5 Ingredient Key Lime Pudding Pops - Creamy and easy-to-make Pudding Pops with tart Key Lime Pie flavor, complete with graham cracker crust!

Ingredients

3.4 ounces vanilla instant pudding mix
14 ounces sweetened condensed milk
3/4 cup fresh key lime juice (not from concentrate + 3/4 cup water)
1/2 teaspoon lime zest
4 graham crackers (crumbled)

Steps:

Beat the instant pudding mix, sweetened condensed milk, lime juice, 3/4 cup water, and lime zest together in a medium bowl. Once smooth, scoop the mixture into 10 popsicle molds, 8 if your molds are large.
Place a wooden popsicle stick in each pop. Then sprinkle the crumbled graham cracker on top. Freeze for 3-4 hours.
To serve: Flip the popsicle molds over the run under warm tap water for about 30 seconds. Then firmly pull the Key Lime Pudding Pops out of the molds. Serve immediately.

1 cup graham cracker, finely crushed
2 tablespoons sugar
1 pinch salt
2 tablespoons butter, melted
3 yolks egg
14 oz condensed milk
½ cup lime, juiced
1 pinch salt
2 cups chocolate, melted

Steps:

Combine the pie crust ingredients in a medium bowl and mix well.
Preheat the oven to 350˚F (180˚C).
In a paper cup-lined muffin tin, add 1 tablespoon of pie crust and press firmly with your fingers. Set aside.
In a medium bowl, whisk egg yolks, condensed milk and a pinch of salt. Add in the lime juice and combine well.
Scoop the filling onto the crust in the tin, about ¼ cup (30 g) each. Bake in the preheated oven for 15 minutes. Cool to room temperature. Freeze for 2 hours.
Take out the paper liners and gently insert a wooden popsicle sticks in each pies. Freeze for 30 minutes.
Dip frozen lime pie pop into melted chocolate. Put them on parchment paper-lined baking sheet and freeze for 15 minutes, or until the chocolate is set.

I wanted a quick and easy pie that would mimic the flavor of Key Lime Pie but without the fuss. I tried a popular on-line recipe but found that without a gelling ingredient, the pie was messy to serve and the slices ran together. To solve the problem, I added Instant Pudding Mix and was very pleasantly surprised with the result. Note: use a LARGE graham cracker crust (deep dish type). If your store only carries the small prepared graham crusts, use two crusts.

1 graham cracker crust, prepared, large deep dish size (or two small)
8 ounces Cool Whip (I use Light)
6 ounces frozen limeade concentrate
1 (14 ounce) can sweetened condensed milk, Fat-Free
1 (6 ounce) box Jello Instant Vanilla Pudding Mix

Steps:

Thaw Cool Whip according to instructions. Thaw limeade.
Whisk together in a large mixing bowl: Limeade and sweetened condensed Milk. Whisk in powdered instant pudding mix. Whisk in Cool Whip, saving 1 cup of Cool Whip for a nice topping.
Pour mixture into crust. Place remaining 1 cup of Cool Whip around the edges for a pretty presentation.
Allow an hour for the pie to firm up in the refrigerator.
