1 ½ cups graham cracker crumbs
¼ cup sugar
1 stick unsalted butter, melted
8 oz cream cheese, room temperature
6 oz sour cream, room temprature
¾ cup sugar
3 medium eggs, room temperature
1 tablespoon vanilla extract, or vanilla bean paste
1 lb strawberry, stemmed and haled
¾ cup sugar
2 tablespoons corn syrup
3 tablespoons water
2 tablespoons cornstarch

Steps:

  • Make the crust: Preheat the oven to 350°F (180°C).
  • Add the graham cracker crumbs, sugar, and melted butter to a medium bowl and mix well.
  • Transfer the crumbs to a 9-inch pie dish and press evenly against the bottom and up the sides.
  • Bake the crust for 5-10 minutes, until firm.
  • Remove the crust from the oven and let cool. Reduce the oven temperature to 300°F (150°C).
  • Make the filling: In the bowl of a stand mixer fitted with the paddle attachment, combine the cream cheese and beat until smooth. Add the sour cream and beat on medium speed until well incorporated, scraping down the sides of the bowl as neede. Add the sugar and beat to combine. Add the eggs, 1 at a time, beating until well combined before adding the next addition. Add the vanilla and beat to incorporate.
  • Pour the cream cheese filling into the prepared crust.
  • Bake for 45-60 minutes, until mostly set but still slightly jiggly at the center. The cheesecake will continue to set as it cools.
  • Remove the cheesecake from the oven and chill in the refrigerator for 1 hour, or until set.
  • Make the strawberry topping: Add the strawberries, sugar, and corn syrup to a medium skillet over medium-high heat. Cook until syrupy, but the strawberry halves are mostly intact, about 5 minutes.
  • In a small bowl, whisk together the water and cornstarch. Add to the strawberry mixture and cook until thick and glossy, 2-3 minutes. Transfer the topping to a heatproof bowl and refrigerate until cool.
  • When ready to serve, pour the topping over the cheesecake and spread evenly. Slice and serve.

3/4 cup ground pecans
3/4 cup graham cracker crumbs
3 tablespoons butter, melted
FILLING:
4 packages (8 ounces each) cream cheese, softened
1-1/4 cups sugar
1 tablespoon lemon juice
2 teaspoons vanilla extract
4 large eggs, room temperature, lightly beaten
TOPPING:
2 cups sour cream
1/4 cup sugar
1 teaspoon vanilla extract
STRAWBERRY GLAZE:
2 tablespoons cornstarch
1/4 cup water
1 jar (12 ounces) strawberry jelly
3 tablespoons orange-flavored liqueur or lemon juice
Red food coloring, optional
1 quart whole fresh strawberries, halved

Steps:

  • Preheat oven to 350°. Combine pecans, crumbs and butter. Press onto the bottom of a 10-in. springform pan. Set aside. , In a large bowl, beat cream cheese and sugar until smooth. Beat in lemon juice and vanilla. Add eggs; beat on low speed just until blended. Spoon over crust. , Bake until filling is almost set, 45-50 minutes. Cool on a wire rack 15 minutes. Meanwhile, for topping, combine sour cream, sugar and vanilla. Spread over cheesecake and return to oven for 5 minutes. Cool on a wire rack 1 hour. Refrigerate overnight, covering when completely cooled. , Several hours before serving, prepare glaze. In a saucepan, combine cornstarch and water until smooth. Add jelly and cook over medium-high heat, stirring constantly, until jelly is melted and mixture has thickened. Remove from the heat; stir in liqueur and, if desired, food coloring. Cool to room temperature. , Just before serving, loosen and remove sides of springform pan. Arrange strawberries on top with pointed ends up. Spoon glaze over berries, allowing some to drip down sides of cake. Serve immediately.

