SIMPLE HERB-BAKED TROUT & HORSERADISH

Simple herb-baked trout & horseradish image

A super-simple whole baked fish with hot horseradish, zesty lemon and herbs - parsley, dill and thyme all work well

Provided by Barney Desmazery

Categories     Main course

Time 25m

Number Of Ingredients 5

2 whole rainbow trout , gutted and cleaned
1 tbsp olive oil
1 lemon , thinly sliced
sprigs of various herbs (parsley, thyme and dill would all work well)
fresh horseradish , grated, to serve (optional)

Steps:

  • Heat oven to 220C/200C fan/gas 7. Lay the trout over a lightly oiled baking tray and stuff the fish cavity with slices of lemon and herbs. Season generously all over and drizzle with the remaining oil.
  • Bake in the oven for 20 mins until the fish is cooked through - the eyes will have turned white and the flesh will be soft to touch. The trout can be served as they are with your favourite seasonal vegetables, but for an added extra touch, peel away the top layer of skin and grate over fresh horseradish before serving.

HOW TO COOK TROUT

How to Cook Trout image

This recipe is so simple, it doesn't even have a name. I just call it Trout. This is such an easy weeknight seafood dinner. It's a really nice way to cook fish, especially if you're new at cooking fish.

Provided by Chef John

Categories     Seafood     Fish

Time 25m

Yield 2

Number Of Ingredients 5

¼ cup butter
2 (8 ounce) whole trout, butterflied and deboned
salt and freshly ground black pepper to taste
2 tablespoons freshly squeezed lemon juice
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Melt butter in a saucepan over medium-low heat until butter smells toasted and is golden brown, about 1 minute. Turn off heat.
  • Line a baking sheet with a piece of aluminum foil. Place trout onto foil; open trout so skin sides are down. Drizzle each trout with about 1/2 teaspoon melted butter. Generously season with salt and black pepper.
  • Move an oven rack to 5 or 6 inches below heat source and preheat oven's broiler on high heat.
  • Broil trout until opaque and barely firm to the touch, 2 or 3 minutes. Remove from oven.
  • Return pan of melted butter over high heat; stir in lemon juice and parsley. Bring butter sauce to a boil; whisk to combine. Serve trout on plates and drizzle with butter sauce.

  • Grilled Trout with Savory Marinade. Trout and summer savory form an ideal marriage. Both are mild-mannered, so they blend beautifully, neither upstaging the other.
  • Smoked Trout Chowder. Smoked fish – already cooked and intensely flavorful – is an ideal addition to dishes when time is of the essence. We've used trout here, but another flaky fish, such as haddock or whitefish, would work just as well.
  • Smoked Trout Tostadas. Smoked trout is the star of this simple, fresh appetizer. It's gently tossed with tomato, avocado, and lime juice, then spooned onto corn chips and garnished with chives.
  • Trout Tartare with Fennel Remoulade and Tobiko. In this elegant tartare from chef Larry Feldmeier, buttery soft fresh trout is combined with fennel, red onion, yellow bell pepper, and cucumber, then coated in a bold dressing spiked with bright flavors like lime and ginger.
  • Tuscan Grilled Trout. A simple garlic-and-herb-infused oil combined with wine vinegar acts as both a basting liquid and a sauce for the fish. The trout skin protects the flesh and turns an appealing golden brown during grilling.
  • Trout Rechad. "In this recipe, I lean on Kashmiri chiles for their bright red lycopenic color. These chiles are mild in their heat level and are only sold dry," says cookbook author Nik Sharma.
  • Pan-Seared Trout with Serrano Ham and Chile-Garlic Oil. "This dish is almost a cliché in Navarra, but it's absolutely delicious," says chef Alex Raij about this Spanish trout preparation.
  • Smoked Trout with Roasted Radishes and Fennel–Stone Fruit Salad. At Racines in New York City, chef Diego Moya served confit trout with an almond oil, apricot kernel vinegar, and honey vinaigrette with tart underripe peaches.
  • Smoked Trout and Caper Cream Cheese Toasts. Inspired by the classic combination of bagels with lox and cream cheese, chef Tory Miller devised this variation using smoked, locally raised trout and homemade English muffins.
