I am a salmon lover. This is a great recipe for a slightly exotic flavor of Indian inspiration with a maple twist. The flavor is exceptional, delicious, and unique. Orange zest may be added for an extra flavor twist.

1 ½ teaspoons salt
1 teaspoon paprika
1 teaspoon ground cardamom
1 teaspoon ground coriander
½ teaspoon ground black pepper
¼ cup grapeseed oil
2 tablespoons maple syrup
1 (2 pound) salmon fillet, cut into 3-inch pieces

Steps:

  • Stir salt, paprika, cardamom, coriander, and black pepper together in a bowl. Add oil and maple syrup and stir until evenly combined.
  • Preheat a non-stick frying pan over medium-high heat, about 350 degrees F (175 degrees C).
  • Dredge salmon pieces through the maple syrup mixture until evenly coated on all sides.
  • Cook salmon in the preheated pan until fish flakes easily with a fork, 5 to 7 minutes per side.

Team X-tra Hot Dishes has lived up to it's name and just like the influential flavors of North Africa, we are spicy and energetic with a balance of zesty sweetness mixed in. This easy, yet bold-flavored rub for salmon shows off some of our best qualities!

12 ounces salmon fillets (2 fillets, 6 ozs each, fresh or thawed)
1/2 teaspoon cardamom
1/4 teaspoon coriander
1/2 teaspoon dried cilantro
1/4 teaspoon cumin
1/8 teaspoon cayenne
1/2 teaspoon celery seed
1/4 teaspoon sea salt
1 1/2 teaspoons lemon zest
1 garlic clove, minced
1 teaspoon olive oil
4 tablespoons cilantro, fresh (optional)

Steps:

  • Preheat oven to 350°F and liberally spray a casserole dish with non-stick cooking spray.
  • Place the salmon fillets, skin side down, in dish and set aside.
  • In a small bowl, combine the remaining ingredients (except fresh cilantro) and stir well to form a slightly dry paste.
  • Gently rub the paste onto the salmon and bake, uncovered, at 350° for 15-20 minutes or until fish flakes easily with a fork.
  • Garnish with fresh cilantro, if desired.

4 salmon fillets, with skin on
2 tablespoons coarse grain mustard
1 tablespoon maple syrup

Steps:

  • Preheat grill to high.
  • Mix together the mustard and maple syrup.
  • Place the salmon fillets (skin side down) in a baking dish or on a shallow tray that has been lined with aluminium foil.
  • Spread the mustard and maple mixture evenly over the tops of the salmon fillets.
  • Grill/Broil for 10 minutes or until cooked thru. The time taken will depend on the size of the fish.
  • Serve with veges or a salad - Enjoy!
  • Note: its best if your fillets are as evenly sized as possible.

  • Shake together the maple syrup and soy sauce, then drizzle all over the salmon. Seal the foil so the sauce + salmon are enclosed. You can marinate the fish at this point for 30 min- 2hours, or put it directly into the oven.
  • Bake for 15-20 minutes, checking fish with an instant read thermometer. For well done, cook to 145°F. For medium, cook to 125°F. If you have individual fillets, they may be done quicker, so be sure to check them earlier.