200 g 7oz digestive biscuits / cookies (notes)
1/4 teaspoon cinnamon
1/4 teaspoon ground ginger
100 g 3.5oz unsalted butter, melted
750 g 1.7lb cream cheese, softened
3/4 cup 150g / 5.3oz caster (superfine) sugar
1 1/2 teaspoons vanilla extract
2 large eggs, room temp
1 egg yolk, room temp
200 ml 6.7 floz light sour cream, room temp
zest of 1 lemon, finely grated
1 tablespoon lemon juice
Pinch of salt
2/3 cup strawberry sauce

Steps:

  • Preheat the oven to 160C / 325F / 140C fan forced. Grease and line the base and sides of an 8 inch round spring form tin with baking paper.
  • Use a food processor to process the cookies / biscuits to fine crumbs. Add the cinnamon and ginger and pulse to combine (notes)
  • Tip the crumbs into a bowl, then mix through the melted butter.
  • Press firmly into the bottom of the prepared tin. Bake for 10 minutes then set aside while you make the filling.
  • Using a stand mixer with the paddle attachment (notes), beat the cream cheese on low-med speed for about 2 minutes until smooth and creamy. Scrape down the sides of the bowl as required.
  • Add the sugar and vanilla and beat well, again scrape down the sides as necessary.
  • Add the eggs and extra yolk, one at a time beating until each is incorporated.
  • Add the sour cream, salt, lemon juice and zest and beat well. The mixture should now be looking completely smooth and glossy.
  • Pour half of cheesecake mixture over the base. With a teaspoon, dollop small blobs of strawberry sauce over the top. With a spoon or spatula, carefully spoon over the remaining cheesecake mixture. Smooth out the top just a little, then again use a teaspoon to dollop over the remaining strawberry sauce. Use a knife to run through the little strawberry patches to give it a swirl effect.
  • Bake for 45-50 minutes on the middle shelf of the oven. There should be a slight wobble in the centre.
  • Turn the oven off and allow the cheesecake to cool in the oven for half an hour with the door closed.
  • Remove it from the oven and let it cool at least a further 45 minutes at room temperature before covering (a plate over the top of the tin is finand placing in the fridge to set completely. Let it cool and set for at least 2-3 hours.

Steps:

  • Microwave the marshmallows and cream cheese in a bowl, stirring every 15 seconds, until fully melted.
  • Add cereal into the bowl and mix until fully coated. Let the mixture cool to room temperature.
  • Add dried strawberries and yogurt chips. Mix just until combined.
  • Line a baking dish with parchment paper and pour the cooled mixture into the pan.

1 1/2 cups hazelnuts or almonds
2 tbsp cacao or cocoa powder
4 tbsp maple syrup or liquid honey
1 tsp pure vanilla extract
1/4 tsp salt
1 lb (3 cups) fresh or frozen (thawed) strawberries (hulled & sliced)
1/2 cup cold water
2 tbsp 14 grams unflavored gelatin
2 x 8 oz blocks cream cheese (room temperature and cut into pieces)
2 cups plain Greek yogurt (2%+ fat)
3/4 cup maple syrup or liquid honey
1 tsp pure vanilla extract
1 lb of fresh strawberries (hulled and sliced (for topping))

Steps:

  • To roast nuts, preheat skillet on medium heat and add nuts. Cook for 4-5 minutes, stirring occasionally, until browned and fragrant. Watch them not to burn. In a food processor, add roasted nuts and process until coarse. You can laso chop them by hand or with a hand chopper.
  • Add cacao powder, maple syrup, vanilla, salt and process or stir in a bowl until well mixed. It will smell like Nutella.
  • Line 9 inch springform pan with parchment paper. You can do so by cutting out a circle a size of the pan. Or place parchment on the bottom pan, close springform on top and then cut out parchment on the outside. Add processed crust and flatten it using a spatula or your hands. Set aside.
  • In a small saucepan, add 1/2 cup cold water and sprinkle gelatin on top. Set aside and let it bloom while you are making the filling.
  • In a food processor, add strawberries and process until very smooth and well blended puree forms.
  • Place fine mesh strainer over a bowl, pour as much strawberry puree as fits in it and using a spoon push to strain through. You should end up with about 1 cup liquid.
  • In a large bowl, add cream cheese and yogurt. Beat on high speed until smooth and no lumps, about 5 minutes.
  • Add strawberry puree, maple syrup, vanilla and process until well combined, pausing and scraping the walls if necessary.
  • Place pot with bloomed gelatin (it will look thick) on low heat. Warm up stirring constantly until gelatin liquid is clear and gelatin has completely dissolved. Remove gelatin from heat and let it cool for a few minutes.
  • Add 1 cup cheesecake filling to it, stir and pour back into a bowl with filling. Beat with a mixer until well combined.
  • Pour filling into prepared pan on top of crust. Refrigerate for at least 7 hours on the bottom shelf or overnight.
  • To serve, run knife around the edge of cheesecake inside the springform pan before releasing it. This step ensures cake won't crack.
  • Then carefully release and remove springform, cut into 12 slices and serve. I would add chopped strawberries to individual plates. I added on top for pics but it is hard to cut cake with them.

