over.
  • Remove the ham from the oven and place it onto a large platter ready to carve.

Peking duck is one of the most famous and popular Chinese dishes. The traditional method is grand and laborious, requiring three days of intense preparation. This recipe simplifies that method for a home version that comes pretty close to the original. For that coveted crisp, golden skin, all the excess fat is trimmed, and the skin is separated from the meat. The duck is then air-dried overnight and roasted vertically to ensure even cooking, while rendering out the fat. The crunchiest skin comes from the duck's backside and legs, so carve them off first to maintain their crackly texture. A simple honey and five-spice glaze creates a beautiful mahogany lacquer on the finished duck.

3 tablespoons mild honey, such as clover, acacia or orange blossom
2 tablespoons low-sodium soy sauce
1 teaspoon turbinado or light brown sugar
1 teaspoon five-spice powder
1 (5- to 6-pound) Peking or Long Island duck
3 teaspoons kosher salt
1/2 teaspoon black pepper
1 (24-ounce) beer can or other aluminum can, emptied and filled halfway with water
1/2 cup hoisin sauce
1 teaspoon toasted sesame oil
8 homemade Chinese tortillas, or 8-inch store-bought flour tortillas, warmed
4 scallions, cut into 3-inch pieces and thinly sliced lengthwise
2 Kirby or Persian cucumbers, cut into 3-inch-long matchsticks

Steps:

  • Combine honey, soy sauce, sugar and 1/2 teaspoon five-spice powder in a small saucepan. Stir over low heat until sugar dissolves, about 3 minutes.
  • In a large saucepan, bring 4 quarts water to a boil. Meanwhile, remove giblets and neck from duck cavity and discard (or reserve for another use). Cut off excess fat from cavity and neck area, then cut off tail. (This helps balance the duck vertically over the beer can.)
  • Using your fingers, carefully separate the skin from the breast meat through the bottom of the breasts and work your fingers upward to separate the skin from the meat (be careful not to tear skin). Next, separate the skin from the backbone through the neck and working your way down until you reach the legs. (Scissors are helpful, but be careful to avoid piercing the skin.) Transfer duck to a rack set in the sink.
  • Using a ladle or measuring cup, pour half of the boiling water evenly over top of the duck. Flip duck and pour the remaining water evenly all over second side. Tilt duck to drain all water from the cavity, then pat dry with paper towels.
  • In a small bowl, combine the remaining 1/2 teaspoon five-spice powder with 1 teaspoon salt, the black pepper and 1 tablespoon of the glaze. Rub the mixture inside the cavity. Stand duck vertically by inserting beer can into cavity and place in a roasting pan or on a rimmed baking sheet.
  • Using a pastry brush, brush the remaining glaze all over the duck and sprinkle evenly with remaining 2 teaspoons salt. Place duck in the refrigerator, uncovered, until the skin feels dry and leathery, 24 hours.
  • Heat oven to 450 degrees with rack in bottom third of oven. Remove duck from refrigerator, and add 1 1/2 cups water to the pan. Wrap wing tips and tips of drumsticks with foil to prevent burning, then loosely tent duck with foil. Roast for 15 minutes. Decrease temperature to 350 degrees and roast, tented with foil, until skin is mahogany and an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees, 1 hour to 1 hour 15 minutes more, adding more water to the pan if needed.
  • Leaving duck on the can, transfer duck vertically to a cutting board and let rest for 15 minutes. Carve the crispy skin from the back and legs of the duck, and slice into strips.
  • Carefully remove duck from the beer can and return to cutting board. Carve off the breasts and legs; thinly slice the breasts and shred dark meat.
  • Carefully strain pan juices into a small bowl and pour off all the fat. In another small bowl, whisk together the hoisin, sesame oil and up to 1/4 cup of the pan juices to form sauce.
  • To serve, spread 1 tablespoon prepared sauce on each tortilla. Top each with some scallions, cucumbers, duck meat and crispy skin. Roll up and enjoy warm.

2 medium oranges, peeled and sectioned
1 can (20 ounces) unsweetened pineapple tidbits, drained

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Cover and bake until a thermometer reads 130°, 2-1/2 to 3 hours., Meanwhile, in a small saucepan, combine 1/4 cup orange juice and Chinese five-spice powder; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 1-2 minutes. Stir in brown sugar and honey. In a small bowl, mix cornstarch and remaining orange juice until smooth; stir into brown sugar mixture. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. , Remove ham from oven. Brush with half of the glaze. Bake ham, uncovered, until a thermometer reads 140°, 15-20 minutes. Just before serving, stir fruit into remaining glaze; heat through. Serve with ham.

2 tablespoons lime juice
1 tablespoon grated lime zest
1 tablespoon Dijon mustard
2 tablespoons grated fresh gingerroot
3/4 teaspoon pepper
1 bone-in fully cooked ham (5 to 7 pounds)
3 tablespoons all-purpose flour
1-1/4 cups water, divided

Steps:

  • For glaze, combine the first six ingredients in a saucepan; bring to a boil, stirring constantly. Remove from the heat; set aside. Place ham on a rack in a shallow roasting pan. Score surface of the ham, making diamond shapes 1/2 in. deep. Spoon half of the glaze over ham. Cover and bake at 325° for 1-1/2 hours., Remove drippings from pan and set aside. Return ham to pan. Bake, uncovered, 30 minutes longer or until a thermometer reads 140°, basting twice with remaining glaze., Skim fat from ham drippings. In a saucepan, combine flour and 1/4 cup water until smooth.
