  • Preheat the oven to 325F. Grease a 10-cup loaf pan and set aside.
  • Separate the eggs. In a standing mixer or bowl with an electric beater, whisk the whites to stiff peaks. Set aside.

Steps:

  • Preheat the oven to 350°F.
  • Spray a 9x5-inch loaf pan liberally with nonstick cooking spray. Set aside.
  • Place the butter and sugar in a large mixing bowl. Using a hand mixer fitted with a whisk attachment or stand mixer fitted with a paddle attachment, cream the ingredients together on medium speed for 3-4 minutes, or until pale and fluffy. Add the eggs one at a time, beating for 15-20 seconds between each and scraping inside of bowl occasionally, until the mixture is smooth and combined.
  • Sift the flour and baking powder into the bowl. Beat the mixture on low until it becomes a smooth, thick batter.
  • Use a rubber spatula to transfer the batter into the loaf pan.
  • Transfer the pan to the middle rack of the preheated oven.
  • Bake the cake until a toothpick inserted in the center comes out clean, about 1 hour.
  • Check for doneness. Remove from oven or add time as needed.
  • Allow the cake to cool in the pan for 15-20 minutes.
  • To release the cake, run a butter knife between the edge of the cake and the pan. Turn the cake onto a cooling rack.
  • Let the cake cool for 1 1/2 -2 hours before slicing and serving.

Steps:

  • In a medium bowl, beat the egg. Add the mayonnaise, parsley, seafood seasoning, Dijon mustard and lemon zest, then mix well to combine. Add the crabmeat and panko and mix gently but thoroughly to combine. Form 8 crab cakes by pressing them into shape with a 1/3-cup measure. Place on a buttered baking sheet.
  • Place an oven rack 8 inches from the broiler element. Heat the broiler to a high setting. Brush the tops of the crab cakes with the melted butter. Broil until golden on top and heated through, 4 to 5 minutes. Serve immediately with the lemon wedges and Remoulade.
  • Add the mayonnaise, capers, garlic salt, pepper and lemon juice to a bowl and whisk.

  • Pre-heat oven to 180C/160C fan/gas 4 and line a 900g loaf tin with parchment paper (mine was 19cm x 9cm x 6cm). Put all of the ingredients except those for the icing into a large bowl and beat together, either using an electric hand whisk or a wooden spoon until smooth and combined. Pour the mix into the loaf tin and spread evenly with the back of spoon. Bake for 40 - 45 mins.
  • Once out of the oven, leave to cool and make the icing. Combine the icing sugar and vanilla paste with three tbsp of water - you may need more but add it gradually to get a thick icing. Spread it over the top of the cake; it's fine if it drips down the edges. Allow to set and then slice.

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 12-cup fluted tube pan (such as Bundt®).