2 (7 ounce) packages martha white strawberry muffin mix (can use Strawberry Cheesecake Muffin mix too)
6 tablespoons butter, cold
2 (8 ounce) packages cream cheese, softened
1/2 cup sugar
2 tablespoons flour
1 egg
1 teaspoon vanilla
1 (21 ounce) can strawberry pie filling
1/2 cup chopped walnuts (optional)

Steps:

  • Heat oven to 350°F; spray bottom and sides of 10 to 11 inch springform pan with no stick cooking spray.
  • Combine muffin mix and butter in medium bowl. Cut in butter with pastry blender or fork until mixture is crumbly. Reserve 1-1/3 cup of crumb mixture. Place in refrigerator.
  • Press remaining crumbs in bottom and partially up sides of prepared pan. Place on cookie sheet and bake for 10 minutes.
  • Combine cream cheese, sugar, flour, egg and vanilla in large bowl. Beat with electric mixer on medium high for 1-1/2 to 2 minutes or until creamy and smooth.
  • Spoon cream cheese mixture evenly over partially baked crust. Spread gently.
  • Spoon pie filling evenly over cream cheese mixture.
  • Sprinkle reserved crumb mixture and walnuts on top of pie filling.
  • Bake 40 to 45 minutes longer, or until golden brown on cookie sheet.
  • Cool about 30 minutes.
  • Chill 2 hours or overnight (this is the hard part, waiting -- but worth it!).
  • Remove sides of pan and place on serving plate to serve! YUMMY!

STRAWBERRY CHEESECAKE TRIFLE

This is oh so good!! It's a great combination of my 2 favorites, strawberries and cream cheese. It makes a light and airy dessert..pretty too! It's also easy and quick to prepare. I found the recipe in the Taste of Home Holiday Recipe collection for Holiday 2004. If you like you can use whatever fruit pie filling you prefer. Prep and cooking times are estimated. Although it must be chilled at least 2 hours.

3 tablespoons all-purpose flour
5 eggs
2 egg yolks
1/2 cup sour cream
1 vanilla bean, seeds scraped from inside of pod and reserved

Strawberry Sauce, recipe follows
2 pints fresh strawberries
1/2 cup sugar
1 cup water
1 teaspoon finely grated lemon zest
2 tablespoons kirsch or brandy

Steps:

  • Preheat oven to 375 degrees F.
  • Butter the bottom of a 9-inch springform pan. In a mixing bowl, combine graham cracker crumbs, butter, and 1 1/2 tablespoons sugar and mix well. Press onto bottom of springform pan and bake until golden, about 8 minutes. Set aside to cool. When completely cooled, butter the sides of the pan.
  • Lower oven temperature to 350 degrees F.
  • In a large mixing bowl with an electric mixer, combine cream cheese, 1 1/2 cups sugar, zests, and vanilla and beat until light and creamy. Add the flour, then the eggs and yolks 1 at a time, mixing well after each addition. Add the sour cream, vanilla bean seeds, and bourbon and mix until smooth. Pour mixture into prepared pan. Wrap the pan in foil and place in a roasting pan. Fill the roasting pan with enough hot water to come half way up the sides of the pan. Bake for 1 1/2 hours.
  • Transfer cake to a cooling rack and let cool completely. Refrigerate cake overnight before serving. Cut into wedges and top with strawberry sauce.
  • Combine berries, sugar, water and zest and cook until berries are soft and the liquid is thick, about 10 minutes. Stir in the kirsch or brandy and cook for 1 minute.
  • Remove from the heat and let cool. Spoon on top of the cheesecake and serve.

