1 egg
3 tablespoons butter (melted)

1 cup milk
1 cup apples (grated)

Steps:

  • Gather the ingredients.
  • In a large bowl, combine the flour, baking powder, salt, sugar, and nutmeg.
  • In a separate small bowl, beat together the baking soda, egg, butter, vanilla, and milk.
  • Add the milk and egg mixture into the dry ingredients, stirring only until blended, then gently fold in the grated apple.
  • Spoon batter onto a preheated and lightly greased griddle or frying pan, cooking for 2 to 3 minutes on each side until golden brown.

Grated apple is the secret ingredient in these lightly spiced and fluffy pancakes.

1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon fine salt
1 cup milk
1/4 cup packed light brown sugar
1 teaspoon pure vanilla extract
2 large eggs
4 tablespoons unsalted butter, plus more for serving
1 small red-skinned apple, cored
For serving: maple syrup or honey

Steps:

  • Preheat the oven to 250 degrees F.
  • Whisk the flour, baking powder, cinnamon and salt together in a medium bowl.
  • Whisk the milk, sugar, vanilla and eggs together in a large bowl until the sugar dissolves. Melt 2 tablespoons of the butter in a medium nonstick or cast-iron skillet over medium heat. Let cool slightly, then whisk the butter into the egg mixture; reserve the skillet for cooking the pancakes. Whisk the flour mixture into the milk mixture until combined with a few lumps. Grate the apple on the large holes of a box grater and stir into the batter.
  • Melt 1 tablespoon of the remaining butter in the reserved skillet over medium heat. Drop 2 tablespoons of batter per pancake into the hot skillet. Cook until the surface of the batter forms bubbles and the edges are set, about 3 minutes. Flip the pancakes and continue to cook until puffed in the center, about 1 minute more. Transfer to a baking sheet and put in the oven to keep warm while making the rest of the pancakes. Cook the remaining batter, adding the remaining 1 tablespoon of butter as needed.
  • Serve the pancakes with butter and maple syrup or honey.

1 3/4 cups all-purpose flour, plus more as needed
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon fine salt
1/8 teaspoon freshly ground nutmeg
2 large eggs at room temperature
1 1/4 cups milk at room temperature
1/2 teaspoon vanilla extract
3 tablespoons unsalted butter, plus more as needed
4 Macintosh or other small apples
Warm maple syrup, as an accompaniment

Steps:

  • Preheat the oven to 200 degrees F. Set a wire rack on a baking sheet and place in the oven.
  • Whisk 1 3/4 cups flour, the sugar, baking powder, salt and nutmeg in a large bowl. In small bowl or liquid measuring cup, whisk the eggs with the milk and vanilla extract. Melt 3 tablespoons butter in a large well-seasoned cast-iron or non-stick skillet over medium heat. Whisk the butter into the milk mixture. Add the liquid ingredients to the dry mixture, and whisk just long enough to make a thick batter, (if there are a couple lumps that's okay).
  • Using a melon baller or an apple corer, peel and core the apples keeping them whole. Slice the apples crosswise to make 1/4-inch rounds. Put some flour on a plate and dredge the apple slices until lightly coated, shaking off any excess flour.
  • In the same skillet over medium to medium-low heat, place 3 apple slices about 3-inches apart in the skillet. Cook without turning until browned, about 3 minutes. Ladle about 2 tablespoons of the batter over each apple ring. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 to 3 minutes. Add a nut-sized bit of butter to the skillet, as needed, and flip the pancakes, cook until golden on the underside, about 1 minute more.
  • Serve immediately or transfer to oven to keep warm. Repeat with the remaining apples and batter. Serve with warm maple syrup.

  • Preheat oven to 400 degrees F (200 degrees C).

Steps:

  • Preheat the oven to 250. Put the apple in a microwave-safe bowl and tightly cover with plastic wrap; microwave on high until softened, about 2 minutes.
  • In a large bowl, whisk the flours, baking powder, baking soda and salt. In a small bowl, whisk the buttermilk, nonfat milk, eggs and honey, then slowly add the dry ingredients, stirring until just combined.
  • Heat a large nonstick griddle or skillet over medium heat. Spoon 1/4 cup batter onto the griddle for each pancake and sprinkle each with apple, then drizzle a little more batter over the apple. Cook until the tops are bubbly and the edges are dry, about 2 minutes. Flip and cook until golden brown, 1 to 2 more minutes. 1 ripe banana
2 large eggs
1 tablespoon smooth peanut butter

Steps:

  • In a mixing bowl, mash the ripe banana with a form until it is in a thick paste.
  • Add the peanut butter and stir until we'll combined.
  • Mix in both eggs and beat until the batter is smooth.
  • Heat a non-stick frying pan on medium-low heat. Add a bit of margarine. Using a ladle, pour a small amount of batter into the heated pan. You want to make the pancakes small (4" or so) so that they are easier to flip.
  • The batter does not bubble like traditional pancakes would do.
  • You will know it is time to flip when it is no longer liquidy on top when you turn the pan at an angle. It doesn't take long, about 2 minutes a side, depending on your stove.

300g self-raising flour
1 tsp bicarbonate of soda
2 medium eggs
284ml carton buttermilk
4 tbsp milk
85g melted butter
2 small-medium eating apples , peeled, cored and grated
50g dried cranberries
a little more butter or sunflower oil , for frying
maple syrup , to serve
85g softened salted butter
1 tsp cinnamon
2 tsp caster sugar

Steps:

  • To make the cinnamon butter, mix all the ingredients together, wrap in cling film, shape into a log and chill. You can make this up to 3 days ahead.
  • Mix the flour, bicarb and a pinch of salt in a bowl. Make a well in the centre, then gradually whisk in the eggs, followed by the buttermilk, milk and melted butter. Once the mixture is smooth, stir in the grated apples and cranberries.
  • Melt a little more butter in a non-stick pan or wipe with sunflower oil. When hot, add 1-3 small ladles of batter to the pan to make 1-3 small pancakes (depending on the size of your pan). Cook for 2-3 mins until bubbles appear and the underneaths are set and golden. Flip and cook for a few mins more. Transfer pancakes to a plate, cover with baking parchment and keep warm in a low oven. Cook the remaining pancakes.
  • To serve, stack pancakes on plates, top with a good knob of cinnamon butter and drizzle with maple syrup.

Easy to prepare; relatively diet friendly too! Can easily be doubled. I came up with this recipe while experimenting with Bisquik. Can also be cooked with heart smart Bisquik.

1/2 cup Bisquick baking mix
3 tablespoons unsweetened applesauce
3 tablespoons water
1 dash cinnamon (optional)

Steps:

  • In a medium bowl, mix Bisquik, applesauce and water. Add cinnamon if desired.
  • Be sure to add liquids slowly to adjust for desired thick/thinness; do NOT make it too thin or pancakes will not set.
  • Spray skillet with nonstick spray, set over high heat.
  • To test for appropriate heat before cooking: splash a few droplets of water on skillet; if water splatters across the skillet, it is ready. It is important to get the pan hot before you cook or pancakes won't brown properly.
  • When ready, pour in batter, about 3 tbsp full each for smaller pancakes, or according to personal preference.
  • Wait about 1 minute, or until bubbles set, before flipping.
  • Don't flip too many times or your pancakes will be flat!
  • Serve immediately, or if not, leave to cool on paper towels and freeze for longer storage.