1 Tablespoon fresh lemon juice
1 Tablespoon cornstarch
4 eggs-room temperature
1 cup sour cream- room temperature
1 lb. fresh strawberries-diced
6 Tablespoons sugar
1 Tablespoon fresh lemon juice
½ teaspoon vanilla

Steps:

  • Preheat the oven to 350 F and place the rack in lower third.
  • Place double layer of extra-large aluminum foil under your 9 inch springform pan and cover the bottom and sides of the pan, wrap it tightly around the sides to make sure no water gets in during baking in water bath.
  • To make the crust mix together graham cracker crumbs, sugar, melted butter and salt. Press the mixture into the bottom and sides of springform pan. Bake for 10-12 mins, then set aside to cool.
  • Turn down the oven temperature to 325 F!!!
  • To make the filling beat softened cream cheese until smooth and creamy.
  • Gradually beat in sugar until light and fluffy. Then, beat in salt, vanilla, lemon juice and cornstarch.
  • Beat in eggs one at a time running your mixer on low speed and just slowly combine ingredients until smooth. You don't want to incorporate a lot of air into the batter.
  • Finally, beat in sour cream.
  • Place springform pan into roasting pan. Pour the batter into springform pan and smooth the top. Pour boiling water in roasting pan halfway up the side of the springform pan make sure no water drip on the batter.
  • Place in the oven and bake at 325 F for 1 hour and 40-50 minutes.
  • When the cheesecake is baked let it sit in the oven with the door slightly open for 1 hour (don't forget to turn off the oven!!!)
  • Remove the cheesecake from the water bath, dry the bottom of the pan, run a thin knife around the edges to loosen the cake and let it cool to room temperature. Cover the top and place it in the fridge to chill for at least 5 hours or overnight before you add strawberry topping. When the cake is cooled, run a thin knife around the cake and release the ring from springform pan. Transfer the cake onto serving plate.

200g digestive biscuit
100g unsalted butter , melted
3 sheets of leaf gelatine
142ml carton single cream
300g full-fat soft cheese
100g golden caster sugar
finely grated zest of half a lemon
3 tbsp lemon juice
300g strawberry , hulled and chopped
142ml carton whipping or double cream
1 medium egg white
250g strawberries , hulled and chopped, plus about 200g/8oz extra to decorate
finely grated zest of half a lemon
3 tbsp lemon juice
2 tbsp golden caster sugar , or more to taste

Steps:

  • Seal the biscuits in a plastic bag and crush them to fine crumbs with a rolling pin. Tip into a bowl and stir in the melted butter, mixing thoroughly so that all the crumbs are soaked. Now tip the mixture into a loose-bottomed 24cm round cake tin, at least 5cm deep, and press down with the back of a metal spoon to make an even layer over the bottom of the tin. Chill in the fridge while you make the filling.
  • Submerge the gelatine leaves in a dish of cold water, and leave to soak and soften for 5 minutes. Pour the single cream into a pan and bring just to the boil, then take off the heat. Take the gelatine leaves out of the water, give them a good squeeze to get rid of excess water, and stir one by one into the cream (they will dissolve instantly). Leave to cool for a few minutes.

1 teaspoon vanilla extract
1 (9 inch) angel food cake, cut into 1-inch cubes

Steps:

  • Reserve 1/4 cup strawberries for garnishing; leave them halved or slice to your preference. Slice the remaining 7 3/4 cups strawberries; place in a bowl with white sugar and 1 tablespoon almond extract. Stir to combine.
  • Pour heavy whipping cream into a bowl; beat until stiff peaks form.
  • Mix cream cheese, confectioners' sugar, sour cream, vanilla extract, and 1/4 teaspoon almond extract into the whipped cream. Fold cake cubes gently into the cream mixture.
  • Cover the bottom of a trifle bowl with a shallow layer of the strawberry-sugar mixture; follow with a layer of the cream mixture. Continue layering until bowl is full; top with reserved strawberries. Chill for 2 hours.
